EASTER DEVILED EGGS
A very easy, special touch for Easter and fun to do at baby showers as well. Do some plain white ones to keep everyone happy.

Steps:
- Place eggs into a large saucepan, cover with cold water, and bring to a boil. Let eggs boil for 3 minutes; turn off heat, cover pot, and let eggs cook in hot water for at least 20 minutes. Drain and cover eggs with cold water. Peel cooled eggs.
- Cut hard-cooked eggs in half lengthwise and remove yolks; mash yolks in a bowl with creamy salad dressing, salt, black pepper, hot sauce, and dry mustard until smooth.
- Place red, blue, and green food coloring into 3 different bowls and add about 1 cup water to each bowl. Steep 8 egg white halves in each bowl, tinting the egg whites pink, light blue, and green. If color is too pale, add more coloring to bowls. Drain colored egg whites on paper towels.
- Pipe or spoon egg yolk filling into colored egg white halves; cover and chill before serving, at least 30 minutes.

HEALTHIER DEVILED EGGS WITHOUT MAYO
These healthy deviled eggs made with Greek yogurt are full of flavor and oh so creamy. Transformed with beautiful pastel colors, they make the perfect secretly healthy appetizer for Easter, baby showers, and birthday parties.

Steps:
- Slice each egg in half and remove the yolk.
- Place the yolks of the eggs in a bowl. Use a fork to mash the yolks. Add the Greek yogurt, mustard, vinegar, salt, and pepper to the bowl and stir until well combined.
- To dye the egg whites, fill four small bowls with ½ cup of water. Add two to three drops of food coloring to each bowl and stir to combine. Place one egg white in each bowl and allow to soak for at least five minutes. The longer the egg is left in the water, the brighter the color will be.
- When you're satisfied with the color, remove the egg and place it on a plate to dry. Continue adding more egg whites until all the eggs have been dyed
- When the eggs are dry, spoon or pipe the egg yolk mixture back in and serve.

DEVILED EGGS
This recipe was my Mother's and she taught me to make them. My sons and their families always request these eggs for all family get-together dinners.

Steps:
- Peel shells off cooled hard-boiled eggs; slice into halves lengthwise.
- Remove yolks from whites and place in a small round bowl.
- Mash yolks with a fork into fine pieces.
- Add 2 heaping tablespoons Mayonnaise, yellow mustard, diced gherkins and finely chopped jalapeno (seeds removed), and salt and black pepper to taste.
- Stir mixture until creamy.
- Spoon mixture into a zip-lock sandwich bag; seal bag and snip off one corner of the bag.
- Squeeze mixture out of corner of bag into egg white halves.
- Sprinkle tops of filled deviled eggs with paprika.
- Chill in refrigerator 1 to 2 hours or until cold before serving.

CLASSIC DEVILLED EGGS
Make devilled eggs to serve at a Boxing Day buffet. They're filled with mustard, spring onions, mayo, yogurt and a pinch of cayenne. Top with chives, if you like

- Put the eggs in a pan of just simmering water and cook for 10 mins. Turn off the heat, and leave the eggs to rest in the hot water for 2 mins. Drain, then transfer the eggs to a bowl of ice-cold water and leave to cool. Peel the eggs and slice in half, then scoop the yolks out into a bowl with the mayonnaise, yogurt, mustard, spring onions, celery salt and cayenne pepper. Mash everything together until smooth, then spoon into a piping bag fitted with a plain round nozzle.
- Pipe the mixture into the hollowed-out eggs, or carefully spoon into the middles using a small spoon. Sprinkle over some chives, if using, then serve.

- Slice eggs lengthwise and carefully remove yolks. Place yolks in a mixing bowl and whites on a platter.
- Mash yolks with a fork or potato masher.
- Mash in the miracle whip, mustard, pepper and salt.

- Lightly sprinkle with paprika just for flavor.
