GORGONZOLA SAUCE

4 cups heavy cream
3 to 4 ounces crumbly Gorgonzola (not creamy or "dolce")
3 tablespoons freshly grated Parmesan
3/4 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
3 tablespoons minced fresh parsley

Steps:

  • Bring the heavy cream to a full boil in a medium saucepan over medium-high heat, then continue to boil rapidly for 45 to 50 minutes, until thickened like a white sauce, stirring occasionally.
  • Off the heat, add the Gorgonzola, Parmesan, salt, pepper, and parsley. Whisk rapidly until the cheeses melt and serve warm. If you must reheat, warm the sauce over low heat until melted, then whisk vigorously until the sauce comes together.

1 tablespoon Italian seasoning
1 teaspoon cracked black pepper
2 tablespoons paprika
2 tablespoons salt
1 1/2 tablespoons cayenne pepper
2 tablespoons butter
1 tablespoon grapeseed oil, for frying
Four 6-ounce portions skinless and boneless salmon fillets
1/4 cup white wine
1/2 cup heavy cream
3/4 cup blue cheese crumbles

Steps:

  • Preheat oven to 400 degrees F.
  • In a small bowl, combine the Italian seasoning, black pepper, paprika, salt, and cayenne. Season each piece of fish with the rub.
  • Heat a large skillet over medium-high heat and add the butter and oil. Once the butter has melted, add the fish and cook about 2 minutes per side.
  • Transfer the whole pan to the oven and cook for another 4 to 6 minutes.
  • For the sauce:
  • Place the white wine into a medium saucepan and reduce by half. Add the heavy cream and allow to reduce. Add the blue cheese and whisk until smooth. Serve on top of the salmon.

1/3 cup sour cream
1/3 cup buttermilk
1/4 cup mayonnaise
1 tablespoon white wine vinegar
1/4 teaspoon Worcestershire sauce
1/4 teaspoon freshly ground black pepper

Steps:

  • Put the Gorgonzola in a small mixing bowl and mash it with a fork. Add the sour cream, buttermilk, mayonnaise, white wine vinegar, Worcestershire sauce and black pepper and whisk to combine. Serve or store in an airtight container, in the refrigerator, for up to 1 week.

2/3 c fat-free milk
3-4 Tbsp crumbled blue cheese - or more to taste
1 Tbsp white wine

  • 1. In a small saucepan, saute onions and garlic in butter until tender. Sprinkle with flour; stir until blended. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Add cheese and wine; heat through. Serve sauce with roast or pork.

2 tbsp olive oil
2 cloves garlic, crushed
1 tsp freshly ground four peppercorn blend
1 tsp paprika
1 tsp oregano, crumbled
1 tsp thyme, crumbled
1/2 tsp salt
1/4 tsp cayenne pepper
2 lb (1 kg) beef tenderloin roast
Blue Cheese Sauce*

Steps:

  • To prepare marinade, combine oil, garlic, peppercorn blend, paprika, oregano, thyme, salt and cayenne pepper in a heavy zip-lock plastic bag. Add beef tenderloin and squeeze bag to coat beef with marinade. Seal bag and place on a plate. Refrigerate for at least 1 hour or up to 24 hours.
  • Preheat natural gas barbecue on medium heat for 10 - 15 minutes.
  • Remove tenderloin from marinade and pat dry; discard marinade. Grill tenderloin, turning occasionally, to desired doneness, about 30 - 35 minutes. Let stand 5 minutes before carving. Serve with Blue Cheese Sauce.

One 5-ounce can evaporated milk
1 teaspoon dry mustard
1 teaspoon white wine vinegar
Pinch kosher salt
1 clove garlic

Steps:

  • Place a double boiler over medium heat. Add the cubed cheese and milk and heat, stirring, until the cheese is melted and the mixture is combined, about 5 minutes. Stir in the mustard, vinegar and salt. Grate the garlic into the mixture using a rasp grater; stir to combine. Cook until the flavors meld, an additional 3 to 5 minutes.

4 whole chicken legs, backs removed
3 tablespoons all-purpose flour
3 tablespoons canola oil
1/2 cup white wine
1/2 cup blue cheese, crumbled
2 (10 3/4 ounce) cans condensed cream of chicken soup
1/4 teaspoon salt
1/4 teaspoon pepper
2 lbs asparagus

Steps:

  • Preheat oven to 375 degrees.
  • Cut chicken legs in half at joint.
  • Dredge with flour and set aside.
  • Heat oil in frying pan.
  • Brown chicken pieces on all 4 sides.
  • In a medium bowl, combine wine, blue cheese, soup, salt and pepper.
  • Pour half this mixture into a 12" x 10" glass casserole dish.
  • Place browned chicken on top.
  • Pour remaining soup mixture over chicken.
  • Bake in oven, uncovered, for 30 minutes.
  • Meanwhile, prepare asparagus.
  • Gently bend stalk near end of spear.
  • Stalk will break at point where it becomes too tough to eat.
  • Discard end.
  • Rinse spears under cold, running water.
  • Drain.
  • Cut each spear into 1 1/2" pieces.
  • At end of 30 minutes, remove casserole dish from oven.
  • Scatter asparagus between chicken pieces.
  • Cover tightly with aluminum foil and continue baking for 30 minutes longer or until chicken is cooked.
  • Serve over cooked white rice.
