APPLE BAKED OATMEAL
Apple Baked Oatmeal is an easy make-ahead gluten-free breakfast topped with sugar-free caramelized apples. A healthy meal with cozy Fall flavors!

Steps:
- Preheat oven to 375 F and grease a baking dish (either 8 x 8-inch, or 8 x 5-inch). In a large bowl, combine oats, apple pie spice, and baking powder. Set aside!
- Then, in a separate bowl, whisk together milk, an egg, honey or pure maple syrup, vanilla extract, and apple sauce until well combined. Gently stir the oat mixture with the milk mixture until incorporated. Pour into reserved greased baking dish.
- Bake for about 35-40 minutes or until a toothpick inserted in the center comes out mostly clean. Let cool at room temp for at least 10 minutes before serving -- or overnight, loosely covered.
- Meanwhile, prepare the caramelized apples. In a large no-stick skillet, melt unsalted butter over medium heat, stir in honey, and cook apples for about 5-7 minutes or until golden brown.
- Top apple baked oatmeal. If desired, garnish with pomegranate seeds.

- Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups.
- Mix almond milk, applesauce, apple, raisins, pecans, flax meal, eggs, brown sugar, cinnamon, and nutmeg together in a bowl; stir in oats until well mixed. Let sit for 5 minutes. Scoop mixture into the prepared muffin cups using an ice cream scoop.
- Bake in the preheated oven until lightly browned, about 20 minutes. Let oatmeal sit in muffin tin for 5 minutes before transferring to a wire rack to cool completely.

APPLE BAKED OATMEAL
Steps:
- Preheat oven to 350 degrees F. Grease 8×8-inch baking dish.
- In a large bowl, whisk the butter, egg, milk, maple syrup, vanilla, pumpkin pie spice, baking powder and salt.
- Stir in oats, apples, and 1/4 cup walnuts.
- Pour oatmeal mixture into prepared baking dish. Bake at 350 degrees until puffed and center is just set, about 45-55 minutes. During last 5 minutes of baking, sprinkle remaining walnuts over top.
- Serve warm and refrigerate leftovers for 3-4 days. Reheat in the microwave with some additional milk splashed on top.

- In a saucepan, heat apple, butter, maple syrup, cinnamon, salt, and 3 tablespoons water over medium-high until simmering. Cover and cook until apples are tender, about 5 minutes. Reserve 1/2 cup apple mixture for garnish.
- Add oats and 2 cups water to saucepan with remaining apple mixture and simmer, uncovered and stirring occasionally, until oats are creamy, about 5 minutes.
- Serve with reserved apple mixture, pecans, and more maple syrup, if desired.
