I got this muffin recipe from a muffin cookbook this morning and I made it this morning. There is no cinnamon in the actual batter only in the topping - thought it might be good to add some cinnamon to batter which you could do if you want.

3/4 cup softened butter
3/4 cup granulated sugar
1 teaspoon vanilla extract
2 eggs
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 pinch salt
1 cup sour cream (I used plain yogurt)
1/2 cup chopped walnuts (I didn't have enough and used sliced almonds)
3 teaspoons cinnamon
1/3 cup granulated sugar

Steps:

  • Heat oven to 375 degrees F.
  • In a large bowl, cream the butter and sugar with a mixer; blend in vanilla extract and eggs.
  • In another bowl, sift together the flour, baking powder, baking soda, and salt.
  • Pour the flour mixture and the sour cream into the butter mixture.
  • Stir the batter by hand until the ingredients are blended. If batter is too dry, add a splash of milk.
  • Do NOT over-mix! Over-mixing makes muffins and things like that tough.
  • Grease muffin tins.
  • Prepare the topping by mixing together the walnuts, cinnamon, and sugar.
  • Drop 1 tablespoons of batter into each muffin tin.
  • Sprinkle with 1 teaspoons of topping.
  • Top with 1 more tablespoons of batter.
  • Sprinkle the tops with another teaspoon of topping.
  • Bake for 15-20 minutes or until a tester comes out clean.

1 ½ cups all-purpose flour
¾ cup white sugar
½ teaspoon salt
2 teaspoons baking powder
1 teaspoon ground cinnamon
⅓ cup vegetable oil
1 egg
⅓ cup milk
2 apples - peeled, cored and chopped
½ cup white sugar
⅓ cup all-purpose flour
½ cup butter, cubed
1 ½ teaspoons ground cinnamon

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease six muffin cups or line with paper muffin liners.
  • Stir together 1 1/2 cup flour, 3/4 cup sugar, salt, baking powder and 1 teaspoon cinnamon. Mix in oil, egg and milk. Fold in apples. Spoon batter into prepared muffin cups, filling to the top of the cup.
  • In a small bowl, stir together 1/2 cup sugar, 1/3 cup flour, butter and 1 1/2 teaspoons cinnamon. Mix together with fork and sprinkle over unbaked muffins.
  • Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into center of a muffin comes out clean.

Steps:

  • Combine all the topping/filling ingredients. Gently fold half of the mixture into the muffin batter.
  • Spoon the muffin batter, a little less than 1/4 cup, into each muffin tin. Top with remaining brown sugar mixture. Bake at 400 degrees for 12 to 15 minutes, or until muffins spring back when pressed lightly. Remove from oven. Cool slightly, then transfer carefully to a wire rack.
  • Whisk together all of the frosting ingredients. Drizzle over the top of the muffins and enjoy every single delicious bite . . . maybe even lick your fingers when you're done.

  • Preheat the oven to 400°F
  • Spray a muffin pan lightly with non stick spray and then place muffin liners in each space.
  • In a stand mixer or hand held mixer cream the butter and sugar until light.
  • Add the eggs one at a time and vanilla, mixing until the mixture has come together, scrape down the sides of the bowl.
  • Add the sour cream on low speed.
  • In a separate bowl whisk together the flour, baking powder and cinnamon.

  • 1. Heat oven to 200C/180C fan/gas 6. Line 2 muffin trays with paper muffin cases.
  • 2. In a small sauce pan place sultanas and apple table spoon of water, cinnamon/ginger and 1 table spoon of soft brown sugar bring to a simmer about 5 min then leave to cool
  • 3. In a large bowl beat the eggs lightly with a handheld electric mixer for 1 min or low setting on a standard planet mixer. Add the oil and milk /yoghurt and beat until just combined then add the sugar and whisk until you have a smooth batter.
