Coarse salt
Fresh Egg Pasta Sheets
1 tablespoon extra-virgin olive oil, plus more for pasta
15 ounces fresh ricotta cheese (1 2/3 cups)
1 garlic clove, thinly sliced
1 tablespoon plus 1 1/2 teaspoons chopped mixed fresh herbs (such as rosemary, sage, and parsley)
1/8 teaspoon red-pepper flakes
1/8 teaspoon freshly ground pepper
Parmesan Cream

Steps:

  • Bring a large pot of salted water to a boil. Prepare an ice-water bath. Working in batches, cook pasta sheets for about 2 minutes. Immediately transfer to ice-water bath to cool. Remove from water, rub a drop of oil on each sheet, and stack on a plate.
  • Combine 1 teaspoon salt, the ricotta, garlic, herbs, red-pepper flakes, and pepper in a medium bowl.
  • Preheat oven to 350 degrees. Spread oil in a 9-by-13-inch baking dish. Line up pasta sheets lengthwise on a clean, dry work surface. Spread cup ricotta mixture on each sheet, about 1 inch from bottom. Roll up, overlapping ends to close. Arrange, seam sides down, in rows in baking dish.
  • Immediately pour Parmesan cream over cannelloni. Bake until tops are golden brown and slightly crusty, 50 to 60 minutes. Serve warm.

400 g instant cannelloni tubes
2 tablespoons olive oil
1 large onion, finely chopped
2 garlic cloves, crushed
1 kg frozen spinach, thawed
750 g ricotta cheese, beaten
2 eggs, beaten
1/4 teaspoon nutmeg
2 (575 g) jars pasta sauce (I like the Dolmio Classic sauce)
salt
pepper
400 g mozzarella cheese
1/4 cup parmesan cheese, grated

Steps:

  • Heat the oil in a pan, and cook the onion and garlic until tender. Add the spinach and cook for 2 minutes, stirring often.
  • Place in a bowl, and add the ricotta, eggs, nutmeg, salt, and pepper. Mix well.
  • Stuff each canneloni tube, and put in a baking dish.
  • Pour the jar of sauce over the pasta.
  • Top with cheese, and bake at 180C until cheese is golden, and the sauce is bubbling (about 30 minutes).

1 large head of garlic, top 1/2 inch cut off
6 tablespoons extra-virgin olive oil, divided
4 ears of fresh corn with husks
6 tablespoons fresh lemon juice
4 teaspoons grated lemon peel
8 ounces capellini
2 cups (loosely packed) mixed greens
2 cups torn radicchio leaves
1 cup fresh ricotta cheese (7 to 8 ounces)
1/2 cup finely grated Parmesan cheese plus shaved Parmesan for garnish
1/2 cup chopped fresh parsley
1/3 cup thinly sliced fresh basil leaves
1/4 cup chopped fresh chives
1/4 cup chopped fresh dill

Steps:

  • Preheat oven to 400°F. Place head of garlic on sheet of foil. Drizzle with 2 tablespoons oil; wrap foil around garlic and crimp to seal tightly. Place garlic and corn on rimmed baking sheet. Bake until corn is tender and garlic is soft, about 25 minutes for corn and 40 minutes for garlic. Cool slightly.
  • Squeeze garlic out of skins into large bowl; add any oil from foil. Add lemon juice, lemon peel, and 3 tablespoons oil; mash garlic, then whisk mixture. Shuck corn; cut kernels from cob and transfer to same bowl.
  • Meanwhile, cook pasta in pot of boiling salted water until tender but still firm to bite. Drain. Rinse with cold water; drain well. Place in medium bowl; toss with 1 tablespoon oil. Using kitchen shears, cut pasta crosswise several times.
  • Add pasta, greens, radicchio, ricotta, grated Parmesan, and herbs to bowl with garlic mixture; toss to coat. Season with salt and pepper. Garnish with shaved Parmesan.

2 small Parmesan cheese rinds (about 2 ounces each)
3 cups heavy cream
Coarse salt and freshly ground pepper

Steps:

  • Heat Parmesan rinds and cream in a medium saucepan over medium heat, stirring occasionally, until bubbles form around the edge. Reduce heat to low. Simmer, stirring frequently, until reduced by half, about 45 minutes. Strain through cheesecloth. Season with salt and pepper. Let cool slightly.

This is a recipe I have had for ages and don't know where I originally got it from but have posted because of a request on the threads. It does work.

3 cups fresh spinach leaves, steamed,drained and finely chopped (about 1/2 to 3/4 cooked)
2 cups ricotta cheese
1/3 cup of grated parmesan cheese (freshly grated)
salt and pepper
4 tablespoons of finely chopped fresh basil
2 -3 cups of your favourite tomato sauce (home made or bought)
1/2 cup of grated fresh parmesan cheese, for topping
5 ounces of purchased lasagna sheets, fresh

Steps:

  • Mix the first 5 ingredients together.
  • Preheat your oven to about 180d C.
  • Place about 1/3rd cup of filling into the centre of each pasta sheet and roll into a cylinder.
  • When all sheets are filled place a cup of the sauce on the bottom of a 9 x 12 inch pan and then lay the cannelloni's on top of it.
  • After all have been assembled spread the remaining sauce on top then sprinkle with remaining cheese.
  • Bake about 30 mins until they are bubbling and golden then let stand for 10 minutes before serving.

Béchamel:
6 Tbsp. unsalted butter
3 Tbsp. all-purpose flour
3 cups whole milk
1 oz. Parmesan, grated (about 1/2 cup)
Pinch of cayenne pepper
Pinch of ground nutmeg
Kosher salt
Assembly:
2 bunches green Swiss chard
3 Tbsp. extra-virgin olive oil
1 lb. sweet Italian sausage, casings removed
1 lb. whole-milk fresh ricotta
Kosher salt
1 lb. fresh pasta sheets (about 16 (6x4") pieces) or 12 oz. dried jumbo shells (about 30)
2 cups store-bought marinara sauce
Grated Parmesan (for sprinkling)

Steps:

  • Béchamel:
  • Melt butter in a medium saucepan over medium heat. Whisk in flour and cook, whisking occasionally, until mixture smells slightly nutty, about 3 minutes. Whisk in milk, then increase heat to medium-high, and still whisking constantly, bring to a simmer. Reduce heat to maintain a simmer and cook just until thick and no longer floury tasting, 8-10 minutes. Add Parmesan and whisk until melted, then whisk in cayenne and nutmeg; season with salt. Cover béchamel and keep warm until ready to use.
  • Do Ahead: Béchamel can be made 3 days ahead. Let cool; cover and chill. Reheat over medium-low, whisking constantly and adding a splash of water if needed to loosen.
  • Assembly
  • Remove ribs and stems from Swiss chard leaves and thinly slice. Tear leaves into large pieces. Combine oil and sausage with Swiss chard ribs and stems in a large skillet and set over medium-high heat. Cook, breaking up sausage with a heatproof rubber spatula or wooden spoon into small pieces, until sausage is almost cooked through, 5-7 minutes.
  • Add Swiss chard leaves to skillet a handful at a time, tossing and letting them wilt slightly between additions, until all the leaves have been added. Cook, reducing heat as needed (liquid should be bubbling slightly at this point), until liquid is almost completely evaporated (it's important to dry out the Swiss chard here so the filling isn't soggy), about 5 minutes. Transfer to a large bowl. Let cool 5 minutes, then stir in ricotta. Season filling with salt.
  • If using pasta sheets, cook in a pot of boiling salted water 1 minute. Transfer to a large bowl of cold water. Lay out a row of pasta sheets on a rimmed baking sheet (don't overlap), then top with a sheet of waxed or parchment paper. Repeat with remaining pasta sheets, placing sheets of paper between each layer.
  • If using shells, cook in a pot of boiling salted water, stirring occasionally, just until very al dente, about 3 minutes less than package instructions; rinse under cold water to cool quickly.
  • Preheat oven to 375°F. Spread half of béchamel into a 13x9" baking dish. If using pasta sheets, lay out a sheet on a clean surface with a short end facing you. Spoon a heaping ¼-cupful of filling so it runs all the way down the center. Roll pasta around filling to create a 1 1/4"-diameter tube (the pasta will overlap quite a bit). Repeat with remaining pasta sheets, arranging in baking dish as you go to create 2 rows. If using shells, spoon a heaping tablespoonful of filling into each shell and nestle next to each other to create rows (you'll have about 5 rows of 6 shells each). Spread remaining béchamel over cannelloni, then marinara sauce. Top with Parmesan.
  • Bake cannelloni until edges of pasta are lightly browned and sauce is bubbling around edges of pan, 30-40 minutes.
  • Do Ahead: Filling can be made 2 days ahead. Let cool completely, then cover and chill.
