WHITE SANGRIA
This sangria takes five to 10 minutes to assemble in a large pitcher. Take the time to prepare it in the morning so the sangria has several hours to develop its fruity flavor. Pull it out when dinner is ready to serve that evening.

- Combine sugar, Calvados, lime, lemon, peaches and apples in a large pitcher. Cover with 1 bottle of Rioja wine and chill sangria several hours. To serve, spoon fruits into glasses or goblets, adding a few fresh raspberries in each glass, pour wine over top of the fruit. Top glasses of sangria off with a splash of soda water and serve.

- Wash and slice the fruit to your liking. I recommend slicing the grapes in half, and other fruits into cubes or thin slices.
- Place all the fruit into a large bowl and cover with the sugar. Stir gently. Leave to macerate for at least five minutes, but longer if you have the time (overnight would be perfect). Stir again if needed until almost all of the sugar is dissolved.
- Add this entire mixture to a large pitcher filled 3/4 of the way with your white wine. Mix together gently with a wooden spoon.

- First make the honey syrup. In a small saucepan heat the water until it comes to a simmer. Stir in the honey and return to a simmer. Simmer for 2-3 minutes. Remove from the heat and let cool. Proceed after the honey syrup is completely cooled. You can make this ahead of time and store it in an airtight container in the fridge.
- In a large pitcher, stir together 1/4 cup + 2 tablespoons of the honey syrup, a 1/2 bottle of the wine, and the brandy. Add in the oranges and lemons. With a wooden spoon lightly press on the fruit to release some of their juices. Pour in the rest of the wine. Add the nectarines and the blackberries and stir gently. Cover with plastic wrap and refrigerate for at least 4 hours before serving. You could prepare it as soon as 24 hours in advance.
- When ready to serve, remove the sangria from the refrigerator and give it a gentle stir. Fill wine glasses with ice and add several pieces of fruit to each glass. Pour the sangria over and enjoy!
