MERRY CHERRY BARS
It just wouldn't be Christmas at my house without these special bar cookies- so pretty using red and green maraschino cherries and candy coated chocolates.

Steps:
- Preheat the oven to 300 degrees F (150 degrees C).
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in the egg and almond extract. Combine the flour and salt; stir into the creamed mixture until well blended. Mix in 1/2 cup of the cherries. Press the dough into an ungreased 9x13 inch baking pan. Sprinkle with remaining cherries and crushed candies. Press in lightly.
- Bake for 30 to 35 minutes in the preheated oven, or until edges are lightly browned. Cool completely in the pan before icing. To make the icing, mix together the confectioners' sugar and water until a drizzling consistency is reached.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla. Combine the flour, baking powder and salt; stir into the creamed mixture. Reserve 1 1/2 cups of the dough and spread the rest into the bottom of the prepared pan. Cover this layer evenly with cherry pie filling. Drop the rest of the dough by spoonfuls on top of the cherry layer and spread to cover the best you can.
- Bake for 35 to 40 minutes in the preheated oven, until top is golden. Frost with a confectioners' glaze when cool for sweeter bars. Let cool completely before cutting into bars.

- Preheat oven to 350°. In a large bowl, cream butter, sugar and salt until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in extracts. - In 1-quart wide-mouth glass jar, gently layer and pack ingredients in the order listed, beginning with the white chocolate or vanilla chips. If there is any space left after adding the last ingredient, add more white chocolate or vanilla chips to fill the jar. Place lid on top. Cut an 8-inch circle of fabric to cover lid. Place fabric over lid; secure in place with ribbon or raffia. Decorate as desired.

- Combine sugar, milk, marshmallows and margarine in a saucepan.
- Cook over medium heat and bring to a boil stirring constantly.
- Boil for 5 minutes at a rolling boil and stir the entire time.
- Remove from heat and add cherry chips and vanilla.
- Pour into a 9 x 13 inch lightly greased pan and let cool and set up. (Speed up the process by placing in the fridge.)
- Melt chocolate chips in a microwave safe bowl and add peanut butter and chopped peanuts.

- Wash and thoroughly dry a 1-quart wide-mouth canning jar.
- Layer the ingredients in the jar as listed above starting with the flour, baking powder, soda, salt, sugar, oatmeal, white chocolate chips, cherries and then walnuts - make sure to press firmly with a flat bottomed object after each addition; make the layers as level as possible.
- Secure the lid and decorate as desired; attach the instructions for making these cookies found below.

CHERRY CHOCOLATE NUT BARS RECIPE
Cherry chocolate nut bars are the perfect treat. They have all of the crunch along with sweet and chewy marshmallow textures.

Steps:
- Melt chocolate chips and peanut butter on low in the microwave. Stir well and add the chopped peanuts. Spread half of this mixture in a 9 x 13 inch glass pan sprayed very lightly with non stick cooking spray. Place in fridge to set up.
- Melt marshmallows in the microwave on very low stirring every 20 seconds. When melted and smooth, stir in the frosting.
- Spread this mixture carefully on top of the chocolate layer. Let cool in the fridge.
- Top with remaining chocolate for the last layer. If it has set up a little, just microwave it for about 30 seconds and stir well. Be sure to spread each layer to the edges of the pan.
- Refrigerate until firm. Cut into pieces - about 48.
- Store in refrigerator.

These luscious bars, filled with cherries and almonds, really suit the Christmas season. I sometimes put a cup of coconut in a clean jar with a few drops of red food coloring. After a few shakes, I have tinted coconut to sprinkle on top.
