SPICY BLOODY MARYS

3 large celery stalks, plus additional stalks for serving
3 teaspoons prepared horseradish
2 teaspoons grated yellow onion
1/2 cup freshly squeezed lemon juice (2 lemons)
1 teaspoon Worcestershire sauce
1 teaspoon celery salt
1/2 teaspoon kosher salt
1/2 teaspoon Tabasco, or to taste
1 (46 ounce) can Sacramento tomato juice
2 cups vodka

Steps:

  • Cut the celery in large dice, including the leaves, and puree in the bowl of a food processor fitted with the steel blade. Add the horseradish, onion, lemon juice, Worcestershire sauce, celery salt, kosher salt, and Tabasco and puree it again. Pour the tomato juice into a 2 1/2-quart container, stir in the celery and seasonings mixture, then add the vodka and chill. Place a few ice cubes in each glass, pour in the Bloody Mary mixture, and garnish with a celery stick.

3 large stalks celery from the heart, including leaves, plus extra for serving
36 ounces tomato juice (recommended: Sacramento)
2 teaspoons prepared horseradish
1 teaspoon grated yellow onion
1 lemon, juiced
1/2 teaspoon Worcestershire sauce
1/2 teaspoon celery salt
1/4 teaspoon kosher salt
12 dashes hot sauce (recommended: Tabasco), or to taste
1 1/2 cups vodka

Steps:

  • Cut the celery in large dice, including the leaves, and puree in the bowl of a food processor fitted with the steel blade. Process until finely minced. In a large pitcher, combine the rest of the ingredients except the vodka. With the food processor running, pour 1/4 of the tomato juice mixture into the food processor through the feed tube. Then pour the contents of the food processor into the pitcher with the remaining tomato juice mixture. Add the vodka and chill. Serve in tall glasses over ice with a stick of celery.

1 (1/4 ounce) package dry yeast
1/4 cup warm water (105-115 degrees)
1 (6 ounce) can spicy vegetable juice cocktail
1 tablespoon sugar
2 tablespoons water
1 tablespoon unsalted margarine
1 egg, beaten
1/2 teaspoon salt
1 cup whole wheat flour
1/4 cup wheat germ
1 3/4 cups all-purpose flour
3 tablespoons all-purpose flour
vegetable oil cooking spray

Steps:

  • Dissolve yeast in warm water in a large bowl; let stand 5 minutes to "bloom.
  • Combine vegetable juice cocktail and next 3 ingredients in sml saucepan; cook over medium heat until margarine melts. Let cool to 105-115 degrees. Stir in egg and salt. Add to yeast mixture; stir well. Add whole wheat flour and what germ; beat at low speed of an electric mixer until well blended. Beat an additional 3 minutes at high speed. Stir in enough of the 1 ¾ c all-purpose flour to make a soft dough.
  • Sprinkle 3 TBL all-purpose flour evenly over work surface. Turn out dough onto floured surface and knead until smooth and elastic (about 8-10 minutes). Place dough in a large bowl coated with cooking spray, turning to coat top. Cover and let rise in a warm place (85 degrees) free from drafts, 1 hour or until doubled in bulk.
  • Punch dough down. Roll to a 15x8 ½-inch rectangle. Roll up dough, jellyroll fashion, starting with narrow end; pinch seam side down, in an 8 1/2x4 1/2x3-inch loaf pan coated with cooking spray.
  • Cover and let rise in a warm place, free from drafts, 45 minutes or until doubled in bulk. Bake at 350 degrees for 35-40 minutes or until loaf sounds hollow when tapped. Remove from pan and let cool completely on wire rack.

Another fun bread from my Bread Maker's Bible-- V-8 Classic will do just fine if you don't have a Whole Foods or Trader Joe's nearby and can cheaply obtain tomato juice. Omit the wheat gluten if using bread flour. Prep time accounts for the dough cycle, mine is 90 minutes.

3 cups all-purpose flour
3 tablespoons vital wheat gluten
1 1/4 cups tomato juice (or V-8)
2 tablespoons sugar
1 1/2 teaspoons kosher salt
2 1/4 teaspoons active dry yeast (1 envelope)
1 teaspoon ground rosemary
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon dried oregano
2 tablespoons olive oil
Tabasco sauce, to taste

Steps:

  • Add the ingredients to your bread machine according to manufacturer's instructions.
  • Do a Light or Medium cycle if you want to bake it in the machine. Oven, do a dough cycle then lay a piece of parchment paper onto a cookie sheet and mold the dough into a big loaf and bake at 375F for 25-30 minutes.
  • I heartily recommend this bread to be eaten with celery stalks, a good pepper jelly, and of course, Bloody Marys with plenty of Absolut Peppar! (Or Blue Flames or Dragon's Breath if you're really masochistic.).

This humble Bloody Mary has its roots in a 2000 article by R. W. Apple Jr., who explored the origins of Worcestershire sauce, "perhaps best known as an indispensable ingredient" in the cocktail. Mr. Apple's version doesn't stray far from tradition, featuring the sauce prominently. Serve this version with a simple garnish of lime at your next brunch. (Betsey, Mr. Apple's wife, noted in the comments below that she always added horseradish and celery salt to those she served him at home. We think that's a grand idea.)

1 lemon, juice of
1/2 teaspoon Worcestershire sauce
3 drops Tabasco sauce

Steps:

  • Rub lemon or lime around rim of glass and then put the rim in margarita salt or Tony Chachers, if desired.
  • Add ice to glass.
  • Mix Vodka, tomato juice, lemon juice, Worcestershire sauce, Tabasco, salt, Pepper, celery salt and horseradish (if using) and pour in glass.
  • Garnish with lemon or lime wedge, celery stalk, green onion or pickled green bean.

  • Place the ice in a large jug. Measure the vodka, tomato juice and lemon juice and pour it straight onto the ice.

Lemon wedge
Lime wedge
4 oz. tomato juice
2 dashes Tabasco
2 dashes Worcestershire sauce
Pinch of sea salt
Pinch of celery salt
Pinch of coarsely ground pepper (pepper too finely ground will bring more heat and less flavor)
1/4 teaspoon peeled and freshly shredded horseradish (avoid using prepared horseradish from a jar)
2 oz. vodka (not flavored)
Slice of seedless cucumber
Pitted green olive
Lemon wedge
Black pepper

Steps:

  • Squeeze lemon and lime wedges into a shaker. Add all other ingredients except vodka, and stir. Taste the mix, and adjust the seasoning if needed. Put the mix in the fridge, and let it sit overnight.
  • Pour vodka into the shaker. Add ice cubes, and shake.
  • Fill an 8-ounce glass about halfway with ice, and strain the shaker contents over it.
  • For garnish, I prefer a slice of seedless cucumber, also known as a hothouse or English cucumber, rather than celery. (This isn't a deal breaker, though.) Cut a 1/2-inch-thick slice of cucumber on the bias. Cut a slit in the slice, and place on the rim of the glass. Spear the pitted green olive with a toothpick, and stick it through the rind of the lemon wedge. Place the wedge on the rim of the glass. Crack a little freshly ground pepper on top.

3 tablespoons lemon juice
3 tablespoons lime juice
1 tablespoon prepared horseradish
1 1/2 tablespoons Worcestershire sauce
1/4 teaspoon garlic powder

3/4 teaspoon celery salt
1/2 teaspoon coarse black pepper
1/3 cup pickle juice
1 ounce vodka, per drink

Steps:

  • In a blender combine the tomato juice, lemon juice, lime juice, horseradish, Worcestershire sauce, garlic powder, pickle juice, and hot sauce and process until smooth. Transfer to a nonreactive container and add celery salt and black pepper, to taste. Refrigerate until thoroughly chilled, at least 2 hours and up to overnight.
  • When ready to serve, fill each glass with ice.
  • Add 1 ounce of vodka to each glass, then fill the glass with the bloody mary mix. Stir well, and garnish each glass with your favorite veggie, pickle, celery, pickled green bean, or a pickled okra.
