Five-Ingredient Pineapple Upside-Down Cake image

Rich and delicious. We took an old-fashioned recipe, lightened it up and gave it a convenience food spin.

0.25 cup(s) Packed light brown sugar
0.75 slice(s) Canned pineapple rings in juice reserve 60ml (¼ cup) juice*
115 gm Unprepared vanilla cake mix about 250ml (1 scant cup)
1 large egg(s) Egg(s)

Steps:

  • Preheat oven to 190°C (375˚F).
  • Melt 30ml (2 Tbsp) butter in a 22.5-cm (9-in) round, flameproof, aluminum pan over medium-low heat (make sure to cover entire pan bottom); sprinkle sugar over top. Carefully place pineapple rings in a single layer in bottom of pan. Increase heat to medium-high and cook until pineapple caramelizes, flipping once, about 2 minutes per side; remove pan from heat.
  • Melt remaining 30ml (2 Tbsp) butter on stove top or in microwave. In a medium-size mixing bowl, beat egg with remaining melted butter. Add cake mix and reserved pineapple juice; combine well.
  • Pour batter over pineapple; bake until a toothpick inserted in centre of cake comes out clean, about 30 to 35 minutes. Allow cake to cool for about 15 to 20 minutes; when still warm, loosen sides with a knife and invert cake onto a serving plate. Slice into 10 pieces and serve. Yields 1 slice per serving.

1/3 cup packed brown sugar or 3 tablespoons brown sugar substitute blend
2 tablespoons butter, melted
3 canned pineapple slices
CAKES:
1/3 cup butter, softened
1/2 cup sugar
1 large egg, room temperature
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup fat-free lemon or vanilla Greek yogurt
1/4 cup fat-free milk

Steps:

  • Preheat oven to 350°. Coat 12 muffin cups with cooking spray. Mix brown sugar and melted butter; divide among prepared cups. Quarter each pineapple slice; place one piece in each cup. , For cakes, cream butter and sugar until light and fluffy, 3-5 minutes; beat in egg and vanilla. In another bowl, whisk together flour, baking powder, baking soda and salt; add to creamed mixture alternately with yogurt and milk, beating well after each addition. , Fill prepared cups two-thirds full. Bake until a toothpick inserted in center comes out clean, 12-15 minutes. Cool in pan 2 minutes; invert onto a serving plate. Serve warm or at room temperature.

1 large can crushed pineapple
1/2 cup coconut (optional)
1/2 cup chopped pecans (optional)

Steps:

  • Mix angel food cake mix with crushed pineapple. Stir until well blended. Add coconut and/or pecans if desired.
  • Place mixture in lined muffin cups.
  • Bake at 350 degrees F for 10 - 15 minutes or until light golden brown on top (color of toasted marshmallows).

This recipe is for use with the NordicWare Mini Pineapple Upside-down Cake Pan, the recipe came with the pan. I'm typing it in here so I don't lose it! The recipe could also probably be made in a well-greased 6-section muffin pan, if the sections are large enough to hold a pineapple ring in the bottom.

6 tablespoons butter, melted
3/4 cup brown sugar
1 (20 ounce) can pineapple slices in juice, drained
maraschino cherry
1 1/2 cups flour
1 cup sugar
1/3 cup shortening
3/4 cup milk
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg

Steps:

  • Preheat oven to 350 degrees F.
  • Place 1 T. melted butter in the bottom of each section of the pan.
  • Divide brown sugar evenly and sprinkle over butter.
  • Place one pineapple ring in each section and place cherry in center of pineapple ring; set aside.
  • In medium bowl, combine remaining ingredients and blend at low speed, scraping bowl often.
  • Beat at medium speed for 3 minutes, scraping bowl occasionally.
  • Pour batter over pineapple slices in pan.
  • Bake for 23-25 minutes, or until toothpick inserted comes out clean.
  • Remove from oven and immediately invert onto heatproof platter.
  • Serve warm or cool.

I was in the mood for pineapple and wanted to make some muffins and found few such combinations on this site. I did a quick search and found this on About.com, under the heading Southern U.S. Cuisine, from Diana Rattray. I really liked these, they are flavorful and not overly sweet. I thought they might need a little something and I added some allspice, cinnamon and nutmeg to the topping.

1 1/3 cups flour
1/2 cup sugar
1/3 cup brown sugar, lightly packed
1 teaspoon baking powder
1/2 teaspoon baking soda

2/3 cup rolled oats
1 cup buttermilk
1/2 cup melted butter
1 egg
1 (15 ounce) can crushed pineapple, drained well
1/2 cup sweetened flaked coconut
1/3 cup brown sugar
1/4 cup flour
1/4 cup sweetened flaked coconut
2 tablespoons rolled oats
3 tablespoons cold butter, cut up

Steps:

  • Grease 18 muffin cups, or line with paper liners.
  • in a large bowl, mix together flour, sugar, brown sugar, baking powder, baking soda, pecans and oats. Make a well in the center of the mixture.
  • In a separate bowl, whisk together buttermilk, melted butter and egg.
  • Pour into well in flour mixture, stir to blend just until dry ingredients are moistened, but do not overmix.
  • Gently fold in pineapple and coconut.
  • Spoon batter into prepared muffin cups, filling about 2/3 full.
  • For topping:.
  • mix together brown sugar, flour, coconut and oats. cut in butter with a pastry cutter till coarse crumbs have formed.
  • Sprinkle crumb topping over pineapple muffin batter.
  • Bake muffins at 400 for about 20 minutes, or till tops are lightly browned and firm.
  • transfer pans to rack to cool for about 5 minutes.
  • gently turn muffins out onto rack to cool completely.

1 (8 ounce) can crushed pineapple
1/2 cup all-purpose flour
1/3 cup brown sugar, firmly packed
1/4 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/2 cup butter, melted and divided
2 cups all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 egg, beaten
3/4 cup milk

Steps:

  • Preheat oven to 375°F.
  • Drain pineapple and reserve 1/4 cup juice.
  • Combine 1/2 c flour, brown sugar, cinnamon and 1/4 c melted butter; stir well. (Cinnamon mixture to be used later).
  • In a large bowl, combine the 2 cups flour, sugar, baking powder and salt.
  • In a separate bowl, combine the egg, milk, remaining 1/4 c melted butter, and reserved pineapple juice; stir well.
  • Make a well in the center of the dry ingredients and add the liquid ingredients, stirring just until moistened (do not overmix!).
  • Spoon batter into greased and floured (or lined) muffin tins, filling 1/2 full.
  • Spoon pineapple over batter and sprinkle with the cinnamon mixture.
  • Bake at 375F for 30 minutes.
