DEEP-DISH APPLE PIE

Deep-Dish Apple Pie image

Provided by Ina Garten

Categories     dessert

Time 2h15m

Yield One 9-or 10-inch pie

Number Of Ingredients 19

4 pounds Granny Smith apples, peeled, quartered, and cored
1 lemon, zested
1 orange, zested
2 tablespoons freshly squeezed lemon juice
1 tablespoon freshly squeezed orange juice
1/2 cup sugar, plus 1 teaspoon to sprinkle on top
1/4 cup all-purpose flour
1 teaspoon kosher salt
3/4 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/8 teaspoon ground allspice
Perfect Pie Crust, recipe follows
1 egg beaten with 1 tablespoon water, for egg wash
12 tablespoons (1 1/2 sticks) very cold unsalted butter
3 cups all-purpose flour
1 teaspoon kosher salt
1 tablespoon sugar
1/3 cup very cold vegetable shortening
6 to 8 tablespoons (about 1/2 cup) ice water

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut each apple quarter in thirds crosswise and combine in a bowl with the zests, juices, 1/2 cup sugar, flour, salt, cinnamon, nutmeg, and allspice.
  • Roll out half the pie dough and drape it over a 9- or 10-inch pie pan to extend about 1/2-inch over the rim. Don't stretch the dough; if it's too small, just put it back on the board and re-roll it.
  • Fill the pie with the apple mixture. Brush the edge of the bottom pie crust with the egg wash so the top crust will adhere. Top with the second crust and trim the edges to about 1-inch over the rim. Tuck the edge of the top crust under the edge of the bottom crust and crimp the 2 together with your fingers or a fork. Brush the entire top crust with the egg wash, sprinkle with 1 teaspoon sugar, and cut 4 or 5 slits.
  • Place the pie on a sheet pan and bake for 1 to 1 1/4 hours, or until the crust is browned and the juices begin to bubble out. Serve warm.
  • Dice the butter and return it to the refrigerator while you prepare the flour mixture. Place the flour, salt, and sugar in the bowl of a food processor fitted with a steel blade and pulse a few times to mix. Add the butter and shortening. Pulse 8 to 12 times, until the butter is the size of peas. With the machine running, pour the ice water down the feed tube and pulse the machine until the dough begins to form a ball. Dump out on a floured board and roll into a ball. Wrap in plastic wrap and refrigerate for 30 minutes.
  • Cut the dough in half. Roll each piece on a well-floured board into a circle, rolling from the center to the edge, turning and flouring the dough to make sure it doesn't stick to the board. Fold the dough in half, place in a pie pan, and unfold to fit the pan. Repeat with the top crust.

CRANBERRY-APPLE PIE

Cranberry-Apple Pie image

I would strongly suggest to use a good quality whole cranberry sauce such as Ocean Spray it will really make a difference to the flavor and texture of the filling --- if desired this will also work great using a crumb topping in place of a top crust, I have listed the ingredients and amounts at the bottom of the recipe, or use your own favorite crumb topping recipe.

CRANBERRY-APPLE CRUMBLE PIE

Cranberry-Apple Crumble Pie image

Provided by Gina Marie Miraglia Eriquez

Categories     Food Processor     Bake     Thanksgiving     Cranberry     Apple     Fall     Cinnamon     Butter     Gourmet

Yield Makes 8 servings

Number Of Ingredients 23

For pastry dough:
1 1/2 cups all-purpose flour
3/4 stick cold unsalted butter, cut into 1/2-inch pieces
2 tablespoons cold vegetable shortening (trans-fat-free)
Rounded 1/4 teaspoon salt
3 to 4 tablespoons ice water
For crumble topping:
3/4 cup all-purpose flour
1/4 cup packed light brown sugar
1/2 teaspoon cinnamon
1/8 teaspoon salt
1/2 stick unsalted butter, cut into 1/2-inch pieces
1/2 cup pecans, coarsely chopped
For fruit filling:
2 pounds Gala apples (about 5), peeled, cored, and thinly sliced
8 ounces fresh or frozen (not thawed) cranberries
1/2 cup packed light brown sugar
3 tablespoons all-purpose flour
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 1/2 tablespoons fresh lemon juice
1/2 stick unsalted butter, cut into 1/2-inch pieces
Equipment: a 9 1/2-inch glass deep-dish pie plate (6-cup capacity)

Steps:

  • Make pastry:
  • Blend together flour, butter, shortening, and salt in a bowl with your fingertips or a pastry blender (or pulse in a food processor) just until mixture resembles coarse meal with some roughly pea-size butter lumps. Drizzle 3 tablespoon ice water evenly over mixture and gently stir with a fork (or pulse) until incorporated.
  • Squeeze a small handful: If dough doesn't hold together, add more ice water, 1/2 tablespoon at a time, stirring until incorporated. Do not overwork dough or pastry will be tough.
  • Turn out dough onto a lightly floured surface and divide into 4 portions. With heel of your hand, smear each portion once or twice in a forward motion to help distribute fat. Gather all dough together (using a pastry scraper if you have one) and form into a 5-inch disk. If dough is sticky, dust lightly with additional flour. Chill, wrapped in plastic wrap, until firm, at least 1 hour.
  • Make crumble topping:
  • Stir together flour, brown sugar, cinnamon, and salt in a bowl. Blend in butter with your fingertips until large clumps form, then stir in pecans. Chill until ready to use.
  • Make fruit filling:
  • Stir together apples, cranberries, brown sugar, flour, cinnamon, salt, and lemon juice in a large bowl.
  • Assemble pie:
  • Preheat oven to 425°F with rack in lower third.
  • Roll out dough on a lightly floured surface with a lightly floured rolling pin into a 13-inch round, then fit into pie plate. Trim edge, leaving a 1/2-inch overhang, then fold overhang under and crimp decoratively. Transfer fruit filling to pie shell and dot with butter. Loosely cover with foil and bake until apples droop slightly, about 30 minutes.
  • Reduce oven temperature to 375°F. Sprinkle crumble topping over filling and bake, uncovered, until crumble is browned, filling is bubbling, and apples are tender, 45 minutes to 1 hour more. Cool completely, 2 to 3 hours.

DEEP-DISH DRIED-APPLE AND CRANBERRY PIE

Deep-Dish Dried-Apple and Cranberry Pie image

Try a new kind of apple pie this year: This one contains the dried fruit, which offers deep flavor and a pleasant chew. Tart cranberries, cooked until just bursting, lend extra dimension, and the slightly crackly brown-sugar-and-oats topping complements an easy press-in crust.

Time 7h20m

Number Of Ingredients 19

2 cups all-purpose flour, plus more for dusting
1 1/2 teaspoons coarse salt
1 tablespoon granulated sugar
1 1/2 sticks chilled unsalted butter, cut into 1/2-inch pieces
1 tablespoon apple-cider vinegar, preferably unfiltered
2 to 4 tablespoons ice water
10 ounces dried apple rings (about 6 cups)
4 cups apple cider, preferably unfiltered
1/2 cup packed light-brown sugar
1 cinnamon stick
1/4 teaspoon coarse salt
12 ounces fresh or thawed frozen cranberries
3 tablespoons all-purpose flour
1/3 cup granulated sugar
1/2 cup all-purpose flour
1/3 cup old-fashioned rolled oats
1/3 cup packed light-brown sugar
1/4 teaspoon coarse salt
5 tablespoons unsalted butter, room temperature

Steps:

  • Crust: Pulse flour, salt, and sugar in a food processor to combine. Add butter and pulse until pea-size clumps form. Whisk together vinegar and 2 tablespoons ice water in a small bowl. Drizzle over flour mixture; pulse until mixture just begins to hold together when pinched. (If too dry, drizzle with more water, 1 tablespoon at a time, and pulse a few more times.) Transfer dough to a piece of plastic wrap, cover, and press into a disk. Refrigerate until firm, at least 30 minutes and up to 1 day.
  • Roll out dough to a 13-inch round on a lightly floured work surface. Press into bottom and up sides of a 9-inch springform pan. Trim dough flush with rim, using excess to patch any cracks or holes in crust. Refrigerate until firm, at least 30 minutes and up to 1 day.
  • Filling: Meanwhile, bring apples, cider, brown sugar, cinnamon, and salt to a boil in a large saucepan. Cover, reduce heat to medium, and boil, stirring occasionally, until apples are tender, 12 to 15 minutes. Stir in cranberries and boil, uncovered, just until cranberries begin to burst, 3 to 4 minutes.
  • Drain, reserving liquid. Transfer apple mixture to a bowl; discard cinnamon stick. Return liquid to pan; boil until reduced to 2/3 cup, 8 to 10 minutes. Toss with apple mixture. Let cool completely, then stir in flour and granulated sugar.
  • Crumb topping: Combine flour, oats, brown sugar, and salt in a medium bowl. Massage butter into flour mixture with your fingers until mixture clumps together and no dry flour remains. Press into bottom of bowl and refrigerate until firm, about 20 minutes.
  • Preheat oven to 375 degrees. Place piecrust on a foil-lined rimmed baking sheet. Pour filling into crust. Break up topping into large pieces and sprinkle over filling. Bake until bubbly and crust is golden brown, 1 hour to 1 hour, 15 minutes. (If crust is browning too quickly, tent with foil.) Let cool completely on a wire rack before removing sides of pan; serve.

CRANBERRY APPLE PIE

Cranberry Apple Pie image

Many years ago when recipes for apple pie with cranberries were not all that plentiful, I transformed one of my pie recipes & came up with an apple pie that is chuck full of cranberries! For this pie I prefer Pipins.

Provided by Sydney Mike

Categories     Pie

Time 1h25m

Yield 10 serving(s)

Number Of Ingredients 11

1 pastry for double-crust deep dish pie
1 cup corn flakes, lightly crushed
1/2 cup raisins
1 (12 ounce) bag cranberries
1/4 cup apple cider
1/4 cup cranberry liqueur
1 1/2 cups sugar
4 1/2 tablespoons cornstarch
1/2 teaspoon ground mace
6 cups tart apples, peeled & sliced
1/2 tablespoon unsalted butter

Steps:

  • Prepare your favorite pie pastry, enough for a 2-crust, deep dish pie, then form into 2 balls, one slightly smaller. Wrap the smaller ball in wax paper & chill.
  • Roll out the larger ball & line a 9.5" deep dish pie plate, leaving a 3/4" overhang. Sprinkle crushed corn flakes into the bottom of the pie shell, then put the plate in the refrigerator to chill.
  • In a saucepan combine raisins, berries, cider & liqueur. Cook & stir 5-8 minutes until berry skins pop.
  • Preheat over to 425 degrees F & make sure that 2 of the racks are in the 2nd & 3rd positions from the bottom.
  • Combine sugar, cornstarch & mace, then stir this mixture into the hot cranberry mixture. Cook quickly, stirring constantly, until mixture thickens & bubbles. Remove from heat & stir in apples. Set aside to cool.
  • Roll out rest of pie pastry to make an 11" circle, then cut it into 1/2" wide strips.
  • Spoon the cooled cranberry/apple mixture into the chilled pastry lined plate & dot with butter.
  • Weave pastry strips on top of the filling to make a lattice crust, then flute edge to stand up high. Cover edge with foil or a pie 'edge liner' shiny side up, to prevent over browning.
  • Bake 20 minutes on the lower rack, then move to the upper rack & bake another 10 minutes. Remove the edge liner & bake another 25-30 minutes or until crust is golden brown. Cool completely on a wire rack before refrigerating.
