QUICK AND EASY MINI TACOS



Quick and Easy Mini Tacos image

These mini tacos are a great snack or party food. They're quick, easy, taste great, and put a smile on everybody's face!

1 pound ground beef
⅔ cup water
1 (1 ounce) envelope taco seasoning mix
10 ounces scoop-style tortilla chips (such as Tostitos® Scoops!®)
1 (8 ounce) package shredded Cheddar cheese

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Stir in water and taco seasoning mix. Bring to a boil; reduce heat and let simmer, stirring occasionally, for 5 minutes.
  • Lay scoop-style tortilla chips out on a microwave-safe plate, and spoon in the prepared beef, working in batches as needed. Sprinkle Cheddar cheese on top and microwave until the cheese on top is completely melted, about 1 minute. It will be hot so don't eat it right away. Serve warm.

2 pounds ground beef
1 can (15 ounces) black beans
1 can (16 ounces) kidney beans
1 can (15 ounces) pinto beans
1 can (14 ounces) hominy
1 can (10 ounces) diced tomatoes and green chiles, undrained
1 can (8 ounces) tomato sauce
1 small onion, chopped
1 envelope ranch salad dressing mix
1 envelope taco seasoning
1/2 teaspoon pepper
1 can (4 ounces) chopped green chiles
2 cans (14-1/2 ounces each) diced tomatoes, undrained
Optional toppings: corn chips, sour cream and shredded cheddar cheese

Steps:

  • In a large skillet, cook and crumble beef over medium-high heat until no longer pink, 8-10 minutes. Using a slotted spoon, transfer beef to a 5-qt. slow cooker., Rinse and drain beans and hominy. Add to beef, along with canned tomatoes and green chilies, tomato sauce, onion, the dressing and seasoning mixes and pepper. Puree green chilies and remaining diced tomatoes in a covered blender until smooth; stir into beef mixture., Cook, covered, on low until flavors are blended, 6-8 hours. Serve with toppings as desired., Freeze option: Freeze cooled chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary.

These can be a easy appetizer or a light dinner. I received this recipe in an email from the Campbell's site, and after we made these for a tasty dinner, I knew I had to share!

Number Of Ingredients 9

24 wonton wrappers
1 lb hamburger
1 (1 1/4 ounce) package taco seasoning
1/2 cup salsa or 1/2 cup picante sauce
3 tablespoons salsa
1 cup shredded cheese (cheddar is good, but a Mexican blend would be good too)
sour cream (optional)
olive (optional)
guacamole (optional)

Steps:

  • Cook hamburger until browned.
  • Drain the fat and stir in taco mix and 1/2 cup salsa/picante sauce.
  • Simmer for 3-5 minutes.
  • Press wonton wrappers into mini muffin cups.
  • Spoon beef mixture in cups and top with the 3 tbsp of salsa and cheese, evenly divided.
  • Bake in preheated 425°F oven for 8 minutes, or until the wontons are nicely browned.
  • Serve with extra salsa, sour cream, olives and guacamole if desired.
  • ENJOY!

  • Use a 3 or 4-inch round cookie cutter to cut out as many mini taco shells as you can from the flour tortillas (at least 2 per tortilla). Lightly spray each shell with cooking spray and microwave for 10 seconds to make more flexible. Then, turn a muffin tin upside down and spray with nonstick cooking spray. Fold each warmed shell in half and place in between the muffin spaces to create a “taco” shape. Bake for 5-7 minutes or until lightly golden.
  • In a medium nonstick skillet, brown ground beef and onion for 8-10 minutes or until beef is cooked thoroughly. Drain and stir in chili powder, garlic powder, salt, and pepper. Keep warm on simmer until ready to serve.
  • Fill each baked mini taco shell with ground beef, diced tomatoes, crumbled Cotija cheese, and cilantro. Serve immediately.
