QUICK & EASY APPLE CRISP



Quick & Easy Apple Crisp image

A traditional autumn dessert that's delicious served with vanilla ice cream. I've often made this recipe "diabetic-friendly" without sacrificing taste or quality by using Splenda No-Calorie Sweetener. Directions are included.

6 -8 tart apples, peeled, cored, and sliced (such as Granny Smith)
2 -3 teaspoons lemon juice
1/4 cup granulated sugar
1 teaspoon cinnamon
1 tablespoon butter
1 cup flour
1 cup brown sugar
1/2 cup butter
vanilla ice cream or fresh whipped cream

Steps:

  • Toss apples with lemon juice, sugar, and cinnamon; turn into an 8x8" baking pan that has been lightly coated with no-stick cooking spray; dot with butter.
  • Cut together flour, brown sugar, and butter until crumbly; sprinkle evenly over apples.
  • Bake at 350° for 30-40 minutes until apples are tender; serve warm with vanilla ice cream or fresh whipped cream.
  • VARIATION: This recipe can be made diabetic-friendly by substituting Splenda for the granulated sugar and substituting 1/2 cup Splenda for 1/2 cup of the brown sugar - the remaining 1/2 cup of brown sugar is still used.

I make this dessert a lot in the fall, and wasn't even going to post it until a friend called wanting to know how I make apple crisp, as she had just bought a big bag of apples. I honestly thought everyone could throw together an apple crisp, as it's a very forgiving recipe when it comes to measurements; it's easy to wing it. But, for everyone who wants to know or wants a recipe as a starting-point, here's how I make this classic, traditional autumn dessert. Sometimes I even add a handful of raisins in with the apples; depends on my mood. This is very easy to make; the only part that might give you any grief is peeling all those apples.

2/3 cup all-purpose flour
2/3 cup rolled oats
1/3 cup packed brown sugar
1/2 teaspoon pumpkin pie spice (see directions)
1/4 cup butter or 1/4 cup margarine, melted
8 cups sliced and peeled apples (8-10 apples, depending on size)
1/4 cup white sugar
1/4 cup orange juice
1 tablespoon lemon juice

Steps:

  • First, make topping by combining flour, oats, brown sugar and spice in a small bowl; drizzle melted butter over and then toss mixture together with a fork.
  • Set aside.
  • I am a big fan of the pumpkin-pie spice sold by Penzeys, which contains cinnamon, allspice, nutmeg, ginger, mace and cloves, but you can use any spicing you wish for this--traditional would be to use only cinnamon.
  • If your apples are at all tart, you may want to increase the brown sugar in the topping, as well as increase the white sugar mixed in with the apples; it's your call.
  • As for the apples to use, I make this dessert a lot in the autumn when I always have lots of fresh macintosh apples around; it's also very good when made with northern spys.
  • When topping is made and set aside, preheat oven to 375F and get out an 8-inch square baking pan.
  • Peel, core and slice apples to get your 8 cups and place those directly in the baking pan.
  • Sprinkle white sugar and juices over, and toss well.
  • Sprinkle topping over entire surface of apples.
  • Bake in preheated oven for approximately 40 minutes, or until bubbly and the apples are tender (poke with a fork).
  • Let cool for a bit before eating; it's good warm or cool.
  • I serve it warm, with vanilla ice cream.

7 firm apples (Best for baking ( Cortland, Macoun, Granny Smith, Honeycrisp, Empire or MacIntosh)
1 teaspoon grated lemon zest
2 tablespoons fresh lemon juice
1/4 cup granulated sugar
1/4 cup brown sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon clove
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1 cup light brown sugar, lightly packed
1/2 teaspoon kosher salt
1 cup old-fashioned oatmeal
1 cup cold unsalted butter, diced

Steps:

  • 1. Preheat the oven to 350 degrees F.
  • 2.Peel, core, and slice apples.
  • 3.Place the fruit in a large bowl and add the zest, juice, sugar, flour, and spices.
  • 4. Pour into a 9 by 12 by 2-inch baking dish.
  • For the topping:.
  • 1.Combine the flour, sugars, salt, oatmeal, and butter in the bowl of an electric mixer fitted with the paddle attachment.
  • 2.Mix on low speed for 1 minute, until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.
  • 3.Place the baking dish on a sheet pan and bake for 50 minutes to 1 hour, until the top is brown and the fruit is bubbly. Serve and enjoy!

4 ½ cups butternut squash - peeled, seeded, and cut into 3/4-inch chunks
⅔ cup packed brown sugar
½ cup all-purpose flour
2 eggs
2 teaspoons milk
2 teaspoons vanilla extract
2 teaspoons ground cinnamon
2 teaspoons ground nutmeg
½ teaspoon ground cloves
4 large Granny Smith apple - peeled, cored and chopped
2 large carrots, peeled and shredded
1 cup raisins
2 cups rolled oats
1 cup wheat bran
1 cup packed brown sugar
½ cup whole wheat flour
1 tablespoon ground cinnamon
½ cup melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • Pour about 1 inch of water into the bottom of a pan. Place the squash into a steamer basket fitted into the pan. Bring to a boil, then reduce heat to medium, cover, and steam the squash until tender and easily pierced with a fork, about 15 minutes. Cool.
  • Place the squash, 2/3 cup brown sugar, 1/2 cup all-purpose flour, eggs, milk, vanilla, 2 teaspoons cinnamon, nutmeg, and cloves in the bowl of a food processor. Pulse until the mixture is smooth. Pour into a large mixing bowl. Stir in the apples, carrots, and raisins until evenly blended. Spread the mixture over the bottom of the prepared baking dish.
  • Mix together the rolled oats, wheat bran, 1 cup brown sugar, 1/2 cup whole wheat flour, and 1 tablespoon cinnamon with the melted butter in a bowl until crumbly. Spoon the topping over the apple-squash mixture.
  • Bake in preheated oven until top is golden brown and the apples are tender, 30 to 45 minutes.

2 apples, cored and diced
2 pears, cored and diced
¼ cup raisins
¼ cup chia seeds
¼ cup apple cider
2 tablespoons maple syrup
½ cup quick-cooking oats
½ cup wheat germ
½ cup brown sugar
½ cup ground flax seed
¼ cup whole wheat flour
2 teaspoons pumpkin pie spice
1 teaspoon ground cinnamon
5 tablespoons butter, softened

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Prepare a glass baking dish with cooking spray.
  • Mix apples, pears, raisins, and chia seeds in the baking dish. Drizzle apple cider and maple syrup over the fruit mixture and stir gently to coat.
  • Mix oats, wheat germ, brown sugar, flax seed, flour, pumpkin pie spice, and cinnamon together in a bowl. Mash butter into the oats mixture with a fork until the mixture is uniform in texture; spread atop the fruit mixture. Cover the dish loosely with aluminum foil.
  • Bake in the preheated oven until the top is browned and crisp, 35 to 40 minutes.

5 -6 apples, cored and peeled
1 cup oats (quick-cooking or other)
4 tablespoons shortening
1 tablespoon flour
2 tablespoons honey
2 tablespoons maple syrup (i really mean maple cream, but it is not recognizing ingredient)
1 teaspoon cinnamon (optional)

Steps:

  • Preheat oven to 350°F Place apples in a greased 9x9 pan. Combine oats, shortening, and flour in a bowl. Cut with pastry cutter until mixture resembles coarse crumbs. Add honey and maple cream. Top apples with oat mixture. Bake until browned and bubbly, 25-35 minutes. Serve warm with a latté, instead of ice cream.
