VEGETABLES AND TORTELLINI WITH CREAM SAUCE

Vegetables and Tortellini with Cream Sauce image

It looks complicated but this is actually a quick and hearty meal of veggies, tortellini, and cream sauce. This recipe is great for entertaining because you can put it together ahead of time and throw it under the broiler just before serving.

Provided by Bookwyrm

Categories     Main Dish Recipes     Casserole Recipes     Vegetable

Time 55m

Yield 6

Number Of Ingredients 14

cooking spray
24 ounces frozen cheese tortellini
1 bunch asparagus, diced
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups vegetable stock
¼ teaspoon nutmeg
½ cup heavy whipping cream
½ cup shredded Parmigiano-Reggiano cheese
2 tablespoons olive oil
4 cloves garlic, minced
1 pound fresh spinach, stemmed and chopped
1 (15 ounce) can artichoke hearts, drained and quartered
2 cups shredded Italian cheese blend

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler on high heat. Lightly spray a large casserole pan with cooking spray.
  • Bring a large pot of lightly salted water to a boil. Add tortellini and asparagus and cook in the boiling water until tortellini float to the top, 3 to 5 minutes. Drain, rinse in cold water, and set aside.
  • Melt butter in a medium-sized pan over medium-low heat. Whisk in flour and cook until smooth, 1 to 2 minutes. Whisk in stock and nutmeg and heat until bubbly, about 5 minutes. Add cream and Parmigiano-Reggiano cheese. Heat until thick and bubbly, stirring constantly, about 3 minutes.
  • Heat olive oil in a large pan over medium heat. Add garlic and cook for 1 minute. Add spinach and artichoke hearts. Cook and stir until heated through, about 5 minutes.
  • Combine cooked tortellini-asparagus mixture and spinach mixture in the prepared casserole pan. Mix thoroughly but gently so tortellini don't get mashed. Pour white sauce over the mixture and top with Italian cheese blend.
  • Cook under the broiler until cheese is melted and browned, 5 to 10 minutes. Remove from the oven and let sit 10 minutes before serving.

CREAMY TORTELLINI RECIPE - VEGETARIAN AND EASY

Creamy Tortellini Recipe - Vegetarian And Easy image

Easy and creamy pasta recipe that will melt your heart! Filled with spinach, garlic and cheese, this vegetarian tortellini recipe is warm, delicious and so incredibly creamy! Perfect for dinner.

Provided by Her Highness - Hungry Me

Categories     Dinner

Time 20m

Number Of Ingredients 13

15oz/ 400g cheese tortellini, refrigerated
1 Tbsp olive oil
1/3 cup milk
2/3 cup sour cream
1/2 cup mozzarella, grated
1 1/2 cup baby spinach, fresh
1 small tomato, chopped
1 garlic clove, minced
2 scallions, chopped
2 Tbsp parsley/basil, chopped
Parmesan cheese
black pepper, freshly ground
salt to taste

Steps:

  • Cook tortellini according to the package OR to use just one huge pan for everything: cover the surface of a large, deep pan with the 1 tbsp olive oil, add the tortellini and at medium-high, stir for 30seconds to a minute, mine turned golden-brown. Then, to calm that fire - add in the milk, stir and cook for a minute.
  • Add the sour cream, reduce the heat a little bit and stir for around 2-3 minutes, until the sauce thickens.
  • Stir in all the vegetables - garlic, scallions, tomato, spinach, parsley. Grind black pepper.
  • Lastly add in the grated mozzarella cheese, so the sauce thickens up some more and stir well. Have a taste and if needed - add salt and pepper. I add A LOT of pepper to this recipe.
  • Take off heat, serve immediately and top with Parmesan cheese - makes it even better.

TORTELLONI WITH CREAMY TOMATO SAUCE AND SPINACH

Tortelloni with Creamy Tomato Sauce and Spinach image

Make this easy creamy tomato sauce for your stuffed pasta like tortelloni or tortellini in a matter of minutes.

Provided by Julia Frey of Vikalinka

Categories     Main Course

Number Of Ingredients 8

1 lbs fresh tortelloni (or tortellini)
4 tbsp sun-dried tomato pesto (I used Scala or Delallo in the US)
1-2 cloves garlic
4 basil leaves or 1/2 tsp dried basil
250ml/1 cup double/heavy whipping cream
30g/1 cup fresh spinach
50g/1/2 cup Parmesan Cheese or other hard cheese like Asiago or Pecorino
salt to taste

Steps:

  • Set a large pot of salted water boiling and cook the tortelloni according to package instructions.
  • Meanwhile in a large and deep pan heat the sun-dried tomato pesto together with minced garlic over low heat and fry while stirring for no longer than 30 seconds. Then add the heavy cream and whisk to combine. Bring to a simmer, then add the spinach and let it wilt for a minute, then stir in the grated cheese. Take off the heat and keep warm.
  • Drain the tortelloni while reserving 1/2 cup of pasta water. Add the tortelloni directly to the sauce and toss gently to combine. If the dish is a bit dry add a splash of the reserved pasta water to loosen it until the right consistency. Serve immediately with additional grated Parmesan and black pepper.

CHEESE TORTELLINI WITH SUMMER VEGGIES

Cheese Tortellini with Summer Veggies image

An easy tortellini recipe! Made with rich cheese tortellini, fresh sautéed zucchini, tomatoes, corn, and onion, and it's all coated in an herby marinara sauce. Quite easily a perfect summer dish!

Provided by Jaclyn

Categories     Main Course

Time 30m

Number Of Ingredients 12

20 oz. refrigerated three cheese tortellini
2 Tbsp extra virgin olive oil
1 medium yellow onion, (chopped (1 1/2 cups))
2 ears corn, (kernels cut from cobs (about 2 cups))
2 cups (12 oz) grape tomatoes
2 medium (12 oz total) zucchini, (sliced into half moons about 1/4-inch thick)
3 garlic cloves, minced ((1 Tbsp))
1 1/4 cups marinara sauce ((half of a 24 oz jar))
Salt (and freshly ground black pepper)
1/2 cup finely shredded parmesan cheese, (divided)
1/4 cup chopped fresh basil
1/4 cup chopped fresh parsley

Steps:

  • Bring a large pot of lightly salted water to a boil to cook tortellini, cook tortellini a minute shy of cook time according to directions on package. While water is coming up to a boil it's a good time to prep and cook the vegetables.
  • In a 12-inch saute pan or deep skillet heat olive oil over medium-high heat.
  • Add onion and saute 3 minutes. Add corn and saute 2 minutes more.
  • Add tomatoes then saute 3 minutes. Add zucchini and garlic and saute until veggies are tender and many of the tomatoes have burst, about 6 to 8 minutes longer (note that during this period it's about the right time to add the tortellini to pot of boiling water so they finish up at the same time).
  • Drain the tortellini while reserving about 1/4 cup of the pasta water.
  • Transfer tortellini and the marinara sauce to the pan with veggies. Cook and toss until tortellini is tender about 1 to 2 minutes. If needed add a splash of pasta water to thin.
  • Season with salt and pepper to taste. Toss in 1/4 cup parmesan, the basil and the parsley.
  • Serve right away topping individual servings with remaining 1/4 cup parmesan.
