8 cups fresh baby spinach
1 cup dried cranberries
2 medium pears, chopped
1/4 cup cider vinegar
5 tablespoons sugar
1 teaspoon dried minced onion
1/2 teaspoon Worcestershire sauce
1/2 teaspoon ground mustard
1/4 teaspoon paprika
1/4 cup olive oil
1 tablespoon sesame seeds
1 teaspoon poppy seeds
2 tablespoons chopped pecans, toasted

Steps:

  • In a large bowl, combine the spinach, cranberries and pears. In a blender, combine the vinegar, sugar, onion, Worcestershire sauce, mustard and paprika; cover and process until blended. While processing, gradually add oil in a steady stream. Add sesame seeds and poppy seeds. Pour over salad and toss to coat. Sprinkle with pecans.

A salad that serves well as a light meal. Received at a Weight Watchers meeting. 4 WW points per serving. The original recipe suggests using a red pear for color, but adds that you can substitute any ripe pear. Also, if you can't find roasted almonds, roast your own by spreading almonds on a baking sheet and roasting them in a 350 degree oven for 10 minutes. In summer months, you could easily swap ripe peaches or nectarines for the pears.

2 tablespoons red wine vinegar
2 tablespoons water
2 tablespoons olive oil
2 teaspoons mustard, coarse, ground
2 teaspoons pancake syrup (maple-flavored suggested)
2 teaspoons shallots, minced
1/4 teaspoon salt
1/4 teaspoon black pepper, freshly ground
6 ounces fresh baby spinach leaves (about 8 cups)
1 large pear, ripe, cored and thinly sliced into 12 pieces
6 tablespoons chopped almonds, unsalted, dry-roasted
1/4 cup dried cranberries

Steps:

  • In a small bowl, whisk together vinegar, water, oil, mustard, syrup, shallots, salt and pepper until blended; pour 1/4 cup dressing into a large bowl.
  • Add spinach and toss until coated.
  • Arrange 2 cups of dressed spinach on each of 4 salad plates.
  • Top each with 3 pear slices and then sprinkle each with 1-1/2 tablespoons almonds and 1 tablespoons of dried cranberries.
  • Drizzle each salad with about 1 tablespoons of remaining dressing and serve.

1 tablespoon butter
¾ cup almonds, blanched and slivered
1 pound spinach, rinsed and torn into bite-size pieces
1 cup dried cranberries
2 tablespoons toasted sesame seeds
1 tablespoon poppy seeds
½ cup white sugar
2 teaspoons minced onion
¼ teaspoon paprika
¼ cup white wine vinegar
¼ cup cider vinegar
½ cup vegetable oil

Steps:

  • In a medium saucepan, melt butter over medium heat. Cook and stir almonds in butter until lightly toasted. Remove from heat, and let cool.
  • In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, onion, paprika, white wine vinegar, cider vinegar, and vegetable oil. Toss with spinach just before serving.
  • In a large bowl, combine the spinach with the toasted almonds and cranberries.

1 cup quinoa, rinsed
1 package (6 ounces) fresh baby spinach, torn
1/2 cup dried cranberries
DRESSING:
3 tablespoons olive oil
2 tablespoons orange juice
1 tablespoon red wine vinegar
1 tablespoon maple syrup
1 garlic clove, minced
1/2 teaspoon salt
1/8 teaspoon pepper
1 green onion, finely chopped
1/2 cup chopped pecans, toasted

Steps:

  • In a small saucepan, bring water to a boil. Add quinoa. Reduce heat; cover and simmer for 12-15 minutes or until water is absorbed. Remove from the heat; fluff with a fork., In a large bowl, combine the warm quinoa, spinach and cranberries. 1 green onion, chopped
1 radish, chopped
Dash salt
Dash pepper
2 bacon strips, diced
1 tablespoon sugar
1 tablespoon cider vinegar
1-1/2 teaspoons lemon juice
1/2 teaspoon cornstarch
2 tablespoons water
1 hard-boiled large egg, chopped

Steps:

  • In a salad bowl, combine the spinach, onion, radish, salt and pepper; set aside. , In a small skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels. Drain, reserving 1 tablespoon drippings. Combine the sugar, vinegar and lemon juice; stir into drippings. Cook and stir over low heat until sugar is dissolved. Combine cornstarch and water until smooth; add to skillet. Bring to a boil over medium heat; cook and stir for 1-2 minutes or until thickened. , Pour over spinach mixture and toss to coat. 1 large red onion, chopped
2 teaspoons olive oil

1 (10 ounce) bag fresh spinach
1 cup halved grape tomatoes or 1 cup cherry tomatoes
1/4 cup walnut pieces
1/3 cup crumbled blue cheese
1/2 cup whole berry cranberry sauce
1 tablespoon grated ginger
1/4 cup fresh orange juice
2 tablespoons balsamic vinegar
1 teaspoon sugar
1 tablespoon olive oil
1/2 teaspoon fresh ground pepper
1/4 salt

Steps:

  • Melt butter in saute pan over medium heat; add pear and brown sugar and saute until browned and caramelized, about 10 minutes.
  • Heat oil in saute pan over medium heat; add red onion, vinegar and sugar and saute until caramelized, about 10 minutes.
  • Toast walnut pieces in dry skillet over medium heat until fragant and beginning to darken (Optional).
  • Combine spinach, tomatoes, pears, onions, blue cheese and walnuts.

6 eggs
1 pound bacon
2 bunches fresh spinach, rinsed and dried
4 green onions, thinly sliced
2 eggs
¼ cup white sugar
¼ cup white vinegar
¼ cup red wine vinegar

Steps:

  • Place 6 eggs in a medium saucepan with enough cold water to cover. Bring water to a boil, and immediately remove from heat. Cover, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel, and chop.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble, and set aside, reserving approximately 1/2 cup of drippings in the skillet.
  • In a large bowl, toss together the spinach and green onions.
  • Heat the reserved drippings over low heat. In a small bowl, whisk together the 2 remaining eggs, sugar, white vinegar, and red wine vinegar. Add to warm grease, and whisk for about a minute, until thickened. Pour at once over spinach, add crumbled bacon, and toss to coat. Garnish with chopped egg.

This recipe comes for a BHG small CB with favorite recipes from 1930 until 2001. This particular recipe comes from 1941. This recipe interests me because when I was in my early teens, our family went back to Oklahoma to visit all our relatives. This was the salad that my aunt made every day we were there. I have never had it since then.

6 cups spinach or 6 cups romaine lettuce, torn fresh
1 cup fresh mushrooms, sliced
1/4 cup green onion, thinly sliced
3 slices bacon
3 tablespoons vinegar
1 teaspoon sugar
1/4 teaspoon dry mustard
1 egg, hardboiled, chopped up

Steps:

  • In a large bowl combine spinach, mushrooms, and green onions. Set Aside.
  • For Dressing, in a 12" skillet cook bacon until crisp.
  • Remove bacon; reserving 2 T drippings in skillet.
  • Crumble bacon; set aside.
  • Stir vinegar, sugar, and dry mustard into drippings.
  • Bring to boiling: remove from heat.
  • Add the spinach mixture.
  • Toss mixture in skillet for 30 to 60 seconds or until mixture is just wilted.
  • Transfer to serving dish and top with egg and bacon.
