COCONUT BANANA BREAD
White chocolate is the wonderfully different addition to this tropical-tasting bread. The moist slices are so scrumptious, they disappear as soon as I serve them.

Steps:
- In a bowl, combine butter and sugar; mix well. Add eggs and extracts; beat on high speed until thickened. Stir in bananas. Combine the flour, baking soda and salt; gradually add to banana mixture. Fold in the chocolate, coconut and pecans. Transfer to two greased 8x4-in. loaf pans. Bake at 350° for 70-75 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks.

- Heat oven to 350°F.
- Mix flour, sugar, baking powder, baking soda and salt in large bowl.
- Beat eggs in small bowl; stir in bananas, oil and water.
- Add to flour mixture; stir just until moistened.
- Stir in cereal, walnuts and white chocolate chips.
- Pour into greased 9 x 5-inch loaf pan.
- Bake 55 to 65 minutes or until toothpick inserted in center comes out clean.
- Cool 10 minutes; remove from pan.
- Cool completely on wire rack.
COCONUT CHOCOLATE CHIP BANANA BREAD
A twist on the classic banana bread, replacing the traditional walnuts with coconut flakes and chocolate chips. I combined and tweaked several traditional recipes to come up with this one. Some suggested additions or substitutions: white, dark, or milk chocolate chips instead of the semi sweet and/or adding chopped macadamia nuts. Hope you enjoy!

- Preheat oven to 350 degrees F. Grease 9x5x3 loaf pan.
- Mix flour, coconut, baking powder, baking soda and salt together in a small bowl. Set aside.
- In a mixing bowl, beat the eggs until frothy. Add sugar, butter/margarine, banana, applesauce and vanilla and beat well.
- Add dry ingredient mixture all at once and stir until just combined.
- Gently stir in the chocolate chips. Pour batter in the greased pan.
- Bake for 1 hour or until toothpick inserted in the middle comes out clean.
- Let stand to cool slightly (about 10 minutes), and then remove from pan.
CHOCOLATE HAZELNUT BANANA BREAD

- Preheat the oven to 350 degrees F. Lightly brush the inside of a 10-by-5-inch loaf pan with coconut oil and line with a strip of parchment paper. Set aside.
- Mash the bananas with the back of a fork in a large bowl until only a few lumps remain. Add the eggs and mix until smooth. Using the fork, whisk in the coconut oil, yogurt, sugar, salt and vanilla until smooth and incorporated. Add the flour and baking soda and use a rubber spatula to stir until combined, being careful not to overmix. Fold in the hazelnuts, if using, and the chocolate chips.
- Pour half of the batter into the prepared pan. Dollop half of the hazelnut spread over the top of the batter. Swirl the spread into the batter using the tip of a knife. Top with the remaining batter and repeat with the remaining hazelnut spread. Bake until the bread is firm to the touch and a toothpick inserted in the center comes out with very few crumbs (the streaks of hazelnut spread will still be wet), 1 hour to 1 hour and 5 minutes. Allow to cool for 30 minutes in the pan.
- Turn the pan on its side and let rest an additional 30 minutes. Loosen the edges with a knife and remove to a wire rack to cool completely. The bread will keep for 4 days at room temperature.

- Crush bananas.
- Mix bananas, coconut oil, and eggs in a Kitchenaid mixer or with a hand mixer.
- Add flour, soda, salt, vanilla and mix again.
- Add coconut and chocolate chips and blend in by hand.
- Pour into a greased loaf pan (or muffin pan if you'd prefer muffins - cut baking time to 20-25 min.).
- Bake for 50-60 minutes in a preheated 350 degree oven.

This version incorporates other reviewers' suggestions to use a mix of white and brown sugar and to use butter instead of margarine. It also includes a little coconut and cinnamon. - Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5-inch loaf pan.
- Cream white sugar, brown sugar, and butter together in a large bowl until smooth. Beat in eggs, one at a time. Stir in banana, sour cream, and vanilla.
- Whisk flour, baking powder, baking soda, and salt together in another bowl; gently stir into wet mixture just until combined.
