Teriyaki Salmon Noodles are a delicious, healthy and quick dinner - great for any night of the week! The Teriyaki is sweet and there are LOADS of vegetables in the noodles - it's a great one-bowl dish!

1 lb salmon
1/2 cup soy sauce
4 tbsp brown sugar
4 tbsp olive oil
2 tsp ginger (grated)
1 tsp corn starch
5 oz rice noodles (or soba or udon)
2 tsp sesame oil
2 tsp olive oil
1/2 onion (thinly sliced)
1/2 red pepper (thinly sliced)
8 oz gourmet mushrooms (shitake, enoki, oyster, crimini or button )
1/2 cup snow peas
1 tbsp garlic (minced)
1 tsp soy sauce
1/4 cup sweet thai chili sauce
1 cup spinach leaves (chopped)
1 lime

Steps:

  • Whisk teriyaki sauce ingredients together (soy sauce, brown sugar, oil, ginger and corn starch). You can also use 1 cup pre-made teriyaki sauce instead.
  • Pour into a ziploc bag and place salmon in bag. Marinate for 30 min - 2 hrs.
  • For last 15 minutes of marinating, prep rest of items & start cooking
  • Cook rice noodles according to package directions, prep veggies
  • After noodles are cooked, rinse with cold water and drain. Set aside.
  • Heat sesame oil in a skillet
  • Add onions and peppers and cook for 2-3 min until soft
  • While veggies are cooking, prepare salmon - instructions below.
  • Add garlic, mushrooms, snow peas and soy sauce. Cook for 3-5 minutes until mushrooms are done
  • Add in chili sauce, drained noodles and 1/4 cup remaining marinade
  • Toss and remove from heat
  • Add spinach and juice from lime - toss again until spinach wilts slightly
  • Serve in bowls
  • Top with salmon

2 skinless salmon fillets
150g pack The Saucy Fish Co Fresh Teriyaki Sauce (from Tesco), or similar
2 tbsp groundnut oil
4 spring onions, shredded
1 large garlic clove, finely chopped
300g fresh egg noodles (from major supermarkets)
120g Tesco Sliced Spring Greens, or similar
2 tbsp chilli sauce
Small bunch of fresh coriander, leaves chopped
1 lime, cut into wedges

Steps:

  • Put the salmon fillets in a shallow bowl and spoon over half the teriyaki sauce (reserve the rest). Leave to marinate for 10 minutes, turning occasionally. Heat half the groundnut oil in a large sauté pan over a medium-high heat, add the salmon and fry for 2-3 minutes on each side until just cooked through. Remove, then flake into large pieces with a knife and fork. Set aside.
  • Wipe the pan to remove any burnt bits, add the remaining oil, then return the pan to the heat. Add the spring onions and garlic, stir-fry for a minute, then stir through the noodles and spring greens. Fry until the greens are wilted and the noodles are heated through.
  • Add 2 tbsp of the reserved teriyaki sauce to the pan, along with the chilli sauce, flaked salmon and coriander, then toss to coat. Serve the salmon noodles with lime wedges to squeeze over.

2 skin-on salmon fillets (about 125g/41/2oz each)
1 small red chilli , deseeded and finely chopped
1 tbsp mirin
1 tbsp soy sauce
½ thumb-sized piece ginger , peeled and finely grated
½ small pack coriander , chopped
140g mangetout
2 tbsp teriyaki sauce
300g straight-to-wok noodles

Steps:

  • Heat oven to 190C/170C fan/gas 5. Line a baking tray with parchment and put the salmon, skin-side down, on top. Mix together the chilli, mirin, soy, ginger and coriander, and spoon over the salmon. Roast the salmon in the oven for 12-15 mins until just cooked.
  • Heat a large frying pan or wok and cook the mangetout with 1 tbsp water for 2 mins until tender but still with some bite. Stir in the teriyaki sauce and noodles to heat through. Divide between 2 plates and top with the salmon.

Salmon is a favorite of my husband. This recipe never fails to be a hit, whether we broil the salmon in the oven or grill it outdoors. Pair it with some homemade teriyaki fried rice to complete your meal.

¼ cup sesame oil
¼ cup lemon juice
¼ cup soy sauce
2 tablespoons brown sugar, or more to taste
1 tablespoon sesame seeds
1 teaspoon ground mustard
1 teaspoon ground ginger
¼ teaspoon garlic powder
4 (6 ounce) salmon steaks

Steps:

  • Mix sesame oil, lemon juice, soy sauce, brown sugar, sesame seeds, ground mustard, ginger, and garlic powder in a small saucepan over low heat. Bring to a simmer, stirring until sugar has dissolved. Set aside 1/2 cup of marinade for basting.
  • Pour remaining marinade into a resealable plastic bag and place salmon into the marinade. Squeeze air out of the bag, seal, and marinate the salmon steaks for at least 1 hour (2 hours for better flavor). Drain and discard used marinade.
  • Set oven rack about 4 inches from the heat source and preheat the oven's broiler. Place salmon steaks into a broiler pan and broil for 5 minutes. Brush steaks with reserved marinade, turn, and broil until fish is opaque and flakes easily, about 5 more minutes. Brush again with marinade.

4 tablespoons teriyaki sauce
2 teaspoons honey
2 garlic cloves
1 piece ginger
4 salmon fillets
200 g noodles
100 g leeks
1 tablespoon oil
1 tablespoon soy sauce
1 chili
2 pak choi
2 limes
2 tablespoons sesame seeds

Steps:

  • Preheat the oven to gas 7, 220C, fan 200c. Mix the teriyaki sauce, honey, garlic, and ginger in a small bown and then brush over the salmon fillets. Put the fish in a foil-lined roasting tin and leave to marinate for 10 minutes.
  • Add the noodles and leeks into a pan of boiling water and simmer for 3-4 minutes, drain and then tip into a large bowl. Add the sesame oil, soy sauce, sliced chilli and toss to combine.
  • Cut out 4 30cmx30cm (12in) squares of nonstick baking paper. Divide the pak choi between each, top each with the noodle mix and a lime half and then scrunch up the paper and tie with kitchen string to make a parcel.
  • Sprinkle the marinated salmon with sesame seeds and place on the top shelf of the oven. Place the noodle parcels on the next shelf and bake for 8-10 minutes.
  • Serve the noodles in their parcels (to be opened at the table), or spoon the contents onto a plate, and top with a piece of salmon. Spoon over some teriyaki sauce from the tin to finish.

2 salmon fillets, skin on
2 pak choi, each cut in 3-4 long wedges
olive oil, for brushing
3 tablespoons soy sauce
2 tablespoons mirin
1 1/2 teaspoons superfine sugar
4 ounces medium rice noodles
1 tablespoon peanut oil
splash sesame oil
2 teaspoons garlic, chopped
scallion
fresh gingerroot
toasted sesame seeds

Steps:

  • Mix the teriyaki ingredients (soy sauce, mirin and sugar) in a small pan. Bring to the boil to dissolve the sugar, then bubble for about 3 mins till thickened.
  • Cook the noodles and drain. Preheat the broiler and put a steamer on. Lay the salmon, skin-side down, on an oiled baking sheet, brush with olive oil, season with pepper and grill for 3 minutes Meanwhile, steam the pak choi for 3-4 minutes.
  • Heat both the oils for the noodles in a wok, tip in the garlic and stir-fry for 1 minute
  • Add the noodles and stir-fry for 1 minute Keep the noodles and pak choi warm.
  • Turn the salmon over, brush with teriyaki sauce, and grill for 1 minute Brush again to glaze. Serve with noodles and pak choi, top with scallions, ginger and sesame seeds, and drizzle with remaining sauce.
  • GIVE IT A FANCY FINISH:.
  • Cut shreds of scallion and fresh root ginger, and leave in water in the fridge to crisp and curl. Scatter over the salmon.
