CREAMY GARLIC PRAWN PASTA



Creamy Garlic Prawn Pasta image

Recipe VIDEO above. Pasta tossed with a garlic infused creamy sauce and plump, juicy prawns! (Shrimp) This pasta version of Creamy Garlic Prawns is a quick meal you'll get on the table in 20 minutes, this is luscious but it's not too rich. The key is to emulsify the sauce (i.e. thicken it) by tossing the pasta in the sauce just before serving - this is the proper Italian way to make pasta. Serves 3 very hungry people or 4 normal servings.

8 oz / 250g fettuccine (, or other long strand pasta of choice)
30 g / 2 tbsp butter (, separated)
300 g / 10 oz small peeled prawns / shrimp, raw ((Note 1))
3 garlic cloves (, minced)
1/4 cup / 65 ml dry white wine ((Note 2 for sub))
1 cup / 250 ml heavy / thickened cream ((Note 3))
1/2 cup / 125 ml chicken broth ((or fish or vegetable broth), preferably low sodium)
3/4 cup / 50 g finely grated parmesan cheese (1.5 oz) ((freshly grated) (Note 4))
2 tbsp finely chopped parsley
Black pepper
Parmesan (, for serving)

Steps:

  • Bring to boil a large pot of water. Add pasta and cook per packet MINUS 1 minute. (Note 5).
  • Just before draining, scoop out 1 cup of pasta cooking water and set aside. Drain pasta.
  • Meanwhile, melt 1 tbsp of butter in a large non stick skillet over medium high heat. Add prawns and cook for 1 1/2 minutes on each side until just cooked through. Remove prawns.
  • In the same skillet, add 1 tbsp butter. Once melted, add garlic. Stir for 20 seconds until fragrant.
  • Add wine and stir. Simmer for 2 minutes until wine mostly reduces (see video).
  • Add cream, broth and parmesan. Stir until the parmesan is melted, then leave to simmer for 1 1/2 minutes until it thickens slightly (will thicken more in next step).
  • Add prawns, stir, then add pasta plus about 1/4 cup of reserved pasta water. Toss pasta (still on stove) and the sauce will thicken in about 30 - 45 seconds and start clinging to the pasta.
  • Take it off the stove before the sauce is as thick as you want - it will thicken more.
  • Sprinkle with most of the parsley and black pepper, check salt (I don't need more). Toss again until the sauce consistency is to your taste. Add a tiny splash of pasta water if it gets too gluggy.
  • Serve immediately, garnished with remaining parsley and parmesan if desired.

4 tablespoons unsalted butter, divided
4 cloves garlic, minced
1 ¼ lb large raw shrimp, peeled and deveined
½ cup Holland House® White Cooking Wine
⅛ teaspoon red pepper flakes
2 tablespoons fresh lemon juice
kosher salt, to taste
freshly ground black pepper, to taste
¼ cup fresh parsley, plus 1 tablespoon, chopped, divided
1 lb dried fettuccine noodles, cooked according to package instructions

Steps:

  • In a large pan, melt together the olive oil and 2 tablespoons of butter over medium heat. Add the garlic and sauté for 30-60 seconds, until fragrant.
  • Add the shrimp to the pan in a single layer. Cook for 1-2 minutes on one side, until just beginning to turn pink, then flip. Add the Holland House® White Cooking Wine and red pepper flakes. Bring to a simmer and cook for 2-3 minutes, or until the wine reduces by about half and the shrimp are cooked through.
  • Add the lemon juice and remaining 2 tablespoons of butter and stir until the butter melts. Season with salt and pepper to taste. Fold in ¼ cup chopped parsley.
  • Toss the shrimp and sauce with fettuccine until well coated. Garnish with the remaining tablespoon of chopped parsley. Serve immediately.

This Shrimp Fettuccine Aflredo is a major comfort food. There's just something about a mountain of pasta consumed by rich creamy sauce, and studded with large, tender shrimp that has my name written all over it. It reminds me of my favorite dish at Olive Garden; seafood alfredo. It's also surprisingly easy to make; ready in under 30 minutes!

3/4 lb fettuccine or penne pasta
1 lb shrimp (peeled and deveined)
1 Tbsp oil
1 small onion (finely chopped)
2 Tbsp unsalted butter
1 garlic clove
1/3 cup white wine (I used Ste Chapelle Chardonay ~$6)
2 cups heavy whipping cream
1/3 cup parmesan cheese
S&P to taste
Sprinkle of paprika
Parsley or basil for garnish if desired

Steps:

  • Cook 3/4 lb fettuccini noodles in salted water according to package instructions and drain. Don't rinse (this helps the sauce stick to the noodles better).
  • Lightly season shrimp with salt, pepper and paprika. Preheat a large skillet to med/high and add 1 Tbsp oil. Once oil is hot, add shrimp in a single layer and cook 1-2 min per side or just until fully cooked and no longer translucent. They should be golden/pink on the outside and opaque white on the inside. Don't over-do it or they will be rubbery. Remove shrimp to a separate bowl.
  • In same pan, over medium/high heat, add 2 Tbsp butter and onion and sauté onion till golden. Stir in garlic and sauté another minute. Stir in 1/3 cup white wine and reduce to 25% scraping the bottom to deglaze the pan.
  • Stir in Cream and simmer for 2 min. Next, sprinkle the top with 1/3 cup parmesan (or add to taste) and stir just until creamy and smooth and remove from heat. Don't boil or the cheese will separate from the cream. Add about 1/4 tsp paprika and season with S&P to taste.
  • Add the cooked shrimp and drained (un-rinsed pasta). Garnish with parsley, basil, extra parmesan or freshly cracked pepper if desired.

A very tasty creamy pasta dish, good for cooking when you have company. Be careful though, you may have too much fettucine per sauce quantity so if this is the case, do not use all the fettucine as it will take away the richness of the sauce. Another alternative is to use rice as the base rather than the pasta.

750 g peeled uncooked large shrimp
1 bunch spring onion, sliced
6 garlic cloves, crushed
150 -200 ml thickened cream
1/2 cup white wine
1/4 cup fish stock or 1/4 cup vegetable stock
2 tablespoons cornflour, mixed with
cold water
1/4 teaspoon chili flakes
salt & pepper
olive oil
300 -500 g fresh fettuccine
fresh parmesan cheese, to serve on top fettuccine pasta
4 -6 dinner rolls, oven baked

Steps:

  • Put fettucine on to boil in water with some oil and salt. Should not take long to cook.
  • In a large frying pan, saute onion garlic and spring onions until soft.
  • Add prawns and toss through until cooked.
  • Add white wine and stock and mix through.
  • Add cream slowly, mixing through until you get desired quantity but not too much otherwise it will taste of all cream.
  • Add cornflour to thicken the cream sauce.
  • Check fettucine is ready and drain if ready.
  • Add more crushed garlic to cream sauce if you think it needs more.
  • Add salt and pepper to taste.
  • In a large dish add hald fettucine and half the sauce and mix through. Then add the other half of the fettucine and the other half of the sauce and mix through.
  • Serve with grated or shaved parmesan cheese on top and warm oven baked dinner rolls.

175g linguine
2 tsp olive oil
1 garlic clove, finely sliced
100ml white wine
2 tbsp reduced-fat crème fraîche
juice ½ lemon (or to taste)
2 handfuls (150g) raw peeled prawns
small bunch chives, finely chopped

Steps:

  • Cook the pasta. Meanwhile, heat the oil in a pan and gently fry the garlic for 2 mins. Tip in the wine and bubble over a high heat for 1 min, then lower the heat and stir in the crème fraîche and lemon juice. Season to taste with salt and plenty of black pepper. Simmer for 1 min to reduce a little, then add the prawns and simmer in the sauce until just pink.
  • Drain the pasta and tip into the sauce with half the chives. Use tongs to mix everything together. Divide between 2 shallow bowls and sprinkle with the remaining chives.

I got this recipe from a friend. In addition to being a wonderful sauce for pasta, this white sauce is a great basic recipe to use with seasonal vegetables such as zucchini. This sauce is also perfect for adding shrimp or scallops. Spring onions are used in this recipe as they tend to be milder in taste than other onions. Although this recipe calls for fresh garlic, minced garlic may also be used. One teaspoon of minced garlic equals 2 cloves. Since this is a white sauce, it does NOT need cheese. The pasta should be added to the sauce, not the sauce to the pasta. Please note that some ingredients used in my recipe are approximations and more spices may be needed depending on individual taste. 3 -4 tablespoons olive oil
1/2 cup butter, cut in half
3 anchovies

  • Add more olive oil to saucepan to wet all the vegetables.
  • Add second half of butter.
  • Add white wine and stir well.
  • Sprinkle salt over sauce, I use about three sprinkles.
  • Add oregano, I add three dashes.
  • Grate fresh ground black pepper over sauce.
  • Drain pasta and add to sauce.

14 ounces medium raw shrimp or 400 g raw shrimp, tail on
1 cup water
1 tablespoon chicken base (preferably Better Than Bullion)
1 pinch saffron
2 tablespoons coconut oil or 2 tablespoons olive oil
3 large shallots, diced or 1 medium onion
2 garlic cloves, minced
1/2 cup white wine (preferably Pinot Grigio)
2 tablespoons dried parsley
1 teaspoon dried basil
1/4 teaspoon crushed red pepper flakes
2 tablespoons butter
1 1/2 tablespoons lemon juice
3 tablespoons parmesan cheese

Steps:

  • Remove tails from shrimp and place in a small saucepan with 1 cup of water. Keep shrimp for later in the recipe.
  • Bring shrimp tails and water to a boil, reduce and simmer for 10 minutes. Add chicken base and stir. Remove from heat, add saffron, cover and allow to steep for 5 minutes. Strain and reserve liquid for later in the recipe.
  • In a large fry pan, cook shallots and garlic over medium heat until just soft in coconut oil or olive oil.
  • Add shrimp to shallots and garlic mixture. Stir to combine and cook for 2 to 3 minutes. Shrimp should just be pink.
  • Add wine, parsley, basil, pepper flakes, and reserved stock. Cook over medium heat until back to temperature. (soft boil).
  • Add butter and lemon juice. Once butter has melt, remove from heat and cover.
  • Serve on pasta, rice, or Gnocchi with bread to dip in the sauce.

200g linguine or spaghetti
25g butter
200g raw peeled prawn, preferably tiger prawns
1 garlic clove, crushed
100ml white wine
squeeze lemon juice
small handful flat-leaf parsley, roughly chopped

Steps:

  • Cook the pasta in a large pan of boiling, salted water according to pack instructions. Meanwhile, heat a small knob of the butter in a frying pan. When it starts to sizzle, add the prawns and fry for 1 min until they start to change colour. Add the garlic and sizzle for 1 min more, splash in the wine, then bring to the boil. Swirl in the rest of the butter, season with salt and pepper and a squeeze of lemon juice, then stir in the chopped parsley.
  • When the pasta is just cooked, drain and toss through the prawns. Divide the pasta between 2 bowls, pour over any excess sauce and serve straightaway.
