BLACK BEAN VEGGIE BURGERS

Black Bean Veggie Burgers image

Costco has a chipotle black bean burger that I love, so I found a basic recipe and tweaked it to meet our tastes. I really enjoy these burgers. They have just enough kick to keep them interesting.

Provided by Kathy

Categories     Black Beans

Time 36m

Yield 4 serving(s)

Number Of Ingredients 13

1 (16 ounce) can no-salt-added black beans, drained, rinsed, and patted dry
1 (98 g) green bell peppers, cut into large pieces
1 (118 g) onions, cut into large pieces
3 garlic cloves, peeled
1 egg
1 tablespoon chili powder
1 tablespoon cumin
1 1/2 teaspoons hot sauce
1/2-1 cup breadcrumbs
1/4 cup parmesan cheese
4 Oroweat Multi-Grain Sandwich Thins
4 slices red onions, to serve
mustard

Steps:

  • In a small bowl, combine the egg, chili powder, cumin and chili sauce.
  • In a food processor, pulse bell pepper, onion, and garlic until finely chopped. If needed, strain to remove excess water.
  • Add beans and egg mixture, pulse until combined. Transfer to a bowl.
  • Work in bread crumbs and parmesan until mixture is sticky and holds together, adding more bread crumbs if needed.
  • Divide into four burgers. Grill or freeze for later use.
  • Heat a skillet on the stove top (medium heat). Coat with cooking spray and cook the burgers about 6-8 minutes per side. You can also bake them in the oven at 375 for about 10 minutes on each side.

BLACK BEAN AND POTATO VEGGIE BURGERS

Black Bean and Potato Veggie Burgers image

The hubby and I are trying to eat less meat, more veggies. These hold together very well, have good flavor and are very moist. After the first bite the hubby asked me to write down the recipe before anything was forgotten. I look forward to seeing the tweaks people will make to improve on a good base. Enjoy!

BLACK BEAN AND CORN VEGGIE BURGER WITH SWEET POTATO "BUN"

Black Bean and Corn Veggie Burger with Sweet Potato

These substantial veggie burgers are gluten free and loaded with fiber. The "buns" can be used in place of bread for other sandwiches as well, like turkey or chicken salad.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h5m

Yield 4 servings (1 sandwich per person)

Number Of Ingredients 11

2 large, fat sweet potatoes (about 1 1/2 pounds), peeled and cut into eight 1/2-inch rounds
3 tablespoons olive oil, plus more for oiling the grill grates
Kosher salt
One 15-ounce can black beans, rinsed
1/2 cup frozen corn, thawed
1/3 cup finely diced pepper Jack cheese
5 tablespoons stone-ground cornmeal
1 large egg white
2 scallions, thinly sliced
2 tablespoons mayonnaise
4 lettuce leaves

Steps:

  • Preheat the oven to 425 degrees F. Prepare a grill for medium-high heat. Brush the sweet potatoes with 1 tablespoon of the oil, and sprinkle with a large pinch of salt. Lightly oil the grill grates. Arrange the sweet potato rounds on the grill, cover with the lid and cook until there are nice grill marks and the potatoes are tender but not mushy, 8 to 12 minutes per side. Set aside to cool completely. (These "buns" can be refrigerated in an airtight container up to 2 days.)
  • Meanwhile, mash the beans and corn in a medium bowl until the beans form almost a paste. Add the cheese, 3 tablespoons of the cornmeal, the egg white, scallions and 3/4 teaspoon salt. Form the mixture into 4 patties about 1/2 inch thick. Refrigerate for at least 20 minutes up to overnight.
  • Heat the remaining 2 tablespoons oil in a large ovenproof nonstick skillet over medium heat. Put the remaining 2 tablespoons cornmeal onto a plate. Dredge both sides of the patties in the cornmeal. Cook until golden brown, 3 to 4 minutes per side. Transfer the skillet to the oven, and bake until the burgers reach an internal temperature of 165 degrees F, about 5 minutes.
  • Brush 4 of the grilled sweet potato slices with some of the mayonnaise. Put the lettuce leaves and burgers on the remaining 4 slices, and sandwich together.

  • Heat a skillet with non-stick spray. Once warm, add the onion and garlic to the skillet and cook until onions are translucent and start to brown a bit. Put the cooked onion mixture into a food processor or blender. Add the basil and pulse several times. Add the beans, sweet potato cubes and oats to the processor and pulse five or six times. Don’t over process, as you want your bean burgers to be a little chunky. The beans should be broken up but there should still be some visible in the burgers.
  • Transfer the veggie and bean mixture into large bowl and stir in the flax egg, chili powder, cumin, sriracha and salt. Form into five patties. (If the mixture is too wet to work with at this point add extra oats).
  • In the same skillet, heat on medium, spray non-stick spray and add the patties, cook each side until browned, about 6-7 minutes total OR you can bake them on 375° for about 25 minutes, flipping once.
  • Put the burgers on a bun and serve with condiments of your choice. I used spicy mustard, onions, lettuce, and ketchup.

  • Cut the steamed potatoes into 4 to 5 pieces each and add them to a large bowl. Mash the sweet potatoes
  • Pat dry the black beans with paper towels to remove any excess moisture. Add them to the mixing bowl with sweet potatoes. Mash only about half of them so you have some whole beans. Not mashing them all gives a nice texture and bite to the burgers.
  • Add onions, cilantro, ginger, garlic and green chili. Add turmeric, salt, ground coriander and garam masala. Mix everything together with a rubber spatula.
  • Start mixing in a little bit of oat flour at a time. Add more oat flour as needed. The oat flour will absorb excess moisture and help form the patties. Add oil and mix it well. If making ahead you can keep this mixture in the fridge.
