They have the flavor of Buffalo chicken dip rolled into a ball and then breaded and deep fried. Dip in either ranch or blue cheese dip. I served these at a Super Bowl party, and the crowd loved them.

2 (12.5 fl oz) cans chunk chicken breast, drained and flaked
4 green onions, chopped
1 cup shredded sharp Cheddar cheese
1 cup shredded pepperjack cheese
1 cup hot pepper sauce (such as Frank's RedHot®)
1 (1 ounce) package ranch dressing mix
oil for frying
1 cup all-purpose flour
3 eggs, beaten
1 cup plain bread crumbs

Steps:

  • Mix the chicken, green onions, Cheddar cheese, pepperjack cheese, hot sauce, and ranch dressing mix together in a bowl; form the mixture into 1-inch balls with a scoop. Place the balls on a large, flat dish; chill in refrigerator 2 to 3 hours.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Gently press the balls into the flour to coat and shake off any excess. Dip into the beaten egg and then press into bread crumbs. Place the breaded chicken balls onto a plate while breading the rest; do not stack.
  • Fry the breaded balls in the hot oil until slightly browned, about 1 minute.

Number Of Ingredients 13

11 tablespoons salted butter
1 1/2 pounds ground chicken
9 tablespoons hot sauce, such as Frank's
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 tablespoon vegetable oil
2 onion rolls, halved
3 stalks celery, 1 thinly sliced, 2 cut into sticks, plus a few leaves
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup blue cheese crumbles, plus more for serving
Splash white vinegar, plus more if needed
Kosher salt and freshly ground black pepper

Steps:

  • For the burgers: Melt 9 tablespoons of the butter in a pan, then pour it into a measuring cup.
  • Put the ground chicken in a bowl and add 1 tablespoon of the melted butter, 1 tablespoon of the hot sauce and the salt and pepper. Mix and form into 2 patties.
  • Set a nonstick pan over medium-low heat and add the oil to the pan. Add the patties to the pan, turn the heat up to medium and cook until they are browned on the first side, about 4 minutes.
  • Meanwhile, mix the remaining 8 tablespoons hot sauce into the remaining butter in the measuring cup.
  • Flip the patties and put a couple tablespoons of the butter and hot sauce mixture on each. Cook another 4 minutes.
  • For the blue cheese dressing: Meanwhile, mix the mayonnaise, sour cream, blue cheese crumbles, vinegar and some salt and pepper in a bowl. Taste and adjust with more vinegar, salt and pepper if needed.
  • Add the remaining 2 tablespoons butter to a skillet and heat over medium-low heat until the butter is melted and the skillet is hot. Add the onion rolls cut-side down and toast until golden, about 2 minutes.
  • Flip the patties again, put another couple tablespoons of the butter and hot sauce mixture on each patty and cook until the patties are cooked through, about 2 more minutes.
  • Spread a little of the butter and hot sauce mixture on the top and bottom buns. Top each bottom bun with a patty, then some sliced celery, blue cheese dressing, blue cheese crumbles, celery leaves and the top buns. Serve with more blue cheese dressing and the celery sticks.

BUFFALO CHICKEN QUINOA FRITTERS

All of the flavours of buffalo chicken formed into a patty with quinoa and fried until golden brown and crispy! Serve with carrot and celery sticks and a blue cheese dressing to complete the experience!

1/2 cup quinoa, rinsed
1 cups water
1 cup chicken, cooked and shredded
1/4 cup hot sauce or to taste
1/4 cup onion, finely diced
1/2 cup cheddar, shredded
1/4 cup blue cheese, crumbled
1 egg
1/4 cup panko breadcrumbs
salt and pepper to taste
oil for frying

Steps:

  • Simmer the quinoa in the water until the liquid has been absorbed and the quinoa is tender, about 15 minutes and let cool enough to handle.
  • Mix the cooked quinoa with the chicken, hot sauce, onion, cheddar cheese, blue cheese, egg, breadcrumbs, salt and pepper, adding more breadcrumbs if required to allow it to hold its shape.
  • Heat the oil in a pan over medium heat.
  • Spoon the mixture into the pan and form patties of any size that you desire and cook until golden brown on both sides, about 2-4 minutes per side, and set aside on paper towels to drain.

½ cup Italian-seasoned bread crumbs

¼ teaspoon black pepper
¼ teaspoon garlic powder
2 tablespoons vegetable oil

Steps:

  • Mix chicken, bread crumbs, onion, mozzarella cheese, egg, mayonnaise, salt, pepper, and garlic powder in a bowl until well combined. Shape mixture into 8 equal-sized patties.

1 pound skinless, boneless chicken thighs, cut into 1-inch pieces
2 eggs, lightly beaten
1 (4 ounce) can Hatch green chiles, drained
½ cup chopped onion
½ cup almond flour
2 tablespoons mayonnaise
3 cloves garlic, peeled and smashed
2 teaspoons chili powder
1 teaspoon chipotle chile powder
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon ground cumin
2 tablespoons Buffalo wing sauce, or to taste
¼ cup avocado oil, or as needed

Steps:

  • Place 1/3 of the chicken pieces into the bowl of a food processor and pulse several times, cutting the chicken into smaller pieces. Transfer to a large mixing bowl. Repeat twice more with remaining chicken pieces. Do not overprocess; some texture should remain.
  • Add eggs, Hatch chiles, onion, almond flour, mayonnaise, garlic, chili powder, chipotle powder, salt, pepper, and cumin to the chicken. Stir until combined. Stir in wing sauce.
  • Place a 12-inch nonstick skillet over medium heat. Fill hot skillet with 1/4 inch avocado oil; heat until shimmering.
  • Use a 1/4 cup measure to drop 6 mounds of chicken mixture into the hot oil. Gently press each one into a 3-inch fritter. Cook until chicken is no longer pink and tops are browned, 2 to 3 minutes per side. Transfer fritters to a paper towel-lined plate. Repeat with the remaining chicken mixture. Serve warm.
