1/2 cup pineapple chunk, small
1/2 cup ham, cubed
1/2 cup monterey jack cheese, shredded
1/2 cup cheddar cheese, shredded
6 tablespoons water
salt, to taste
fresh ground black pepper, to taste

Steps:

  • Beat together eggs, water, salt and pepper.
  • Thinly coat your skillet with vegetable oil spray.
  • Heat over medium high.
  • Pour egg mixture into pan.
  • When eggs are almost set, sprinkle half of the omelette with remaining ingredients.
  • Fold other half of omelette over filling.
  • Continue cooking until cheese melts, about 2 minutes.
  • Cut omelette into 3 wedges and serve.

1/3 cup chopped cooked ham
2 tablespoons crushed pineapple, drained
1 tablespoon flaked coconut
3 large eggs
1 tablespoon water
1/8 teaspoon salt
fresh ground pepper
1 teaspoon butter or 1 teaspoon margarine
papaya, slices
mint leaf

Steps:

  • To make the filling: in a bowl, mix together the ham, pineapple, and coconut; set aside.
  • To make the omelet: Whisk the eggs, water, salt, and pepper together in a bowl.
  • Heat an 8-inch omelet pan or nonstick skillet over medium heat.
  • Add butter; tilt pan to coat bottom of pan with melted butter.
  • When butter foams, pour in egg mixture all at once.
  • Let set about 20 seconds or until edges begin to cook.
  • Using a spatula, gently lift edges of mixture and tip skillet to allow the uncooked egg mixture to flow underneath.
  • Continue doing this until the top is almost dry.
  • Spoon ham mixture over one half of the omelet.
  • Fold the other side over to cover.
  • Let stand for a few seconds to allow ham mixture to warm.
  • Transfer to a warmed plate.
  • Garnish with papaya slices and a mint leaf.
  • Serve immediately.

4 bacon strips, chopped
1 tablespoon canola or coconut oil
2 large sweet potatoes (about 1-1/2 pounds), peeled and cut into 1/2-inch pieces
1/2 teaspoon salt
1/4 teaspoon chili powder
1/4 teaspoon paprika
1/4 teaspoon pepper
1/8 teaspoon ground cinnamon
2 cups cubed fresh pineapple (1/2-inch cubes)

Steps:

  • In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings., In same pan, heat oil over medium heat. Add potatoes and seasonings; cook and stir 15 minutes. Add pineapple; cook and stir until potatoes are tender and browned, 8-10 minutes. Sprinkle with bacon.
