BREAD MACHINE SESAME FRENCH BREAD
I make this bread often, especially when I want a bread that has a bit more body than a white bread, but not as rustic as a traditional French bread. I think the sesame seeds give it a really nice flavor. It makes about a 1 1/4 lb. loaf. Unfortunately, I can't remember where on the web I found this.

Steps:
- Place all the ingredients into the bread machine according to manufacturer's directions.
- Bake using french bread cycle if your machine has it.
- If not, use the dark crust white cycle.
- Start with 2 3/4 cups flour, you might need more depending on a lot of factors.
- My favorite way to get the texture I like is about 10 minutes into the knead cycle I will pinch a good size chunk of dough between my thumb and two or three fingers.
- If it feels just moist and some dough sticks to my fingers, it's just right.
- If no dough sticks, it's a bit dry and add a few teaspoons of water.
- If it feels too soft and very sticky, add more flour until you get the right consistency after about another 5 minutes of kneading.
MULTI-SEED LOAF (BREAD MACHINE)
I bake my own bread and have been playing around with different mixtures. This is the best so far and tastes slightly nutty. Excellent for everyday and feels a bit healthier than the normal white loaf! It is a very easy recipe and takes a couple of minutes to prepare.

- Add the ingredients into the bread-machine in the order they appear above, so water first and seeds last.(You can buy seed mixes but I make up my own by buying small bags of each seed and mixing roughly equal quantities of each together in a tupperware box).
- Put the machine on the normal white bread cycle. Make sure the dough looks smooth after the first mixing stage - if not add flour or water as required.
- Sit back and relax. In 3-4 hours (depending on your bread machine) you will have a delicious and healthy bread.
FARMHOUSE WHITE BREAD (BREAD MACHINE)
This is a wonderful tasting tender white bread that gets extra flavor and texture from sesame seeds.

- Place the first four ingredients into your bread machine pan in the order they are listed above.
- Mix the flour with the seeds and pour into the pan, followed by the yeast.
- Set the programme to 'DOUGH'.
- When the cycle has finished, (my machine takes 90 minutes) transfer the dough to a floured surface, knead about 5 times then shape as you like (round, oval, loaf, etc.) Place the dough on a lightly oiled baking sheet and cover it with a piece of oiled cling film/plastic wrap. Leave it to prove until it has almost doubled in size (about an hour).
- Preheat the oven to 200C/400°F
- Using the point of a sharp knife, cut 4-5 slashes in the loaf no more than 1/4 inch deep, making a simple design of your choice. (ex: / / / / or XXXX, etc.).
- Brush the dough gently with the milk then sprinkle the sesame seeds over the top.
- Bake for 25 minutes or until it has turned golden brown. Transfer the loaf to a wire rack and leave it to cool a little before slicing.

- In a large bowl, dissolve yeast in warm water. Add the sugar, oil, salt and 4 cups of flour; beat until smooth. Add enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Divide in half. Roll each half into a 15x10-in. rectangle. Roll up from a long side; seal well. Place with seam side down on greased baking sheet sprinkled with cornmeal. , Beat egg white and water; brush over loaves. Sprinkle with sesame seeds. Cover with plastic wrap sprayed with cooking spray; let rise until nearly doubled, about 30 minutes. , With a sharp knife, make 4 shallow diagonal cuts across top. My husband and I want whole grain bread, but we don't like the spongy store-bought whole wheat breads. I drastically altered one of my favorite batter bread recipes to create this earthy bread. FLAX SEED BREAD (BREAD MACHINE)
I saw flax seed at the grocery and bought it without any idea of what to do with it. I found out that flax seed contributes fiber and omega-3s to the diet. Even better, it made this delightful, speckled loaf with a nutty flavor. Wonderful as is or toasted.

- Place ingredients in your bread machine as directed by your manufacturer.
- Set to dough cycle. Check the consistency after about 10 minutes - if it looks dry, add a little more water.
- After initial rise, remove, shape in a large round loaf (or whatever you like), let rise again on a cornmeal dusted baking pan.
- Preheat oven to 400 deg. If desired, brush loaf with an egg wash (one egg beaten with 1 tbl. cold water). Slash loaf with sharp knife. Place in oven. After 15 min., reduce temperature to 350 deg.
- Bake for an additional 25 minutes or until loaf is done - an instant thermometer should read 205 deg.
- Turn onto cooling rack and let cool.
- Note: If using flax seed, 2/3 cups seed will grind into 1 cup flax meal.
- Note2: If using egg wash, you may also sprinkle loaf with whole flax or poppy seeds.
