Whole Wheat Buttermilk Bread image

Whole Wheat Buttermilk Bread has a light, soft, and airy inside with a chewy crust. Makes a great sandwich bread and tastes fabulous toasted.

Provided by Christin Mahrlig

Categories     Bread

Number Of Ingredients 11

1 package active dry yeast
2 tablespoons sugar
1/2 cup warm water (105 to 115 degrees)
1 cup buttermilk
1/4 cup vegetable oil
3 tablespoons honey
1 large egg
1 3/4 cups whole wheat flour
1 teaspoon salt
1/8 teaspoon baking powder
2 1/4 to 2 3/4 cups bread flour

Steps:

  • Combine the yeast, sugar, and warm water together in a liquid measuring cup. Let sit 5 minutes.
  • Pour yeast mixture into the mixing bowl of a stand mixer (use the paddle attachment). Add buttermilk, oil, honey, and egg. Mix just long enough to combine.
  • Add whole wheat flour, salt, and baking powder. Beat at medium speed for 2 to 3 minutes.
  • With mixer on medium-low, gradually add the bread flour.
  • Turn dough out onto a lightly floured surface. I like to tape a piece of parchment paper to my counter for easy clean-up.Knead dough for 8 to 10 minutes.
  • Place dough in a well-greased large bowl, turnng to coat it. Cover and let rise until doubled in bulk, about 1 1/2 hours.
  • Punch dough down and divide in half. Roll each piece out into a 15x8-inch rectangle. Starting at the narrow end, roll it up. Pinch the ends to seal and tuck them under.
  • Place each loaf in a greased 8 1/2-by-4 1/2-inch loaf pan. Cover and let rise until doubled, about 1 hour.
  • Bake at 350 degrees for 30 minutes, or until sounds hollow when tapped. If bread is getting too browned, loosely cover with aluminum foil for the last 10 minutes of baking.Remove loaves from pans and let cool.

WHOLE WHEAT OATMEAL BUTTERMILK BREAD

Whole Wheat Oatmeal Buttermilk Bread image

Since Canadian flour has more gluten, I use whole wheat bread flour and all purpose white flour, if you reside in the U.S. then use bread flour for the white.

Provided by Kittencalrecipezazz

Categories     Yeast Breads

Time 2h30m

Yield 1 (8x4-inch) loaves

Number Of Ingredients 11

1 cup buttermilk
1 1/2 teaspoons salt
3 tablespoons sugar
3 tablespoons butter
2 cups whole wheat bread flour
2 cups white flour (all purpose for Canada and white bread flour if you are in the US)
3 tablespoons rolled oats
3/4 cup warm water
1 teaspoon sugar
1 tablespoon dry yeast
1/2 teaspoon baking soda

Steps:

  • Fit a kneader blade on a heavy-duty stand mixer.
  • Proof 1 tablespoon yeast in 3/4 cup warm water with 1 teaspoon sugar for 8-10 minutes or until foamy.
  • In the stainless steel mixing bowl add in 2 cups EACH white and whole wheat bread flour and the rolled oats; mix slightly to combine with a spoon.
  • In the microwave warm the buttermilk, butter, 3 tablespoons sugar and 1-1/2 teaspoons salt for about 40 seconds until warm (the butter does not have to melt completely) then pour into the stainless steel mixing bowl with the flour.
  • After the yeast is proofed, add into the bowl along with the 1/2 teaspoon baking soda and start mixing/kneading adding in more WHITE flour as needed to create a soft semi-sticky dough (because of the oatmeal and whole wheat flour the dough will be more sticky than usual).
  • Knead for 10 minutes.
  • Remove the dough to a lightly-floured surface; cover with a clean tea towel and let rest for 10 minutes.
  • Gather up the dough and knead gently for about 15 seconds with your hands (it will come together nicely).
  • Generously grease a large bowl with oil.
  • Place the dough in the bowl, cover with plastic wrap or a clean tea towel and let rise for about 1 hour and 15 minutes (it might take more or less time depending on the temperature of your kitchen, or place in a warmed oven to rise).
  • Remove and punch down dough.
  • Place on a floured surface and roll out to about 14x8 inches (does not have to be exact size!).
  • Roll up tightly and tuck the sides under to fit the 8x4-inch loaf pan (I just slice off the ends of the dough enough to fit into the pan and pinch the dough together, it makes for a more even loaf).
  • Cover and let rise for about 30-45 minutes (depending on how warm your kitchen is) in a warm place covered with a clean tea towel.
  • Bake for about 30 minutes in a 375°F oven.

WHOLE WHEAT BUTTERMILK BISCUITS

Whole Wheat Buttermilk Biscuits image

The whole wheat gives these biscuits a nutty flavor. Patting and folding the dough makes the biscuits flaky too.

Provided by Ceezie

Categories     Breads

Time 1h12m

Yield 12 biscuits

Number Of Ingredients 7

2 cups whole wheat flour, divided
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
6 tablespoons cold butter, cut into small pieces
3/4 cup buttermilk
2 tablespoons buttermilk (plus more if needed)

Steps:

  • Preheat oven to 450°F Combine 1 3/4 cups flour, baking powder, baking soda and salt in a medium bowl; whisk together. Add butter, toss with your fingers to coat with flour, and rapidly pinch and fluff butter into flour with your fingertips to make small flakes. Work quickly to keep butter firm.
  • Add buttermilk; stir well with a fork until the dough gathers into one large lump. Drizzle in additional droplets of buttermilk if necessary.
  • Scrape dough onto a flat surface sprinkled with remaining 1/4 cup flour. Roll dough to coat with flour, then pat out into a rough rectangle about 1/2-inch-thick and fold it in thirds. Repeat the patting and folding. Pat dough into a thickness of 1 inch. Dip a 2-inch round cutter into flour and stamp out biscuits, coating the cutter with flour before each stamping. Place biscuits, top sides up, on a heavy ungreased baking sheet about 1 inch apart.
  • Bake 10 to 12 minutes, until biscuits are golden brown. Makes 12 biscuits.
  • Note: These are really good with honey butter. To make honey butter, put approximately equal amounts of honey and soft butter into a small bowl and whip with a fork until smooth.

SEEDED WHOLE WHEAT BUTTERMILK BREAD (BREAD MACHINE)

Seeded Whole Wheat Buttermilk Bread (Bread Machine) image

This is an adaptation of a recipe I made from Betty Crocker's Bread Machine Cookbook. Feel free to experiment with different seeds that meet your liking (example: dill, coriander, poppy, or fennel seeds). Intended for a 2 pound loaf (message me if you need the recipe for the 1.5 pound loaf - it is not a direct down conversion).

Provided by Maito

Categories     Yeast Breads

Time 3h10m

Yield 1 loaf, 12 serving(s)

Number Of Ingredients 12

1 cup buttermilk
6 tablespoons water
2 tablespoons olive oil (or other oil)
1 3/4 teaspoons salt
2 cups bread flour
2 cups whole wheat flour
3 tablespoons sugar
1 1/2 teaspoons celery seeds
1/2 teaspoon mustard seeds
1 1/2 teaspoons sesame seeds
1 1/2 teaspoons caraway seeds
2 teaspoons bread machine yeast or 2 teaspoons quick active dry yeast

Steps:

  • Place all ingredients in bread machine pan in order, or to the recommendation of your bread machine manufacturer. Make sure you make a well for the yeast on top.
