Steps:
- Bring a large pot of salted water to a boil. Add the penne and cook as the label directs. Reserve 1/2 cup cooking water, then drain the pasta. Empty the tomatoes into a bowl and crush with your hands.
- Meanwhile, melt the butter in a large skillet over medium heat. Add the shallots and cook, stirring occasionally, until slightly softened, about 3 minutes. Add the garlic and red pepper flakes and cook, stirring, 30 seconds. Remove from the heat and stir in the vodka, tomatoes and salt to taste. Return the skillet to medium heat and simmer, stirring often, until the alcohol cooks off, about 7 minutes. Stir in the heavy cream and cook until the sauce thickens slightly, about 3 minutes. Stir in the parmesan and basil.
- Add the pasta to the sauce and toss to combine, adding some of the reserved cooking water to loosen, if needed. Season with salt. Serve topped with more parmesan and basil.
PENNE WITH SPICY VODKA TOMATO CREAM SAUCE
A nice change from your typical tomato sauce! If you're worried about the alcohol, don't be! It cooks off and cannot be tasted. It simply helps to enhance the flavors.

- In the same skillet, add the garlic and cook until aromatic, about 30 seconds. Add the tomatoes (and juices), clam juice, cream, 1/2 cup basil, 2 teaspoons salt and 1/2 teaspoon pepper. - Add the shrimp and cook, stirring occasionally, until just cooked through, about 3 minutes. Add the lobster and bacon. Simmer until warmed through, 1 to 2 minutes.
- Pour the tomato mixture over the cooked pasta and toss until coated. Garnish with the remaining 1/2 cup basil and season with salt and pepper.
WHOLE WHEAT PASTA IN RED SAUCE
Whole wheat pasta is a healthier option over pasta made from refined flour. Nor only does it provide all complex carbohydrates, but also provides long lasting energy levels. Being loaded with fibre, improves overall digestive health, improves functional capacity and also stronger bones and immunity. Additional to its benefits, is the presence of the superherbs basil and parsley. These anti-inflammatory and anti-microbial foods, are high not only in vitamin C and vitamin K but also iron and calcium. The presence of these ingredients makes the whole wheat pasta in red sauce more flavorful and energizing.

Nutrition Facts :
NO CREAM-NO CRY PENNE ALLA VODKA
The dirty little secret about Penne alla Vodka is not the vodka but the hefty amount of heavy cream. Vodka is colorless, odorless, and without much flavor-not really attributes of a superstar ingredient. It's the combination of cream and tomato sauce that gives this dish its signature flavor. The traditional cream is swapped here for low-fat Greek yogurt.

Steps:
- Bring a large pot of lightly salted water to a boil. Add the pasta and cook according to the package directions, about 9 minutes; drain.
- While the pasta is cooking, bring the marinara sauce and crushed red pepper to a simmer in a large nonstick sauté pan over medium heat. Cook the sauce, stirring it occasionally with a heat-resistant rubber spatula, until it is slightly thickened, about 5 minutes. Remove the sauté pan from the heat.
- Stir about 1/2 cup of the marinara sauce into the yogurt until smooth (this tempers it and prevents the yogurt from curdling). Then whisk the yogurt mixture back into the marinara sauce.
- In a large serving bowl, toss the sauce with the drained penne and the basil. Season with salt and pepper to taste. Sprinkle the cheese on top, and serve.
- Whole-wheat pasta has a dense texture that makes it a little tougher than regular pasta. Some people like that chewiness; some don't. If you're in the latter category, overcook it a bit. Toward the end of the cooking time, keep testing it until it's as tender as you like it.

- In a small bowl, whisk the lemon juice, oil, garlic, red pepper flakes, and rosemary. Pour the marinade into a large resealable plastic bag and add the chicken. Press the air from the bag, seal, and turn it a few times to coat the chicken in the marinade. Refrigerate for 30 minutes and up to 8 hours.
- In a dutch oven or a wide, deep skillet, heat 1 teaspoon of olive oil over medium-high heat. Remove the chicken breast tenderloins from the bag, discarding the marinade, and add them to the pan. Cook, turning to brown on all sides, until no longer pink and cooked through, about 10 minutes. Transfer the chicken to a plate.
- Add 1 ½ cups of the broth to the pan, followed by the penne, vodka sauce, cherry tomatoes, garlic, and shallot. Bring to a boil. Cook, reducing the heat if necessary to keep the pan at a simmer, and stir frequently, taking care to incorporate the sauce that begins to form around the edges of the pan (it will thicken the quickest), until the penne has absorbed most of the liquid and become tender. *If you notice that the pan is becoming dry at any time or that the penne needs more moisture, add more broth ¼ cup at a time, stirring after each addition.
- Once the penne is tender and a thick sauce is coating each noodle, turn off the heat, return the chicken to the pan, and gently toss. Stir in the basil. Serve with grated Parmesan cheese.
