These are great and simple Rolls from Southern Living Magazine. I do not claim to be a baker at all, but if I can make these anyone can and I always get rave reviews. The dough can also be used for yummy cinnamon rolls as well.Update: At one point I changed the recipe to canola oil instead of butter and added half whole wheat. Then a friend of mine made it and she substituted applesauce for the butter and she said it turned out great. I made it tonight with the applesauce and she was spot on!

Number Of Ingredients 9

2 cups water
1 cup quick-cooking oats
3 tablespoons margarine, canola oil or 3 tablespoons applesauce
4 1/2 teaspoons yeast
1/2 cup water
1 tablespoon sugar
4 cups all-purpose flour
1 1/2 teaspoons salt
1/3 cup packed brown sugar

Steps:

  • Bring 2 cups water to a boil in a medium saucepan; stir in oats and butter.
  • Boil, stirring constantly, 1 minute.
  • Remove from heat; let cool to 110 degrees.
  • Stir together yeast, ½ cup warm water, and 1 T.
  • sugar in a 2-cup measuring cup; let stand 5 minutes.
  • Beat oat mixture, yeast mixture, flour, salt, and brown sugar at medium speed with an electric mixer until smooth.
  • Turn dough out onto a floured surface; knead till smooth and elastic (about 5 minutes) or knead in bread mixer with dough hook 2 to 3 minutes.
  • Place in a well-greased bowl, turning to grease top.
  • Cover and let rise in warm place (85 degrees) free from drafts, 1 hour or until double in bulk.
  • Punch down dough and divide in half; shape each portion into 8 balls. (Each pan will hold 8 rolls and you use 2 lightly greased round cake pans).
  • Place evenly into 2 lightly greased round cake pans.
  • Cover and let rise in warm place free from drafts, 30 minutes or until doubled in bulk.
  • Bake at 375 for 15 minutes or until golden brown.
  • Makes 16 rolls.

3/4 cup whole wheat flour
1/2 cup old-fashioned oats
2 packages (1/4 ounce each) active dry yeast
1 teaspoon salt
1 cup water
1/4 cup honey
5 tablespoons butter, divided
1 large egg, room temperature

Steps:

  • In a large bowl, mix 1 cup all-purpose flour, whole wheat flour, oats, yeast and salt. In a small saucepan, heat water, honey and 4 tablespoons butter to 120°-130°. Add to dry ingredients; beat on medium speed 2 minutes. Add egg; beat on high 2 minutes. Stir in enough remaining all-purpose flour to form a soft dough (dough will be sticky)., Turn dough onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover with plastic wrap and let rise in a warm place until doubled, about 1 hour. , Punch down dough. This is a nice change from your regular wheat bread. Made using a bread machine. Preparation time does not include time to rise.

1 1/4 cups water
2 tablespoons melted butter
2 tablespoons cider vinegar
2 tablespoons powdered milk
3 tablespoons honey
3 tablespoons sugar
2 teaspoons salt
2 2/3 cups bread flour
2/3 cup dark whole wheat flour
2/3 cup oatmeal
3 teaspoons yeast

Steps:

  • Note: You may decrease the amount of white flour and increase the wheat flour, but the bread will not rise as high.
  • Add ingredients in the order suggested by the manufacturer.
  • Set Cycle: Dough, Size: 2lb.
  • Spray two baking sheets with non-stick cooking spray, and preheat the oven to 375F.
  • When the cycle is finished, take the dough out and divide into 20 equal pieces (I use a scale).
  • Roll into ropes about 8 inches long, and tie as you would a knot, press the ends together and place end-side down on the baking sheet.
  • Allow to rise until doubled, about 30 minutes.
  • Brush with eggs or milk; eggs give a shiny, golden hard crust, milk gives a tender golden crust, water makes a light shine and crisp golden crust.
  • Or brush with honey for a sweet crust after baking.
  • Bake until well-browned, about 15 minutes.

2-1/3 cups water, divided
1 cup dry oatmeal
3 tablespoons butter
2 packages (1/4 ounce each) active dry yeast
2/3 cup packed brown sugar
1 tablespoon sugar
1-1/2 teaspoons salt
5 to 5-3/4 cups all-purpose flour

Steps:

  • In a saucepan, bring 2 cups water to a boil. Add oatmeal and butter; simmer 1 minute. Remove to a large bowl and let cool to 110°-115°., Heat remaining water to 110°-115°; add yeast. To oatmeal mixture, add sugars, salt, yeast mixture and half of flour. Mix well. Add enough remaining flour to make a soft dough., Turn out onto a floured surface; knead 6-8 minutes or until smooth and elastic. Add additional flour if necessary. Place dough in a greased bowl, turning once to grease top. Cover and let rise until doubled, about 1 hour., Punch down dough; divide in half and shape each half into 12 balls. Place 1 in. apart on greased baking sheets. Cover and let rise until doubled, about 45-60 minutes. Bake at 350° for 20-30 minutes.

This recipe turns out great homemade rolls for those who love 100% whole wheat bread. They rose beautifully and plump in the oven. Makes 20-25 rolls depending on how big you make them. I made 2 inch dough balls and they rose to 3 inches after baked. To make more rolls just make the dough balls smaller.

2 tablespoons yeast
2 cups lukewarm water (105-125 degrees, 16 oz.)
1/4 cup honey (2 oz.)
3/4 cup olive oil (6 oz.)

7 cups whole wheat flour

Steps:

  • Dissolve yeast in water and honey for about 5 minutes.
  • Combine honey, olive oil, eggs, and salt in a large mixing bowl.
  • Slowly add Flour and knead until it loosens from sides of the bowl.
  • Place in large oiled bowl, cover and let rise until about double. About one hour, be sure it is in a warm place.
  • Punch down and remove Dough.

I find most 100% whole wheat buns are very dense, and let's be frank, taste like the floor of a barn. This recipe is an adaptation of my "Mom's Air Buns" #168628, and makes delicious, soft, healthy,and easy to make rolls. I think the unusual addition of vinegar is what makes the difference.   • I make two 9 inch pans of rolls, each with 9 rolls per pan, and let rise until double (the rolls will fill the pans).
  • Bake at 350°F (I use convection bake) for approximately 20 minutes. Rolls will be deeply golden and oh so yummy.

  • In a small saucepan combine the butter, milk, and water. Set over low heat until the butter is melted. Let the mixture cool to about 110°F, or just warm to the touch. Stir in the yeast and honey.
  • In the bowl of a stand mixer fitted with the dough hook (or by hand), combine the white whole wheat flour, oat flour, all-purpose flour, and salt. Add the milk mixture and stir until combined. Knead on medium low speed until the dough comes together in a smooth, elastic, and slightly sticky ball. If the dough is unbearably sticky, add more flour 1 tablespoon at a time. Avoid adding extra flour if possible, sticky is better than dense.
  • Remove the dough to a well-oiled bowl, turning to coat completely in oil. Cover with plastic wrap and let rise until doubled in size, about 1 hour.
  • Turn the dough out onto a floured work surface and divide into three equal pieces. Divide each piece into three pieces, for a total of 9 rolls. Form each piece into a smooth tight ball by stretching the corners around the bottom and rolling between your palm and the counter.
