CHICKEN NOODLE CASSEROLE

This casserole based on a favorite soup will satisfy any comfort food craving. Partially cooking the egg noodles allows them to soak up the flavorful sauce without becoming too soft.

Number Of Ingredients 16

6 tablespoons unsalted butter, plus more for greasing dish
Kosher salt
12 ounces extra-wide egg noodles
10 ounces white mushrooms, halved or quartered
Freshly ground pepper
1/3 cup all-purpose flour
1 1/2 cups frozen pearl onions, thawed
1 medium carrot, halved lengthwise and sliced thinly across
1 large stalk celery, sliced thinly
2 sprigs fresh thyme
1/2 cup dry white wine or vermouth
4 cups chicken broth
1 cup heavy cream
2 cups shredded rotisserie chicken, skin and bones discarded
2 tablespoons chopped parsley
1 cup shredded Gouda (about 4 ounces)

Steps:

  • Preheat the oven to 375 degrees F. Butter a 3-quart casserole dish.
  • Bring a large pot of generously salted water to a boil. Add the egg noodles and cook until al dente, about 4 minutes. Strain.
  • Meanwhile, heat 2 tablespoons of the butter in a large Dutch oven or pot over medium-high heat. Add the mushrooms and cook, stirring occasionally, until browned all over, about 3 minutes. Season with 1/2 teaspoon salt and a few grinds of pepper. Transfer to a small bowl and set aside.
  • Lower the heat to medium and melt the remaining 4 tablespoons butter in the Dutch oven. Whisk in the flour to form a loose paste. Stir in the onions, carrots, celery and thyme and season with 1/2 teaspoon salt and a few grinds of pepper. Cook for 5 minutes to soften, then add the wine. Whisk for 30 seconds, then add the chicken broth and heavy cream. Bring to a boil, reduce heat and simmer for 10 minutes. Remove the thyme sprigs; fold in the noodles, mushrooms, chicken and parsley and season with salt and pepper. Transfer to the buttered casserole dish and top with the Gouda.
  • Bake until bubbly and brown on top, 40 to 45 minutes.

1/2 cup chicken broth
1/2 cup chopped red onion
1 (4 ounce) can diced green chilies
1/2 teaspoon pepper
2 cups cooked noodles
1 cup diced cooked chicken
1 1/2 cups shredded cheddar cheese

Steps:

  • In a bowl combine the first five ingredients.
  • Fold in noodles and chicken (1 cup) diced cooked chicken.
  • Pour into a 1 1/2 quart baking dish.
  • Sprinkle with cheese.
  • Bake uncovered At 350 for 30 minutes until bubbly.

1/2 lb yolk-free egg noodles
3 tablespoons all-purpose flour
1 cup reduced-sodium chicken broth
2 teaspoons grapeseed oil
1 diced onion
2 cups nonfat milk
1/2 tablespoon Dijon mustard
1 tablespoon fresh tarragon
1 (10 ounce) package frozen peas
2 cups chopped chicken
1/2 cup reduced-fat cheddar cheese

Steps:

  • Preheat oven top 350 degrees. Spray a 2 quart high sided baking dish with nonstick spray.
  • cook the noodles per package directions drain and set aside.
  • meanwhile, whisk the flour and 1/2 cup of the broth in a small bowl until the flour dissolves.
  • Heat the oil in a large saucepan over medium heat. Add the onion and cook, stirring frequently, until softened, about 3 minute Stir in the milk and the remaining 1/2 cup broth; bring the mixture to a simmer. Whisk in the flour mixture; cook stirring constantly, until the sauce bubbles and thicknes, about 3 minute Stir in the mustard and tarragon.
  • Mix the peas and chicken in with sauce.
  • pour noodles into baking dish then top with sauce mixture. Stir the mixture together then top with cheese.
  • Bake Until bubbling and golden brown abour 40 minute.
  • Let stand for 5 min then serve.

1 (2 ounce) chicken breasts (cut in half if needed)
1/4 cup thin spaghetti, broken up into 2 inch long pieces
1 1/4 cups fat free chicken broth
1/8 cup carrot, chopped
1/8 cup celery, chopped
1 dash salt
1 dash pepper
cooking spray
1 dash dried thyme
1 dash dried parsley
2 green onions, sliced thinly

Steps:

  • Cut chicken into bite size pieces.
  • Sauté in a bit of cooking spray.
  • Heat broth, pasta, herbs, carrots, celery, and salt and pepper together.
  • Add chicken.
  • Simmer until noodles are tender.
  • Season to taste.

1 lb cooked and shredded boneless skinless chicken breast
16 ounces cooked macaroni
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can cream of mushroom soup
1 1/2 cups shredded sharp cheddar cheese
3/4 cup milk
1/4 teaspoon onion powder
1 -2 cup crushed Cheez-It crackers
salt and pepper

Steps:

  • Boil and shred chicken breasts.
  • Prepare macaroni as directed.
  • Mix cooked macaroni, shredded chicken, soups, milk, onion powder, salt/pepper, and 1 cup shredded cheese together.
  • Top with 1/2 cup of shredded cheese and Cheez-it crackers.

2 (6 ounce) cans chicken breasts, packed in juice, drained and flaked
1 (12 ounce) package wide egg noodles, drained
2 (10 ounce) cans cream of mushroom soup, undiluted
1 1/2 cups shredded cheddar cheese
2 teaspoons soy sauce
1/3 cup water or 1/3 cup chicken stock
1/4 teaspoon garlic powder
1/8 teaspoon onion powder
salt & pepper
16 Ritz crackers, crushed finely
2 tablespoons melted butter

Steps:

  • Preheat oven to 350°.
  • Cook noodles according to package directions, draining noodles 1 minute before fully cooked.
  • In a large bowl, combine chicken, both cans of soup, cheese, soy sauce, milk (or stock or water), garlic and onion powder and season with salt and pepper as desired.
  • Carefully fold in noodles.
  • Grease a 9x13-inch baking dish and pour noodle mixture into dish.
  • Mix melted butter and cracker crumbs and sprinkle over noodle mixture.

1 (16 ounce) package kluski noodles (Boiled)
1 can cream of chicken soup
1 can cream of celery soup
1/2 cup milk
1/2 cup oleo
1 jar Cheese Whiz
3 -4 cooked chicken breasts (shredded or cut up) or 1 can chicken breast
2 cups shredded cheese, for topping (I like Kraft Classic Melts 4 Cheese)

Steps:

  • Mix soups, butter, milk and cheese in a 9 x 13 casserole dish, add noodles and chicken mixing well.
  • Top with Shredded Cheese; Bake 350 degrees for 1 hour.
  • If I have them I also like to crush cornflakes and add to the top, then sprinkle cheese and butter over them.
