JEAN'S WHITE WACKY CAKE
Traditionally Wacky Cake is chocolate but my Mom needed a white cake when I was young so she made a small change to the recipe by adding custard powder instead of cocoa. My wife keeps up the tradition (wacky cakes are the only cakes we make) and chooses the color of cake depending on the occasion. It is a great cake on a summer afternoon topped with whipped cream and your favourite fresh fruit.

Steps:
- Sift flour, sugar, custard powder,soda and salt into an ungreased 8"x8" baking dish.
- Punch 3 holes in the flour mixture and add the shortening in the largest hole, vinegar in the next and vanilla in the last hole.
- Cover with cold water.
- Stir with a fork paying attention to the sides and corners.
- Bake in a pre-heated 350 degree oven for 25-30 minutes (until a toothpick comes out clean).
- This recipe doubles easily into a 9"x13" pan.

WHITE WACKY CAKE
I found this recipe on the net and what a find it was! This is an excellent cake with all the attributes of a wacky cake plus new attributes of its own. Like all wacky cakes, it can be made in the ungreased pan and has no eggs. It is moist and easy to make, has excellent flavor and it perfect for strawberry (or any berry) shortcake. It takes well to any flavored frosting and even better if the frosting has nuts! It even makes good cupcakes, though I haven't tried this. I've read that this cake is a variation of something called Patrushka Cake. I think you'll love it.

- Preheat oven to 350 degrees F. Have ready an ungreased 8-inch square cake pan.
- Sift flour, baking soda and powder, sugar and salt into a bowl.
- Make 3 holes in the dry ingredients. Into one hole pour the vanilla, in second hole pour vinegar and into last hole pour melted butter.
- Quickly pour LUKEWARM water over all. Beat well. Pour batter into reserved cake pan. Bake in preheated oven for 30 minutes or till a cake tester comes out cleanly.
- Cake may be served with fresh strawberries and creme fraiche.
- To make a layer cake, make a double recipe and bake in two 9-inch round ungreased cake pans that have been lined with parchment paper for easier removal. Frost with your favorite icing.

- 2. In a medium mixing bowl, mix all the dry ingredients together with a whisk.
- 3. Add all the wet ingredients until well combined.

- Preheat oven to 350 degrees F (175 degrees C). Grease one 9 inch square pan.
- Sift together the flour, 1 cup of the sugar, 1/4 cup of the cocoa, the soda, and the salt. Stir in the vinegar, oil, water, and 1 teaspoon vanilla. Beat until smooth. Pour batter into the prepared pan.

Ultra moist and easy cake from Cook's Illustrated: While the name implies comical roots, Wacky Cake was actually born out of the seriousness of wartime rationing. At various times during the world wars, eggs, butter, sugar, and milk were all in short supply, so inventive home cooks and home economists did their best to create dishes with limited ingredients. Wacky cake is a moist chocolate cake prepared, miraculously enough, without eggs or butter. Despite the omissions, the cake tastes great.

- Important NOTE: The cake relies on the last-minute combination of vinegar and baking soda for leavening. The reaction between the two causes the batter to bubble vigorously, and thus, rise. The cake has to be prepared in its baking pan; otherwise it doesn't rise nearly as well. Make wells in the dry ingredients and add the wet ingredients--oil, vinegar, and vanilla--to the wells, and then add water and stir quickly (but not too much) to blend the batter just moments before you put it into the oven. Streaks of flour should remain.
- Adjust oven rack to middle position and heat oven to 350 degrees. Coat 8-inch-square baking pan with nonstick cooking spray.
- Whisk flour, sugar, cocoa, baking soda, and salt together in pan. Using a spoon, make 1 large and 2 small craters in dry ingredients (the large carter needs to deep enough to hold the oil). Add oil to large crater and vinegar and vanilla separately to remaining small craters. Pour water into pan, using a wooden spoon or spatula, mix the batter, taking care not to overmix; the batter should still contain a few streaks of flour. Immediately put pan in oven.
- Bake until toothpick inserted in center of cake comes out with a few moist crumbs attached, about 30 minutes. Cool in pan, then dust with confectioners' sugar. (If tightly wrapped, cake will keep for 3 days at room temperature.)
- Great with ice cream or whipped cream or both :-).
