SAUSAGE, PEPPER AND ONION HOAGIES



Sausage, Pepper and Onion Hoagies image

Number Of Ingredients 15

3/4 pound sweet Italian sausage
3/4 pound hot Italian sausage
2 tablespoons extra virgin olive oil, 2 turns of the pan
2 large cloves garlic, crushed
1 large onion, thinly sliced
2 cubanelle peppers (light green mild Italian peppers), seeded and thinly sliced
1 red bell pepper, seeded and thinly sliced
Salt and pepper
2 or 3 jarred hot cherry peppers, banana peppers or pepperoncini, finely chopped
3 tablespoons hot pepper juice, from the jar
4 crusty, semolina submarine sandwich rolls, 8 inches, sesame seeded or plain
1 tablespoon extra-virgin olive oil
3 tablespoons butter
1 large clove garlic
1 1/2 teaspoons dried Italian seasoning, 1/2 a handful or 1/2 teaspoons each oregano, thyme, parsley

Steps:

  • Place the sausages in a large nonstick skillet. Pierce the casings with a fork. Add 1-inch water to the pan. Bring liquid to a boil. Cover sausages, reduce heat and simmer 10 minutes.
  • Heat a second skillet over medium high heat. Add oil, 2 turns of the pan. Add garlic, onion, cubanelle and red peppers. Season vegetables with salt and pepper.
  • Drain sausages and return pan to stove, raising heat back to medium high. Add a drizzle of oil to the skillet, brown and crisp the casings. Remove sausages, slice into 2 inch pieces on an angle and set pieces back into the pan to sear.
  • Split and toast the bread under broiler. Melt oil, butter together in small pan over medium heat. Add garlic and let it sizzle 1 or 2 minutes. Brush rolls with garlic butter and sprinkle with a little dried Italian seasoning blend.
  • Combine the cooked peppers and onions to the sausages. Add hot peppers and hot pepper juice to the skillet. Toss and turn the sausage, peppers and onions, picking up all the drippings from the pan. Pile the meat and peppers into the garlic sub rolls and serve.

COOK TIME IS FOR THE SAUCE - IF NOT MAKING, CUT TIME DOWN TO ABOUT 45 MINUTES
1 lb hot or sweet italian sausage - cut into bite sized pieces
1 onion, sliced
8 baby portabella mushrooms, sliced
one each, red bell pepper and green bell pepper, sliced
sauce mine or yours
garlic bread - texas toast garlic bread works great for this
SAUCE
olive oil
1 onion, chopped
4 clove garlic, smashed
1 - 28 oz can, crushed tomatoes
1 small can, tomato paste
1/2 tsp salt & fresh ground pepper
1 1/2 tsp sugar
1/2 c red or masala wine
1 tsp each - dried oregano and dried basil
1/2 tsp garlic powder
fresh parsley
shredded parmesan- about 1/2 cup
water for thinning sauce as needed

Steps:

  • 1. For the sauce: In a large skillet, over medium heat, add a few tablespoons olive oil. Once oil is hot, add the onions and garlic. Cook until onions are tender, stirring occasionally. ( about 10 minutes.)
  • 2. Add the wine, tomatoes, paste, basil, sugar, oregano, salt and pepper. Bring to a boil, then simmer for 2 hours. Stir occasionally checking every so often to add some water when becomes too thick - about 1/4 cup at a time.
  • 3. Once the sauce has simmered for a few hours. Add the fresh parsley and parmesan. Stir and set aside. ( if you don't use a fresh sauce, and are using store bought, make sure you doctor it up with seasonings and especially garlic.
  • 4. Sausage: In a large skillet. Cook your pieces of sausage over medium heat, stirring frequently so as not to burn. I just shake the skillet occasionally. Once sausage is cooked through and browning. Drain on paper towel and set aside.
  • 5. Over medium heat,in the same skillet as you fried sausage, add about 2 tablespoons olive oil. Add the onion, peppers, mushrooms.( salt and pepper.) and minced garlic if not using a sauce. Saute until vegetables are tender, don't overcook as they will simmer for a bit in the sauce. ( if not using a sauce, cook veggies until completely tender.)
  • 6. Once veggies are cooked; add the sausage back to the pan. ( This can actually be served as shown, if you don't like sauce.)
  • 7. Measure about 2 cups prepared sauce, ( more depending how saucy you want them.) Cover and simmer for about 30 minutes.
  • 8. Turn on broiler or grill. Toast desired amount of garlic bread you will need, until golden.
  • 9. Top one half with sausage mixture...sprinkle with Parmesan and is feasting time. I've also used this sausage mixture to serve over pasta. Also, if you like it hotter, sprinkle with some red pepper flakes. This is great in hoagie rolls as well. Can also be kept warm in a crock pot or if making triple batches, have kept hot in a roaster. Serve this at your next picnic, it will be gone in no time. :)

I use to make a variation of this sandwich when I worked as a cook in high school. The original sandwich used polish sausage, I adapted the recipe to my taste and used hot links. Most people prefer the hot links.

6 French rolls
6 links hot sausage
6 slices mozzarella cheese
6 medium dill pickles
2 medium tomatoes

Steps:

  • Slice each sausage in four slices lengthwise.
  • Slice each French roll to open without cutting all the way through.
  • Top each roll with four slices of the sausage.
  • Place a slice of mozzarella cheese over the sausage.
  • Place the sandwich on a baking sheet.
  • Place into a preheated 350 degree oven. cook sandwiches until the cheese and bread browns.
  • Remove the sandwiches and top with thinly sliced pickles and tomatoes.
  • Enjoy, these are addictive.

We couldn't stop ourselves from humming the tune to "Third Rate Romance (Low Rent Rendezvous)" when we saw this 'cue joint/motel combo. It's not exactly the kind of place where you expect to find good eats, but the food at Barbara Ann's Bar-B-Que & Motel doesn't disappoint. While the joint is known especially for its Chicago smoked links with regular/hot mixed sauce, the rib tips, ribs, and chicken are customer favorites, too. Barbara Ann doesn't eat pork, so she added turkey links to the menu for herself and like-minded customers and those who want a change from chicken. Jumbo shrimp, catfish, and fries are also on the menu. This is a carryout only joint, so think ahead about where you'll eat your links feast from Barbara Ann's.When Delars Bracy decided to open a barbecue joint and motel on Chicago's South Side in 1967, he named it after his daughter, Barbara Ann Bracy. Delars settled in Chicago by way of Ruleville, Mississippi, his hometown, and Los Angeles, his college town. He started a family in Chicago after discovering that Bertie, his hometown sweetheart, was also in Chicago. The barbecue joint and motel came later, after Delars had finished a successful career as a criminal defense attorney. Some of his brothers who lived in Chicago helped Delars run the carryout joint in the early years. Now Barbara Ann is in charge, and-other than adding turkey links and chicken to the menu-she runs it just the way her dad and uncles ran it. 9 feet sausage casings (optional)
Apple cider vinegar (optional)
5 pounds pork butt, coarsely ground twice or medium once
2 tablespoons granulated garlic
1 to 2 tablespoons rubbed sage
1 tablespoon dried parsley
1 tablespoon sea salt
2 teaspoons fennel seeds, cracked
1 teaspoon dried oregano leaves
1 teaspoon dried thyme leaves
1 teaspoon black pepper
1/2 to 1 teaspoon cayenne
1 cup ice water, if needed
Barbecue sauce
Hot sauce (such as Louisiana Hot Sauce or Texas Pete)

Steps:

  • If you're using sausage casings, the day before you plan to stuff the sausage, rinse the casings under cold water inside and out. Prepare a solution of 1 cup water to 1 capful of cider vinegar. Soak the casings in the solution overnight.
  • In a large bowl, mix the pork with the garlic, sage, parsley, salt, fennel, oregano, thyme, pepper, and cayenne. Stir. If using casings, mix in the ice water if the meat mixture is too dry to stuff into the casings.
  • Stuff the sausage mixture into the casings or make into loaves, sticks, or patties. If you're making sticks, links, or logs, it helps to use plastic wrap to form the meat into the desired shape. Hang stuffed casings for at least an hour in a cool, dry place and then refrigerate at least overnight but for no more than 5 days before using. Sticks, links, or logs can be cooked immediately.
  • You can fry, smoke, or grill the sausage as desired.

6 hot link sausages, split lengthwise
Neutral oil, such as canola
2 large sweet onions, halved and sliced 1/4 inch thick
2 cloves garlic, minced
2 teaspoons smoked paprika
1 teaspoon cayenne pepper
1/4 teaspoon ground cloves
1 cup ketchup
2 teaspoons brown sugar
2 teaspoons cider vinegar
1 teaspoon lemon juice
Kosher salt and freshly ground black pepper
6 hot dog buns, split

Steps:

  • Preheat a large grill pan over high heat until almost smoking.
  • Put the hot links split-side down on one side of the grill pan and grill over medium-high heat until some char marks appear, 4 to 5 minutes per side.
  • Meanwhile, brush the other side of the grill pan with canola oil. Add the onions and grill, tossing with tongs occasionally, until softened and golden brown, 10 to 15 minutes.
  • Add the garlic, paprika, cayenne and cloves to the onions and cook, stirring constantly, 1 minute.
  • Reduce the heat to low. Add the ketchup, brown sugar, vinegar, lemon juice, 1/3 cup water, 1 teaspoon salt and 1/2 teaspoon pepper and cook, stirring frequently to make sure the bottom doesn't burn, until tender, 15 minutes.
  • Put the buns, split-side down, on the grill pan and grill until lightly toasted, 30 seconds per side.
  • Serve the hot links in the toasted buns, smothered with the barbecued onions.
