BREAD MACHINE WHOLE WHEAT ROLLS

Bread Machine Whole Wheat Rolls image

This easy recipe is from my Welbilt bread machine manual. The molasses and honey give the rolls a delicious, but not overly sweet taste. I usually cut this recipe in half but use the same amount of yeast. These rolls are always served for our Thanksgiving meal. Leftover (day old) rolls make perfect croutons or breadcrumbs.

Categories     Breads

Time 15m

Yield 12 rolls

Number Of Ingredients 7

1 1/4 cups water
2 tablespoons oil (read NOTE*)
2 tablespoons honey
2 tablespoons molasses
1 1/2 teaspoons salt
4 cups whole wheat flour
1 tablespoon active dry yeast

Steps:

  • Place the ingredients into the bread baking pan as recommended by your bread machine's manual. Use the DOUGH cycle setting.
  • To hand shape the roll, once the dough cycle is complete remove the dough to a lightly floured cutting board. Divide the dough into 12 equal pieces and shape into balls. Place the rolls into greased muffin tins, brush lightly with melted butter or butter substitute. Cover with a piece of wax paper and a clean cloth and let rise in a warm place for about 15-20 minutes.
  • Bake the rolls at 375°F for 15-20 minutes.
  • Refrigerate leftovers.
  • *NOTE: Here's a trick to measure the honey and molasses easily. By measuring the oil first, the oil coats the measuring utensil. Then when you measure out the honey and molasses the two ingredients slide off easily into the bread machine pan.

OATMEAL WHOLE WHEAT QUICK BREAD

Oatmeal Whole Wheat Quick Bread image

There's no yeast in this bread, so it's good for special diets. You may also use soy milk instead of regular milk if you wish. It's pretty dense, but great when fresh from the oven. Especially with butter and honey on cold mornings!

Yield Makes 16

Number Of Ingredients 12

3/4 cup whole milk
3/4 cup water
1/4 cup (1/2 stick) unsalted butter, room temperature
3 cups (or more) white whole wheat flour* or regular whole wheat flour
3/4 cup instant mashed potato flakes
1/4 cup nonfat dry milk powder
3 tablespoons sugar
2 1/4 teaspoons quick-rising active dry yeast (from two 1/4-ounce envelopes)
1 1/4 teaspoons salt
1 large egg yolk
1 large egg white, whisked with 1 tablespoon water (for glaze)
3 to 4 tablespoons quick-cooking oats

Steps:

  • Bring 3/4 cup whole milk and 3/4 cup water to simmer in small saucepan. Remove from heat. Add butter; stir until melted. Attach instant-read thermometer to inside of pan; let milk cool until thermometer registers 120°F to 130°F.
  • Meanwhile, combine 3 cups flour, potato flakes, dry milk powder, sugar, yeast, and salt in large bowl; whisk to blend. Add warm milk mixture. Stir to blend; mix in egg yolk. Knead mixture in bowl until dough comes together (dough will be sticky). Turn out onto floured work surface and knead until very smooth, elastic, and no longer sticky, adding more flour by tablespoonfuls as needed, about 8 minutes. Place dough in buttered bowl; turn to coat. Cover bowl with plastic wrap, then kitchen towel. Let rise in warm draft-free area until doubled in volume, about 1 to 1 1/2 hours.
  • Butter 13x9x2-inch metal baking pan or small baking sheet. Turn dough out onto floured work surface and divide in half. Knead each piece lightly until smooth. Cut each dough half into 8 equal pieces. Roll each piece into almost smooth ball. Arrange dough rounds in 4 lengthwise and 4 crosswise rows in prepared pan, spacing about 3/4 to 1 inch apart (rolls will not fill pan). Cover shaped rolls with kitchen towel and let rise in warm draft-free area until rolls have almost doubled in volume and have expanded enough to touch each other, about 1 hour 15 minutes.
  • Position rack in center of oven and preheat to 350°F. Gently brush rolls with egg-white glaze, then sprinkle generously with oats. Bake dinner rolls until light golden brown, about 28 minutes. Let rolls cool in pan 5 minutes, then pull rolls apart and cool on rack at least 15 minutes.
  • A LITTLE AHEAD: Can be made 8 hours ahead. Cool rolls completely, then wrap in foil and let stand at room temperature. Rewarm foil-wrapped rolls in 350°F oven about 10 minutes, if desired, or serve at room temperature.
  • FURTHER AHEAD: Can be made and then frozen up to 2 weeks ahead. Wrap in foil, then place in resealable plastic bag.
  • *White whole wheat flour is milled from 100 percent hard white wheat. It contains all of the germ and bran (and nutritional value) of regular whole wheat, but has a naturally lighter color and milder flavor. It's available at some supermarkets and specialty foods stores and from kingarthurflour.com.

WHOLE WHEAT POTATO BREAD (BREAD MACHINE)

Whole Wheat Potato Bread (Bread Machine) image

This is a true sandwich bread - soft and fluffy. No bricks here. For the potatoes, you can use leftover mashed potatoes or just cook a couple and mash with a fork. I like to make enough potatoes to last for a whole week of breadmaking. If you have it, use your leftover potato water in place of the regular water. You can bake this in the oven, just follow any standard bread-making procedure. I sometimes substitute 1/2 cup ground oatmeal or ground 7-grain flakes for 1/2 cup of the wheat flour. If you are grinding your own wheat, grind it coarsely for a less dense loaf.

Time 4h15m

Yield 1 loaf, 12-16 serving(s)

Number Of Ingredients 9

1 cup very warm water
3 tablespoons olive oil
3 tablespoons honey
1 egg
1 cup mashed potatoes
1 1/2 teaspoons salt
3 cups whole wheat flour
1 tablespoon vital wheat gluten (optional)
2 teaspoons yeast

Steps:

  • Add the ingredients to the breadmaker in the order given or per your machine's instructions. Do not mix the ingredients, just layer them. Make a depression in the top of the flour to hold the yeast.
  • Depending on how wet your mashed potatoes are, the recipe may take up to 1/8 cup less water. So, watch it carefully after it has been mixing for awhile and add more flour or water as needed. It should be a soft, formed ball that is not sticky.
  • Use the whole wheat setting on your bread machine.
  • Enjoy!

  • To make the dough for whole wheat bread rolls recipe | eggless 100% whole wheat dinner rolls | whole wheat dinner rolls | healthy Indian whole wheat bread rolls | in a small bowl, take yeast. We are using instant dry yeast for the French bread rolls. It helps make bread rolls soft and tenderize the dough by absorbing some of the water and slowing down the formation of gluten strands. It feeds the yeast, resulting in a faster rise. It aids in the browning of the crust via caramelization. It acts as a preservative, keeping the bread rolls fresher for longer It does have some effect on the flavor of whole wheat bread rolls. Add the sugar. Instead of sugar, you can use honey or maple syrup to activate the yeast. Sugar has multiple roles in bread making : Add 2 tbsp of warm water in the bowl. Before pouring the water, dip your finger in water to check if it's lukewarm or no. Water that's too hot can damage or kill the yeast. Mix well. Cover it with a lid and keep aside for 10 minutes. The best way to ensure that your bread rolls are equal in size is to weigh them. Weigh the entire batch of dough using a kitchen scale and divide that weight by 8. This will give you your target weight for each bread roll. Take a portion of dough and stretch the top of the dough while pinching and sealing the bottom. Roll each portion into a ball between your palm and kitchen countertop till smooth. You can shape this dough in many different ways including knotted rolls, twisted rolls or even hot dog buns. Place it on the greased baking tray. Space the rolls about ½ to 1 inch apart so the bread rolls do not stick to each other after rising. Cover the bread rolls with a damp muslin cloth or plastic sheet fully but ensure it does not press them down and keep in a warm place for 45 minutes or till they rise well. // Call display() to register the slot as ready // and refresh() to fetch an ad. var adslot6 = googletag.defineSlot('/1035919/Rcp_Step_BlockAd', [336, 280], "adslot6").setTargeting("test", "infinitescroll").addService(googletag.pubads()); googletag.cmd.push(function () { googletag.display('div-gpt-ad-1548320692495-0'); googletag.pubads().refresh([adslot6]); }); // Call display() to register the slot as ready // and refresh() to fetch an ad. var adslot7 = googletag.defineSlot('/1035919/Rcp_Step_BlockAd', [336, 280], "adslot7").setTargeting("test", "infinitescroll").addService(googletag.pubads()); googletag.cmd.push(function () { googletag.display('div-gpt-ad-1548320692495-0'); googletag.pubads().refresh([adslot7]); }); After 45 minutes, the whole wheat bread rolls | eggless 100% whole wheat dinner rolls | whole wheat dinner rolls | healthy Indian whole wheat bread rolls | will have risen. • Q. My Bread buns were not soft even after my dough raised perfectly, what do i do? Make sure you apply melted butter immediately after the buns come out of the oven. Also make sure you knead the dough well. Incomplete kneading can also make the buns hard. Q. My yeast did not froth. What do i do? Yeast needs warmth and food to activate. Make sure you use lukewarm water and sugar to activate it. Hot water will kill the yeast.

WHOLE WHEAT POTATO BREAD OR ROLLS

Whole Wheat Potato Bread or Rolls image

This makes great rolls and scones!!! I lost this recipe for over a year and could not find one that was as light. Now that it is on the web I won't ever loose it again!! 1 tablespoon salt
4 tablespoons honey
4 tablespoons oil
2 tablespoons yeast, disolved in

WHOLE GRAIN POTATO DINNER ROLLS

Whole Grain Potato Dinner Rolls image

These dinner rolls are soft and flavorful with whole grain wheat and mashed potatoes. Incorporate them into your Thanksgiving prep or leftover use, or make them any time of year.

Provided by Melissa Johnson

Categories     Recipes

Time 48m

Yield 15 rolls

Number Of Ingredients 16

Dry Ingredients
300g whole grain home-milled Turkey Red wheat berries or whole grain turkey red wheat flour (2 1/4 cups flour)
100g whole grain home-milled Kamut wheat berries or whole grain Kamut wheat flour (3/4 cup flour)
8g salt (1 1/2 tsp)
7g instant dry yeast (2 1/4 tsp)
Wet Ingredients
236g warmed milk (1 cup)
100g mashed potatoes (1/2 cup)
48g honey (2 Tbsp)
43g unsalted butter or lard (3 Tbsp)
Optional Toppings
Milk to brush the rolls at the start and end of the final proof
Chopped rosemary and sesame seeds to decorate the rolls before baking
Butter to brush over the top of the rolls when they come out of the oven
Sourdough Version
Instead of instant yeast, use 80g ripe sourdough starter.

Steps:

  • Prep and Mixing
  • Make sure you have at least 1/2 cup of mashed potatoes, whether leftover, made just for this bread, or pulled from a dish you plan to serve later.
  • Whisk the dry ingredients (flour, yeast, salt) in a bowl.
  • Heat the milk so it is warm enough to melt the butter. Add the honey, butter and mashed potatoes to the milk, allowing mixture to cool to under 95F.
  • Combine the dry and wet ingredients until fully incorporated, and then knead by hand for 3-4 minutes. If you had thin mashed potatoes or thirsty flour, and your dough is stiff or sticky-wet, adjust the hydration with additional milk or flour.
  • Place the dough in a lightly oiled bowl and cover it.
  • First Rise
  • Let the dough rise until it is about doubled, about 1 1/2 hours. (See the end of the instructions for sourdough timing.)
  • Dividing and Shaping
  • Divide the dough into 14 pieces if you're using two 9" round cakes pans, or 15 pieces if your using a 9x13" rectangular pan.
  • Roll the dough into balls and place them in your lightly greased pan(s).
  • Lightly brush the rolls with milk and cover.
  • Final Proof and Baking
  • Let the rolls rise for about 1 1/2 hours.
  • Preheat your oven for about 20 minutes at 375F.
  • Brush your proofed rolls with milk again and sprinkle them with sesame seeds and crushed rosemary if you want.
  • Bake the rolls for 18-20 minutes.
  • Remove the pan(s) from the oven and brush the rolls with butter to keep the outside soft.
  • Serving and Reheating
  • Serve after they have cooled 10 minutes. If you are serving later, let them cool completely, then cover them. Reheat the rolls just before serving by warming them in the oven for a few minutes or microwaved on a plate for a few seconds.
  • Sourdough Version
  • The bulk fermentation could be anywhere from 8-15 hours depending on your room temperature. At 67F, my dough took 12 hours.
  • You can expect your final proof to be about 3-6 hours. In a warm (mid-80s) lit oven, my dough took 3.5 hours, but at cooler temps, you may need about twice that time.
  • (The dough expansion shown in the the photo gallery during both rises applies to both the yeast and sourdough versions.)

  • Select the DOUGH cycle. After 10 minutes, raise the lid and make sure the dough is the correct consistency. This is best described as dough that sticks to the side of the pan, then pulls away. Add additional flour or water, if needed.
  • When the dough has completed the DOUGH cycle and risen to double its original size, remove dough to a floured work surface.
  • Divide the dough into 16 equal pieces. See video for instructions for rolling into balls. Arrange into two 8 or 9-inch pans. Cover loosely and set in a warm place until rolls almost double in size.

  • In a large mixing bowl whisk together the whole wheat flour, potato flour, salt, and instant yeast (see note if using active dry yeast). Add the coconut oil and rub into the flour with your hands until you have a sandy texture, some small clumps are okay. Add the warm non-dairy milk and maple syrup and mix with a wooden spoon until combined.
  • If kneading by hand: Turn the dough onto a lightly floured counter and knead for 3 minutes. Add a dusting of flour as needed to prevent the dough from sticking too much to the counter or your hands. Let the dough rest for 5 minutes. Then, knead an additional 4 minutes until you have a tacky but smooth dough (note: whole wheat dough does not get as smooth as your white flour doughs).
  • If kneading with a stand mixer: Mix on low speed using the dough hook for 3 minutes. Turn the mixer off and let the dough rest for 5 minutes. Mix again for 3 minutes with the dough hook on low speed, then turn the dough onto a lightly floured counter and knead by hand for 1 minute. Make any last adjustments with flour to get a supple but tacky dough.
  • Drizzle some oil into a large bowl and turn the ball of dough around in the oil to coat. Cover with plastic wrap and set aside to approximately double in size, about 1 1/2-2 hours.
