My Mom used to make these for us during tomato season in the summertime (way back in the 70's). Even though the combination of ingredients sounds weird, the flavors really blend well into an awesome taste sensation that I am totally addicted to, even after all these years. I LOVE this stuff! (Unbelievably quick and easy, too.) :)

Number Of Ingredients 5

2 slices bread (I like white, but my mother preferred sourdough)
2 slices braunschweiger liver sausage, sliced from the tube in 1/2-inch slices (I prefer Oscar Mayer)
2 slices tomatoes
2 slices Velveeta cheese
2 tablespoons Hellmann's mayonnaise

Steps:

  • Toast bread slices, and put them on an ungreased baking sheet.
  • Spread 1 Tbsp mayonnaise on each toasted piece of bread.
  • Place 1 Braunschweiger slice over the mayonnaise.
  • Place 1 slice of tomato on top of Braunschweiger slices.
  • Place 1 slice of cheese on top of tomato.
  • Put baking sheet under a preheated broiler and broil until cheese gets bubbly (3-5 minutes).

1/4 cup KRAFT Zesty Italian Dressing
1/2 large red onion, thinly sliced
1/2 lb. lean ground beef, shaped into 2 patties
2 oz. VELVEETA, cut into 2 slices
2 slices marble rye bread, toasted

Steps:

  • Heat dressing in large nonstick skillet on medium-high heat. Add onions; cook 2 min. Stir onions and move to one side of skillet.
  • Add patties to other side of skillet; cook on medium heat 10 min. or until burgers are done (160ºF), flipping burgers and stirring onions after 5 min.
  • Top burgers with VELVEETA; cover. Cook 1 to 1-1/2 min. or until VELVEETA is melted; place on toast slices. Top with onions.

2 slices of cracked whole wheat bread
mayonnaise, for spreading
2 tablespoons olive oil
1 cup sliced mushrooms
1/2 cup coarsely shredded zucchini
1/2 cup onion finely sliced onion
1 clove garlic, minced
salt & freshly ground black pepper
1/4 cup finely shredded monterey jack cheese
1/4 cup finely shredded cheddar cheese
4 slices tomatoes, ½ inch-thick
1 dash fresh ground pepper
finely shredded lettuce or fresh bean sprout, as desired

Steps:

  • Preheat the broiler.
  • Arrange the bread slices in a single layer on a baking sheet.
  • Broil 4 to 5 inches from the heat source for about 2 minutes per side, or until lightly toasted.
  • (Or toast the bread in a toaster.) Spread 1 side of each slice with mayonnaise.
  • To make the topping: Heat the olive oil in a large nonstick skillet over medium-high heat; add the mushrooms, zucchini, onion, and garlic.
  • Cook, stirring occasionally, until tender, about 5 minutes.
  • Remove from the heat; stir in the salt and pepper.
  • Taste and adjust the seasoning.
  • Combine the cheeses in a small bowl.
  • Top each bread slice with 2 tomato slices, a sprinkling of pepper, and half of the sautéed vegetables, lettuce or bean sprouts, and the cheese mixture.
  • Place the sandwiches on the baking sheet.
  • Broil for about 2 minutes, or until the cheese is melted.
  • Enjoy!

This is another one of my little sandwich favorites. I haven't made it for a long time and its making me hungry!

1 baguette, split in half lengthwise with some of the bread removed
1/4 cup blackberry preserves
1 lb black forest ham, sliced thinly
1/2 lb brie cheese, rind removed and cut into strips
salt
pepper

Steps:

  • Spread Blackberry Preserves in each of the bread pieces. Layer ham and Brie on top. Season lightly with some salt and pepper.
  • Broil for about 4-5 minutes until cheese is melted.
  • Cut into pieces and serve.

Another open faced sandwich. The idea for this came from Bangers and Mash, one of DH favorite meals. Its too hot to make it durring the summer tho, so I thought this would cure the craving, at least until autumn. I got 6 melts out of this but felt that I stretched the sausage meat too far so I am suggesting that this makes 4. If your bread is small or if you need to stretch it, you can get 6 out of these. I used Jimmy Dean sausage, the kind you get in the tubular shaped package near the breakfast meats since I was shopping on a budget, but use whatever type you like best. I made these with Dijon mustard but we also thought Colmans mustard would be a nice touch. Use your favorite or whatever you have on hand. I served these with fries.

1 tablespoon olive oil
1 large onion
2 tablespoons red wine vinegar
1 tablespoon brown sugar
1 lb ground sausage
4 slices rye bread, 1/4 inch thick
Dijon mustard, to taste
4 slices swiss cheese (to taste)

Steps:

  • Peel and slice onion into thin rounds (or half rounds)and cook in olive oil over medium heat, stirring frequently, until they are very soft.
  • Meanwhile, form sausage meat into 4 thin patties. Try to form them so that they are slightly bigger than the bread slices since they will shrink when you cook them.
  • When the onions are soft add the brown sugar and the vinegar. Stir and cook until the onions are browned.
  • Fry sausage patties in a pan (use a little extra oil if your pan isn't non-stick) for about 3 to 5 minutes per side until cooked through or to your desired doneness (we like them very brown).
  • Meanwhile, spread dijon mustard on each slice of bread in desired amounts.
  • Top each slice of bread with a cooked sausage patty, then the onions, then the cheese.
  • Place under the broiler (set to low so it won't cook too fast or burn) until cheese is melted and bubbling.
