Steps:
- Heat broiler over high, with rack in the second position about 6 inches from the flame. Line a half-sheet pan with Reynolds non-stick foil.
- In a medium bowl combine the turkey with celery, mayonnaise, cranberries and red onion, and stir until combined.
- Arrange the toasted bread on a baking sheet and divide the turkey salad evenly among slices, then top each with 1 ounce of cheese.
- Broil about 6 inches from the flame until the cheese is golden and bubbling, about 2 to 3 minutes, keeping a close eye on it to avoid burning.

SWEET AND SOUR TURKEY

Steps:
- Place the turkey in a bowl with the cornflour, salt and pepper and toss together to coat.
- Heat the oil over a high heat in a wok or large frying pan.
- Add the turkey, and cook for 5-6 minutes, turning occasionally until the turkey is golden and crispy.
- Remove the turkey from the wok using a slotted spoon and place in a bowl lined with kitchen paper to drain off any excess oil.
- Now to make the sauce. Add 1 tbsp of vegetable oil to the wok (or frying pan).
- Heat it up on a medium-to-high heat and add in the onions. Cook for 3 minutes, stirring every now and then, until the onions start to go translucent.
- Add the peppers and cook for a further minute.
- Add in the garlic and ginger and cook for another minute.
- Add the tomato ketchup, vinegar, dark brown sugar, and the tinned pineapple (including the juice) and stir. Bring to the boil, and then turn down the heat and let it bubble, stirring every so often, until slightly thickened (about 2-3 minutes).
- Add the crispy turkey back to the wok with the sauce and cook for a further 2 minutes, stirring a couple of times to coat the turkey in the sauce.
- Serve with boiled or fried rice and a sprinkling of sesame seeds.

- In a small non-stick skillet cook and stir almonds for 1-2 minutes, or until golden. Stir in raisins and remove from heat. Let stand for 1 minute. In a large bowl combine red and green peppers and onion wedges. Drizzle with oil; toss gently to coat. Prepare grill to medium-high heat. - Season monkfish chunks with salt. In a medium to large pot of water boil bay leaves, 1/2 stalk celery, and small onion for 5 minutes. Add monkfish and cook for an additional 10 minutes. Drain and place monkfish in large bowl; set aside. Discard celery, onion, and bay leaves.
- In large frying pan, saute the celery pieces in vegetable oil until tender; add to fish. Saute red and green pepper pieces, add to fish. Saute the 3 sliced onions for about 5 minutes; add the tomato paste, alternating with the vinegar. Mix well; add sugar and olive pieces and cook for an additional 10 minutes, stirring frequently. Season with salt and pepper. Add vegetable mixture to monkfish and refrigerate. Best when served chilled.
