This is a bit spicy so you may want to decrease the pepper flakes and add more at the end for taste. I made this for a pot-luck Chinese dinner that is why the serving size is for 8. Can be cut in half. Delicious over Chinese white rice.

1 lb ground lean pork
2 teaspoons cornstarch
1/4 teaspoon salt
1/4 teaspoon ground pepper
1 tablespoon peanut oil
5 cups green beans, trimmed and cut in half
4 garlic cloves, grated
4 tablespoons hoisin sauce
2 teaspoons sugar
2 teaspoons red pepper flakes
4 teaspoons low sodium soy sauce
4 cups white rice, hot and cooked

Steps:

  • Steam beans 5 minutes (should be snappy not mushy).
  • Combine the first 4 ingredients in a medium bowl.
  • Heat oil in a large non-stick skillet over med high heat. Saute pork mixture until pork loses it's pink color - stirring to a crumble. Add steamed green beans and garlic - saute for 3-5 minutes more.
  • Combine hoisin sauce, sugar, pepper flakes and soy sauce in a small bowl - stirring with a whisk to incorporate ingredients.
  • Pour mixture into pan with pork and green beans. Cook another 3-5 minutes or until heated through, stirring frequently.
  • Serve over hot rice - Enjoy!

2 cups green beans, cut in halves
1 cup chopped mushroom
1 tablespoon oil
2 garlic cloves
2 teaspoons fresh ginger, grated
2 teaspoons minced chili sauce

1/4 cup chicken stock
1 tablespoon sesame seeds, toasted
1/2 teaspoon sesame oil

Steps:

  • In a wok or large frying pan, brown ground pork in oil on med high heat approx 6 - 8 minutes. Add green beans, mushrooms, garlic, ginger and chili sauce and cook for 5 minutes, stirring constantly. Add the stock and cook for another 5 minutes. Take off heat and add the black bean sauce, sesame oil, and scallions. Mix well. Garnish with toasted sesame seeds. Serve with rice, noodles, or in lettuce wraps.

In this recipe, ground pork and green beans are coated in a tantalizing Szechuan sauce, and peanuts are transformed into the perfect crunchy topping thanks to a sugary coating. Everything comes together over a bed of steamy rice mixed with warm, sizzly ginger-in 30 minutes, no less! The results? A symphony of flavors and textures that are so delicious, you might just lick the plate.

2 unit Scallions
½ cup Jasmine Rice
½ ounce Peanuts
10 ounce Ground Pork
2 teaspoon Sugar
2 teaspoon Cooking Oil
1 tablespoon Butter

2 tablespoon Szechuan Paste
4 tablespoon Sweet Soy Glaze

Steps:

  • • Wash and dry produce. • Peel and mince or grate ginger. Trim green beans if necessary; cut crosswise into 2-inch pieces. Trim and thinly slice scallions, separating whites from greens.
  • • Melt 1 TBSP butter (2 TBSP for 4 servings) in a small pot over medium-high heat. Add half the ginger; cook, stirring, until fragrant, 1 minute. • Stir in rice, ¾ cup water (1½ cups for 4), and a big pinch of salt. Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender, 15-18 minutes. • Keep covered off heat until ready to serve.
  • • While rice cooks, in a medium microwave-safe bowl, add green beans and a splash of water; cover with plastic wrap. Microwave until tender, 1-2 minutes. Drain. • Heat a large, preferably nonstick, pan over medium-high heat. Add peanuts, 1 tsp sugar (2 tsp for 4 servings), and 2 TBSP water. Cook, stirring, until water has evaporated and peanuts are coated and lightly toasted, 3-5 minutes. • Turn off heat; transfer to a small bowl. Wash out pan.
  • • Heat a large drizzle of oil in pan used for peanuts over medium-high heat. Add pork* and cook, breaking up meat into pieces, until browned, 4-6 minutes (it'll cook through in the next step).
  • • Stir green beans, scallion whites, remaining ginger, and 1 tsp sugar (2 tsp for 4 servings) into pan with pork. Cook, scraping up any browned bits from bottom of pan, until ginger is fragrant and pork is cooked through, 1-2 minutes. TIP: If scallions begin to brown too quickly, reduce heat to medium low. • Stir in Szechuan paste, sweet soy glaze, and ¼ cup water (1⁄3 cup for 4). Cook, stirring, until everything is thoroughly coated, 1-2 minutes more. Turn off heat. Taste and season with salt and pepper if desired.
  • • Fluff rice with a fork and season with salt and pepper. • Divide rice between bowls; top with stir- fry. Sprinkle with scallion greens and peanuts. Serve.

2 pounds flank steak, cut into 1-inch cubes

1 small red onion, chopped

In this fast, piquant weeknight meal, ground pork and green beans are stir-fried with plenty of ginger, garlic and chiles, and seasoned with soy sauce and coriander seeds. A big splash of rice-wine vinegar right at the end adds a hit of acidity, which balances the pork's richness. Serve this over rice or rice noodles to help absorb all the salty, spicy sauce. Slices of fresh tomato add a sweet juiciness that works well here. But if you don't have a ripe tomato, feel free to leave it out.

My take on the long green beans you find in some of the Asian fusion restaurants. If you don't have the Szechuan peppercorns this dish will still taste great, though you may want to add some chili flakes or other spice to give it some pep instead of the peppercorns.

1 teaspoon Szechuan peppercorns
1 tablespoon peanut oil
1 teaspoon minced garlic
⅛ teaspoon ginger powder
¼ cup red wine vinegar
3 tablespoons soy sauce
1 green onion, chopped
2 teaspoons hoisin sauce
½ teaspoon sesame oil
½ pound long green beans
1 tablespoon sesame seeds

Steps:

  • Cook and stir peppercorns in a dry skillet over medium heat until aromatic, 2 to 3 minutes. Grind peppercorns using a mortar and pestle.
  • Heat peanut oil in a small skillet over medium heat; add garlic and cook until lightly browned, about 1 minute. Mix ground peppercorns and ginger into garlic.
  • Mix red wine vinegar, soy sauce, green onion, hoisin sauce, and sesame oil into garlic mixture; cook and stir until sauce is heated through, 2 to 4 minutes.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add green beans, cover, and steam until tender, about 5 minutes.
  • Toss green beans and sauce together in a bowl; top with sesame seeds.

100g basmati rice
200g green bean , topped and tailed, then halved
1 ½ tbsp sunflower oil
140g pork mince
4 tsp dark soy sauce
2 tsp rice wine
1 tsp caster sugar
¼ tsp Sichuan pepper , lightly crushed using a pestle and mortar
1 red chilli , halved and sliced
4 fat garlic cloves , finely chopped
1 small knob of ginger , finely chopped
3 spring onions , 2 finely chopped, 1 sliced for garnish
2 tsp sesame oil

Steps:

  • Cook the rice following pack instructions. Boil the beans for 4 mins, then drain under cold water, pat dry and set aside.
  • In a large non-stick wok or frying pan, heat 1 tbsp of the oil. Add the pork mince and fry for a few mins, breaking up into small pieces with the back of a spoon. Stir in half the soy, the rice wine and sugar and cook for 30 secs more. When the meat is cooked through, tip onto a plate.
  • Heat the remaining oil in the pan. Add the pepper, chilli, garlic, ginger and chopped onions, and stir-fry for 2 mins until ginger and garlic are softened. Tip in the beans, heat through, then add the mince - stir-fry for 2 mins until hot. Stir in the rest of the soy and sesame oil. Scatter with spring onions and serve with rice.
