EVERYTHING PIGS IN BLANKETS



Everything Pigs in Blankets image

Our favourite two-ingredient dough (made from self-rising flour and fat-free Greek yogurt) is rolled out, cut into strips, wrapped around pieces of turkey hot dogs, and sprinkled with everything seasoning. The dough bakes to a lovely golden brown color, with a slightly crisp biscuit-like texture. If you're not a fan of everything seasoning, you can simply omit it or substitute another dried seed or spice that you like-such as sesame seeds, poppy seeds, or Aleppo pepper.

1.5 tsp(s) Simply Organic Everything seasoning blend
0.5 cup(s) Plain fat free Greek yogurt
6 item(s) Turkey hot dog(s) each cut into 4 pieces
2 tsp(s) Water
1 large Raw egg(s) lightly beaten
3 tbsp(s) Mustard

Steps:

  • Preheat oven to 425°F. Line a baking sheet with parchment paper.
  • In a medium bowl, combine flour and yogurt. Stir well with a wooden spoon until just combined and then keep mixing dough in bowl with your hands until smooth (about 2 minutes of kneading); let dough rest for 5 minutes. Roll dough into a 12 x 6-inch rectangle on a lightly floured surface. Cut dough in half lengthwise, then cut crosswise into 1-inch strips to form 24 (3 x 1-inch) dough strips.
  • Wrap 1 dough strip around each hot dog piece. Arrange on prepared baking sheet, seam side down. In a small bowl, whisk together water and egg. Brush egg mixture evenly over dough, then sprinkle evenly with seasoning.
  • Bake at 425°F until lightly browned, about 15 minutes. Serve warm with mustard.
  • Serving size: 2 pigs in blankets and 1 tsp mustard

1/4 cup plain fat-free yogurt
1/4 cup fat-free mayonnaise
1/4 teaspoon gingerroot
6 ounces skinless chicken breasts, cooked, cubed
1/2 cup red seedless grapes, halved
1/4 cup celery, chopped
1/4 cup carrot, grated
2 medium scallions, chopped
1 teaspoon chopped walnuts
2 large whole wheat pita bread, split in half
12 cups romaine lettuce, leaves

Steps:

  • Combine yogurt, mayonnaise, ginger and cooked chicken together in a large bowl until chicken is well-coated.
  • Stir in grapes, celery, carrots, scallions and chopped walnuts.
  • Cover and chill until ready to serve.
  • Place about 3 romaine lettuce leaves in each pita half.
  • Add about 1/2 cup of chicken salad mixture.
  • 3 Points per serving.

An incredibly easy party snack/ appetiser to make for the Holidays. Here I've served them with a simple mustard dip but you can easily go with ketchup or bbq sauce too!

9 ounces mini sausages or 9 ounces cocktail franks
9 ounces smoked bacon
1/3 cup mayonnaise
2 teaspoons English mustard
1/4 teaspoon smoked paprika

Steps:

  • Preheat the oven to 350°F.
  • Cut narrow strips of bacon that are just long enough to wrap once around the mini sausage/chipolata. Place seam-side down on a baking tray and bake for 15-20 minutes until the bacon is crisp and slightly browned.
  • For the dip mix the mayo and mustard together until smooth then sprinkle with the smoked paprika.
  • Serve the sausages warm with the dip.

1 medium persimmon, cut in half lengthwise (about 1/4 pound)
1/4 ounce chopped pecans
1 teaspoon light brown sugar
1 tablespoon sour cream
1 tablespoon fat-free whipped topping
1 dash ground nutmeg

Steps:

  • In flameproof 1-1/4 cup au gratin dish or 4x4x2-inch baking dish, arrange persimmon halves, cut side up. Set aside.
  • In cup or small bowl, combine pecans and sugar; sprinkle pecan mixture over persimmon halves, reserving 1 teaspoon.
  • Broil until sugar carmelizes and pecans are lightly toasted, 2-3 minutes. Set aside.
  • In cup or small bowl, combine sour cream, whipped cream, and nutmeg.
  • Top each persimmon half with half of the sour cream mixture and then sprinkle with half of the reserved pecan mixture.
  • 3 Points per serving (1/2 persimmon).

Steps:

  • Preheat oven to 375 degrees.

  • Stretch or roll out JUST ONE triangle-shaped dough slightly, to make it a larger triangle. Cut dough into 4 long, narrow triangles. Beginning at the base of each triangle, roll a piece of the hot dog up in the dough until the point of each triangle wraps around the center.
