24 chocolate sandwich cookies
4 tablespoons salted butter, melted
1 1/2 cups sugar
1/4 cup cornstarch
1/4 teaspoon salt
3 cups whole milk
4 large egg yolks
2 vanilla beans, seeds scraped out (caviar)
8 ounces white chocolate, chopped finely
2 tablespoons salted butter
Grated semisweet chocolate, to decorate

Steps:

  • For the crumb base: Throw the cookies and melted butter into a food processor and pulverize. Spoon some into the bottom of the serving glasses and set aside.
  • For the pudding: Combine the sugar, cornstarch and salt in a medium saucepan. Stir or whisk together. Pour in the milk and egg yolks and whisk together. Add the vanilla. Stir over medium heat until the mixture just barely comes to a boil and becomes thick, 6 to 8 minutes (maybe less, maybe more; just watch it!). The second it starts to bubble and thicken (note: it should be thick like pudding!), remove it from the heat. Add the white chocolate and butter and stir until everything is beautifully combined.
  • Pour the pudding into the glasses on top of the crumb base. Serve warm or chill in the fridge for 2 hours. Decorate with grated semisweet chocolate.

1/2 cup short grain rice
1/3 cup golden baker's sugar
1 1/3 cups 1% milk
1/2 cup half-and-half
3 whole cardamom pods, seeds removed and ground to a powder
3 1/2 oz white chocolate, grated
For the Sauce:
1/3 cup marmalade
1/3 cup Cointreau

Steps:

  • Place the rice and sugar into a medium saucepan, then pour in the milk and half-and-half. Add the cardamom powder.
  • Bring to a boil, then lower the heat and simmer for 15 to 20 minutes, until the rice is swollen and tender. Add a little hot water if it's looking a little dry.
  • Remove from the heat and stir in the grated white chocolate. Cover the pan and set aside.
  • To make the sauce, combine the marmalade with the Cointreau and heat gently in a pan.
  • Divide the rice pudding between four bowls and drizzle with the sauce.
  • Serve decorated with a few shavings of white chocolate, if desired.

175g butter , plus extra for the basin
45g cocoa powder
175g plain flour
¼ tsp bicarbonate of soda
1 tsp baking powder
200g light brown soft sugar
1 orange , zested
3 large eggs , lightly beaten
115g soft-set marmalade , beaten to loosen
100g dark chocolate , chopped
300ml double cream
1 heaped tbsp icing sugar
125g soft-set marmalade , beaten to loosen, plus extra to serve

Steps:

  • Butter a 1.2-litre pudding basin and put a circle of buttered baking parchment in the base.
  • Sift together the cocoa, flour, bicarb, baking powder and a pinch of salt. Beat the butter and sugar together in an electric mixer until pale and fluffy, then add the orange zest. Gradually add the eggs, a little at a time, beating well after each addition. Stir in the marmalade. Fold in the sifted ingredients followed by the dark chocolate chunks. Scrape the batter into the prepared pudding basin.
  • Put a piece of baking parchment on top of a sheet of foil (both should be large enough to cover the basin and overhang the edges). Fold a pleat along the middle, then place this, parchment side down, onto the pudding. The pleat should run across the centre. Tie to the basin firmly with string, using it to make a handle. Trim off the excess parchment and foil.
  • Put the pudding in a large saucepan on a trivet or upturned saucer. Add enough boiling water to come one-third of the way up the sides of the basin. Bring the water to the boil, turn down to a simmer, cover the pan and steam the pudding for 2 hrs-2 hrs 15 mins. Keep topping up with hot water.
  • Lift the pudding out of the pan, leave to sit for 10 mins, then run a knife between the basin and the edge of the pudding. Invert onto a plate - the pudding should slide out. Remove the parchment.
  • Whip the cream and icing sugar to soft peaks, then stir in the marmalade. Serve the pudding with a dollop of the cream and some marmalade on top.

1 tablespoon vanilla extract

4 ounces good-quality white chocolate (recommended: Lindt or Valrhona), chopped
1 tablespoon grated orange zest
1/4 teaspoon ground cinnamon
Warm Cherry Sauce, recipe follows
Whipped cream, for garnish, optional
1/4 cup slivered almonds, toasted, for garnish
1 cup cherry preserves
1/4 teaspoon ground cinnamon
3 tablespoons kirsch (cherry brandy)

Steps:

  • Combine first 5 ingredients in a heavy, large saucepan. Cook over medium-low heat until mixture thickens and rice is very tender, stirring occasionally, about 1 hour.
  • Reduce heat to low. Whisk egg yolks and cream together in a small bowl. Gradually whisk 1/2 cup rice mixture into egg mixture; return mixture to the saucepan and cook for 2 minutes, stirring constantly; do not let boil. Remove from the heat. Add white chocolate and stir until melted. Stir in the orange zest and cinnamon. Transfer pudding to a large bowl, cover, and chill until cold. Serve in bowls or large goblets with Warm Cherry Sauce, whipped cream, and toasted almonds on top, or layer in parfait glasses.
  • Bring preserves and cinnamon to a simmer in a medium saucepan over low heat. Remove from the heat, add the kirsch, and carefully ignite with a long match or just warm through.

1/4 cup Italian short-grain rice, such as Carnaroli or Arborio
1/4 teaspoon kosher salt
2 tablespoons plus 3/4 cup granulated sugar (for caramel)
1 teaspoon pure vanilla paste or extract
1/4 cup light corn syrup
1 1/4 cups heavy cream
1/2 teaspoon flaky sea salt, such as Jacobsen
Chopped pistachios, raisins, dried apricots, and toffee bits, for serving
Fresh raspberries and blackberries, for topping

Steps:

  • Bring milk, rice, and kosher salt to a boil in a medium saucepan, then reduce heat to low. Simmer uncovered, stirring occasionally, until mixture has the texture of creamy porridge, 30 to 35 minutes. Stir in 2 tablespoons sugar and vanilla. Transfer to a bowl and let cool completely.
  • Meanwhile, in another medium saucepan, stir together remaining 3/4 cup sugar and corn syrup. Cover and cook over medium-high heat until sugar has dissolved and mixture boils, about 5 minutes. Uncover; continue boiling, swirling pan occasionally until mixture turns amber, 3 to 4 minutes more (if crystals start to form, brush down sides of pan with a wet pastry brush).
  • Carefully add 1/2 cup cream in a steady stream (it will bubble vigorously). Remove from heat, add flaky sea salt, and stir until smooth. Let cool completely.
  • Whisk remaining 3/4 cup cream to soft peaks; fold into cooled rice pudding. Cover and refrigerate until cold, at least 2 hours (and up to 2 days). Serve rice pudding in bowls with caramel sauce, pistachios, dried fruits, toffee, and fresh berries on the side.
