Steps:
- Spoon the honey over the cut sides of the figs. Heat a large, heavy skillet over a medium-high flame. Add the butter - it should sizzle briskly when it hits the pan. Throw in the thyme sprigs, followed by the figs, cut sides down. Leave undisturbed for 3 to 5 minutes to caramelize, then turn the figs over and cook for another minute.
- Transfer the figs to a plate. Return the skillet to the heat and add about 5 tablespoons water. Simmer, scraping the caramelized honey with a spoon. Pour this sauce over the figs and serve warm with generous spoonfuls of crème fraîche and a few extra thyme leaves.

- In a pan saute onions in oil till a caramel color, set aside to cool completely.
- Preheat oven to 450 degrees.
- Roll out dough on a floured surface to 1 inch thick. You can make it round or square all a matter of taste.
- Place on a pan that is dusted with corn meal.
- Spread a thin coat of olive oil on dough.
- Arrange goat cheese, figs cut side up, cooled onions around on crust.
- Top with mozzarella cheese and sprinkle with rosemary.
- Place in oven and bake for 15-20 minutes.
- ALTERNATE method:.
- If grilling preheat grill to medium high.
- Oil one side and place on a clean oiled grill and grill for 4-5 minutes.
- Flip and then lightly spread olive oil on dough.
- Arrange goat cheese, figs cut side up, cooled onions around on crust.
- Top with mozzarella cheese and sprinkle with rosemary.
- Cook a couple more minutes.

My father loves figs. He actually grows them in his backyard and when he "lets" me have some I will make this as a dessert. I happen to love goat cheese and between the two of us, we both love port. Everyone seems satisfied at the end.

- In a small saucepan, over medium-high heat, bring the port and honey up to a boil.
- Reduce heat and simmer slowly until reduced by half.
- Set aside and cool to room temperature, the syrup will thicken upon standing.
- Cut the goat cheese into 8 equal pieces, about 2 teaspoon each and roll each piece into a ball.
- Place the figs upright and carefully make four cross cuts, slicing each fig into eight sections, BEING CAREFUL NOT TO GO ALL THE WAY THROUGH.
- Gently separate the figs outward to form a "flower"
- Place a ball of goat cheese in the center of each fig and drizzle with the port syrup.
- Garnish with walnuts.

- Cream the butter and sugar together until light and fluffy for 3 minutes, using a stand mixer with the paddle attachment, stopping on occasion to scrape down sides and bottom. Add the flour, salt and sugar and mix on low speed until fully incorporated about one minute. Add the egg yolk and continue to mix on low speed until the dough comes together about 30 seconds. Wrap in plastic wrap and refrigerate for one hour (or up to 4 days).
- Remove from the refrigerator. Flour your work surface really well so the dough does not stick, and sprinkle the top of the dough with a little flour. With a rolling pin flatten to the desired shape. I used a 13 by 4-inch tart pan. A 10-inch round tart pan will work well too. Roll out dough, starting in the middle and rolling outward, to a 1/4 inch thick disk or rectangle, depending on your tart pan.
- Don’t worry if dough tears or crumbles, it’s easily pressed together in the tart pan. Lift over the rolling pin and place in a tart pan with removable bottom. Patch holes or tears by pressing dough with fingers. Press dough into sides, corners and bottom. Roll the rolling pin over the top of the tart pin for a clean even edge. Refrigerate 30 minutes -this is important.
- Bake at 350 for 30 -35 minutes, positioned in the center of the oven, until golden and delicious smelling. Let cool before filling, and remove tart ring.

- If using frozen store-bought pizza dough, defrost according to package directions. Preheat oven to 500°. If you have a pizza stone, preheat it in the oven; otherwise, preheat a large baking sheet (large enough to accommodate a 10" pizza).
- Heat olive oil in a large pan over medium-low heat. Add sliced onions and a pinch of salt and pepper and cook, stirring occasionally, until the onions are softened and starting to caramelize — about 5 minutes. Add quartered figs and minced rosemary and cook for another minute, adding more olive oil to the pan if the mixture appears dry. Add balsamic vinegar and honey, and cook until the vinegar has reduced and the onions and figs have cooked down into a thick sauce. This will take about 5 minutes. If the vinegar reduces too rapidly, you can add another splash or two. Taste for seasoning, adding more salt and pepper if necessary. Remove sauce from heat and set aside.
- Meanwhile, on a well-floured surface, roll out pizza dough to a 10" round/ 1/4 inch thickness. Transfer to a sheet of parchment paper or a pizza peel sprinkled generously with cornmeal so the pizza won't stick. If using parchment paper, trim off the exposed edges of parchment to prevent it from burning.
- Spread the balsamic-fig mixture atop the prepared pizza dough. Sprinkle the shredded cheese over the sauce, evenly place the reserved fig halves on top of the cheese, then scatter the fresh goat cheese and sprinkle the reserved rosemary to finish it. Using a pizza peel or another baking sheet, carefully slide the pizza onto the preheated pizza stone or baking sheet. Cook for 10-15 minutes until the crust is nicely browned and the cheese is melted and golden.
