BEEF BARLEY SOUP
This soup is lovingly simmered on the stove or in the crock pot to produce the richest Beef Barley Soup recipe I've ever tasted. Shredded carrots and potatoes give it a fabulous, thick texture.

Steps:
- Generously salt and pepper the beef. In a large stockpot, heat the oil over medium-high heat.
- When it is very hot, add about 1/3 of the meat. Brown for about 1-2 minutes, then turn to brown the other side. Remove to a plate when it is browned on all sides.
- Repeat with remaining meat in 2 more batches. (If you add it all at once it will steam the meat instead of browning it--not what you want.)
- When all the meat is browned, add all the meat back to the pot with 10 cups of water. Add 3 healthy tablespoons beef stock concentrate.
- Add the chopped celery, onions, and garlic. Bring to a boil, then turn the heat to medium-low. Simmer for about 2 hours with the lid on.
- When the meat is tender and you can break it apart easily with a wooden spoon, add the shredded potato and carrots. Bring to a boil, then continue to simmer on low for another 30-45 minutes, or until the carrots are tender.
- Add 1 cup of barley. Bring to a boil, then reduce to low. Cook for another half hour, or until barley is tender and the soup tastes...like home.

- 1. Preparation Instructions: In a 1 1/2 pint jar, layer the first eight ingredients in the order listed. Seal tightly. Yield 1 batch. To prepare soup, carefully remove macaroni from the top of the jar and set aside. In a large saucepan, or Dutch oven, brown beef; drain. Add the water tomatoes and soup mix. Bring to a boil. Reduce heat, cover and simmer for 45 minutes. Add the reserved macaroni, cover and simmer for 15 to 20 minutes or until the macaroni, peas, lentils, and barley are tender. Yields 4 quarts.

- Put 6 cups water, the beans, barley, garlic, carrots, celery, onions, bay leaf, 11/2 tablespoons salt, herb blend, some pepper and porcini mushrooms (if using) in a slow cooker. YELLOW SPLIT PEA AND BARLEY SOUP
Meatless, non-dairy, delicious comfort food. Anyone entering the house and inhaling the aroma while you are preparing this soup will be drooling. This recipe was my mother's which I modified to make it vegetarian. My mother used to use chicken stock. If you promise not to tell her, I think it is a lot better than her's was. I made it for her and she swears it is her recipe. I never let on that it isn't. Everyone who tastes this soup loves it.

- In a large teflon coated frying pan over medium heat, saute 1/2 the onions with the oil until soft and dark brown.
- Turn off heat.
- Add crushed garlic.
- Set aside.
- Put carrots, celery, 1/2 of the chopped onions, split peas and the powdered chicken-flavored consomme into an 8 quart pot.
- Fill with cold water till about 1 inch from top.
- Cover and bring to a boil.
- Once it has come to a boil, reduce heat, stir in bay leaves and barley.
- Simmer covered for 2 hours (until all the liquid is and remains cloudy).
- Stir in the onions and garlic and simmer for an additional half hour. Season to taste.
- Sprinkle some croutons on top fo ladled soup and serve.
- Or ladle into containers and refrigerate for up to a week or freeze for up to 6 months. To reheat, microwave on high until hot, add water if it is too thick and re-season if necessary.

- Bring the barley, 3 1/2 cups water and 1/2 teaspoon salt to a boil in a medium saucepan over high heat. Reduce heat to low, cover and simmer until the barley is chewy but tender, about 50 minutes.
- Meanwhile, add the bacon in a single layer to a large nonstick skillet over medium heat and cook, stirring occasionally, until golden brown and crisp, about 6 minutes. Remove the skillet from the heat and transfer the bacon with a slotted spoon to paper towels to drain; reserve the bacon drippings in the skillet.
- Return the skillet to medium heat and melt the butter in the bacon drippings. Add the onion and 1/4 teaspoon salt and cook, stirring occasionally, until deep golden brown, about 25 minutes. Add the peas and stir until heated through, about 1 minute.

- Layer all together in a jar or plastic bag.
- For preparation, add 8 C Chicken or Beef or Vegetable Broth, optional vegetables of your choice, 3 pounds meaty ham hocks or 1 pounds lean ham (or other type of meat) diced.
- include these directions: Sort and Rinse beans.
- In large covered pot combine beans with 8 cups of water.
- Bring to boil and boil for 5 minutes.
- Remove from heat, for 1 hour, (drain cover with water and refrigerate overnight) OR Drain and rinse.
- Combine beans with broth, rice, onion and spices.
- Bring to a boil, reduce heat, cover, and simmer 3-4 hours or until beans are tender.
- Stir occasionally and add water as needed so that the beans are well covered.
- Add tomatoes the last hour of cooking.
- Remove bay leaf before serving.
- OR After draining beans combine all ingredients except tomatoes in a slow cooker on high for most of the day.
- Add tomatoes during last bit and serve remember to remove the bay leaf.

- Heat the oil in a saucepan over a medium heat, add the onion, fennel and garlic, and cook until softened and just beginning to brown, about 10-12 mins.
- Mash half the chickpeas and add to the pan with the tomatoes, stock and barley. Top up with a can of water and bring to the boil, then reduce the heat and simmer, covered, for 45 mins or until the barley is tender. Add another can of water if the liquid has significantly reduced.

- One recipe to attach to a pint gift jar.
- Empty the pint jar in a large stockpot and cover with water by two inches.
- Let set overnight, the beans will swell.
- Drain the beans and place back into the stockpot.

- Rinse and sort the split peas.
- Add them to a large pot with 6 cups of water, chicken broth, onion, garlic, lemon juice, salt, sugar, parsley, pepper, and thyme.
- Bring to a boil, reduce heat and simmer for 1-1 1/2 hours or until the peas are soft.
- While the peas are cooking, combine the barley with 6 cups of water in a saucepan.
- Bring to a boil, reduce heat and simmer for 1-1 1/2 hours or until the barley is soft and most of the water has been absorbed.
- When the split pea mixture has become a thick soup, use a handheld blender to puree the peas until the mixture is smooth.
- A standard blender or food processor may also be used to puree the soup in batches.
- This step may also be omitted.
- Drain the the remaining water from the barley and add the barley to the split pea mixture.
- Add the carrots and celery and continue to simmer the soup for 15 to 30 minutes or until the carrots are tender, stirring occasionally.
- Turn off the heat, cover the soup, and let sit for 10 to 15 minutes before serving.
- Garnish each serving with the snipped green onion.
