8 ounces chopped cooked turkey breast
1/4 cup celery (sliced)
3 tablespoons Hellman's Light mayonnaise
2 tablespoons dried cranberries
1 tablespoon red onion (chopped)
4 slices thin sliced multi-grain bread
4 ounces light Havarti cheese (sliced)
Reynolds Wrap non-stick foil

Steps:

  • Heat broiler over high, with rack in the second position about 6 inches from the flame. Line a half-sheet pan with Reynolds non-stick foil.
  • In a medium bowl combine the turkey with celery, mayonnaise, cranberries and red onion, and stir until combined.
  • Arrange the toasted bread on a baking sheet and divide the turkey salad evenly among slices, then top each with 1 ounce of cheese.
  • Broil about 6 inches from the flame until the cheese is golden and bubbling, about 2 to 3 minutes, keeping a close eye on it to avoid burning.

SWEET AND SOUR TURKEY



Sweet and Sour Turkey image

Leftover turkey in a light, crispy coating, tossed together with a classic sweet and sour sauce, plus crunchy peppers and onions.

400 g (14 oz) leftover cooked turkey (shredded or chopped into cubes/pieces)
2 tbsp cornflour (cornstarch)
½ tsp salt
½ tsp black pepper
3 tbsp vegetable oil
1 tbsp vegetable oil
1 large onion - peeled and chopped into large chunks
1 red pepper - chopped into 1 inch pieces
1 green pepper - chopped into 1 inch pieces
2 cloves of garlic - peeled and chopped/crushed
1 tsp minced ginger
150 ml (⅔ cup) tomato ketchup
2 tbsp malt vinegar
6 tbsp dark brown muscovado sugar
425 g (15 oz) canned pineapple chunks in juice
Boiled or fried rice
1 tsp sesame seeds

Steps:

  • Place the turkey in a bowl with the cornflour, salt and pepper and toss together to coat.
  • Heat the oil over a high heat in a wok or large frying pan.
  • Add the turkey, and cook for 5-6 minutes, turning occasionally until the turkey is golden and crispy.
  • Remove the turkey from the wok using a slotted spoon and place in a bowl lined with kitchen paper to drain off any excess oil.
  • Now to make the sauce. Add 1 tbsp of vegetable oil to the wok (or frying pan).
  • Heat it up on a medium-to-high heat and add in the onions. Cook for 3 minutes, stirring every now and then, until the onions start to go translucent.
  • Add the peppers and cook for a further minute.
  • Add in the garlic and ginger and cook for another minute.
  • Add the tomato ketchup, vinegar, dark brown sugar, and the tinned pineapple (including the juice) and stir. Bring to the boil, and then turn down the heat and let it bubble, stirring every so often, until slightly thickened (about 2-3 minutes).
  • Add the crispy turkey back to the wok with the sauce and cook for a further 2 minutes, stirring a couple of times to coat the turkey in the sauce.
  • Serve with boiled or fried rice and a sprinkling of sesame seeds.

2 medium onions, sliced
4 tablespoons butter or 4 tablespoons margarine, divided
4 tablespoons barbecue sauce
8 slices sourdough bread
8 slices monterey jack cheese
8 slices Canadian bacon
8 slices cooked turkey
dill pickle slices

Steps:

  • In a large skillet, saute onions in 1 tablespoon of butter until tender; remove and set aside.
  • Spread barbecue sauce on four slices of bread.
  • Layer each with one slice of cheese, 2 slices of Canadian bacon and turkey, pickles, onions, and top of with another slice of cheese.
  • Cover with remaining slices of bread.
  • In the same skillet over medium-low heat, melt remaining butter as needed.
  • Cook sandwiches on both sides until golden brown and cheese is melted.

3 Tbsp. slivered almonds
1/4 cup raisins
3 Tbsp. apple cider vinegar
2 Tbsp. sugar
1/4 tsp salt
1/8 tsp ground black pepper
2 med green bell peppers, cut in quarters and seeded
2 med red bell peppers, cut in quarters and seeded
1 med red onion, cut into 6 wedges
1 Tbsp. olive oil
2 19 oz pkgs Johnsonville® Mild Italian Sausages (19 oz each)
3 Tbsp. Italian salad dressing
1 roll prepared polenta, sliced into 1/2 inch rounds (10-12 slices)

Steps:

  • In a small non-stick skillet cook and stir almonds for 1-2 minutes, or until golden. Stir in raisins and remove from heat. Let stand for 1 minute. Carefully stir in vinegar, sugar, salt and black pepper. Return to medium-low heat, cook and stir just until sugar is dissolved, 2 minutes. Set aside. In a large bowl combine red and green peppers and onion wedges. Drizzle with oil; toss gently to coat. Prepare grill to medium-high heat. Grill sausages and vegetables uncovered for 10-15 minutes until sausages are firm, no longer pink inside and juices run clear (180 degrees F),and vegetables are tender, turning at least once halfway through grilling. While sausages and vegetables are grilling, brush slices of polenta with Italian dressing and grill about 2 minutes on each side allowing enough time for the slices to become toasted and golden. Return the grilled vegetables to the large bowl, add the almond mixture; toss gently to coat. Arrange the sausages on a large platter with the grilled polenta and the sweet and sour peppers.

2 pounds monkfish tail, cut in 1-inch chunks
Salt and pepper
2 bay leaves
1/2 stalk celery plus 6 stalks celery, cut into 1-inch pieces
1/2 small onion, cut in pieces, plus 3 medium onions, sliced
1/4 cup vegetable oil, as needed for sauteing vegetables
2 medium green peppers, seeded and cut into 1-inch pieces
2 medium sweet red peppers, seeded and cut into 1-inch pieces
One 6-ounce can tomato paste
1 1/2 cups cider vinegar
2 tablespoons sugar
1 1/2 cups green Italian olives, pitted and cut in pieces
4 cups water, for boiling

Steps:

  • Season monkfish chunks with salt. In a medium to large pot of water boil bay leaves, 1/2 stalk celery, and small onion for 5 minutes. Add monkfish and cook for an additional 10 minutes. Drain and place monkfish in large bowl; set aside. Discard celery, onion, and bay leaves.
  • In large frying pan, saute the celery pieces in vegetable oil until tender; add to fish. Saute red and green pepper pieces, add to fish. Saute the 3 sliced onions for about 5 minutes; add the tomato paste, alternating with the vinegar. Mix well; add sugar and olive pieces and cook for an additional 10 minutes, stirring frequently. Season with salt and pepper. Add vegetable mixture to monkfish and refrigerate. Best when served chilled.
