WHOLE WHEAT APPLE SNACK BARS

Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Grease a 7-inch square baking tin, or line with paper liners.
- Whisk brown sugar, applesauce, oil, eggs, and vanilla extract together in a large bowl.
- Combine flour, cinnamon, and baking powder in a separate bowl. Stir into egg mixture until moistened.
- Spoon 1/2 the batter into the prepared baking tin and spread evenly. Place apple slices on top and cover with remaining batter.
- Bake in the preheated oven until the top springs back lightly when pressed, about 30 minutes. Remove from the oven and let cool completely before removing from the tin and cutting into bars, about 30 minutes.

- combine flour, cinnamon, and sugar substitute.
- in a separate bowl, combine applesauce and eggs. mix in remaining ingredients.
- combine wet and dry ingredients and spread in prepared pan.
- bake 15-20 minutes.

OATMEAL, APPLE AND PEANUT BUTTER BARS
I have had this recipe for years and recently started making it after not finding any other oatmeal bars that were a nice combination of good nutrition and good flavor. Not overly sweet and fattening like a cookie, but not so ultra healthy they aren't appealing to kids. You can adapt the recipe, adding any dried fruit you like, use part whole wheat, add some ground flax, my 3 year old likes adding some mini chocolate chips on top. Can't argue with that! Great for breakfast or a afternoon snack.

Steps:
- Beat butter, apple sauce and peanut butter together until smooth. Add sugars and vanilla, beat until creamy. Add eggs, beating one at a time until blended. In another bowl, add baking soda, baking powder , cinnamon and salt to flour and mix. Add flour mix to batter, stirring until no flour is visible. Add oats and fruit, mixing gently. Spoon into a 9 x 13 pan coated with cooking spray. Bake for 15-18 minutes in 350 degree oven. Cut into squares when cool.

APPLESAUCE BARS
Moist and spicy bar cookies with frosting. An easy and quick after school snack. Also goes great at carry-ins and bake sales. You can also just sprinkle with confectioners sugar instead of frosting.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- In a medium bowl, mix together the butter, brown sugar and egg until smooth. Stir in applesauce. Combine the flour, baking soda, salt and pumpkin pie spice; stir into the applesauce mixture until well blended. Spread evenly into the prepared pan.
- Bake for 25 minutes in the preheated oven, or until edges are golden. Cool in the pan over a wire rack.
- In a small bowl, mix together the confectioners' sugar and margarine. Stir in vanilla and milk until smooth. Spread over cooled bars before cutting into squares.

- Preheat oven to 350F. Line a 7x11 inch baking pan with foil or parchment paper, leaving a slight overhang.
- Peel and finely dice the apple. Melt 1 teaspoon butter over medium heat in a small skillet. Add the apple and cook for one minute, tossing to coat with the butter. Sprinkle with 1/2 tablespoon brown sugar, 1 teaspoon cinnamon and 1 teaspoon flour and cook for another 2 minutes, carefully mixing until combined. Set aside to cool.
- In a medium pot, melt 6 tablespoons butter over medium heat. Continue warming until the butter turns golden brown in color and starts smelling of hazelnuts. Whisk in 2/3 cup brown sugar and set aside to cool for 5 minutes.
- Once the mix has cooled to room temperature, whisk in the oil, vanilla extract and the eggs. Evenly sprinkle the whole wheat flour on top, then the baking powder and salt. Carefully mix into the egg mixture until a batter forms. Fold in the apples.
