Steps:
- In a mixing bowl, cream shortening and sugar until fluffy; add eggs and aniseed.
- Combine flour, baking powder and salt; add to the creamed mixture; Add apple juice and mix well.
- On a floured surface, knead until well blended, about 4-5 minutes; Roll dough to 1/2-inch thickness; cut into 2-inch shapes.
- Place on greased baking sheets; bake at 375F for 12-16 minutes or until lightly browned.
- Combine sugar and cinnamon; roll cookies in the mixture while still warm; cool on wire racks.

- In a bowl, cream shortening and sugar. Add eggs and vanilla; mix well. Combine flour, baking powder and salt; add to creamed mixture. Stir in aniseed. Chill for 2 hours or until dough is easy to handle. , On a lightly floured surface, roll dough to 1/8-in. thickness. Cut with a 2-1/2-in. cookie cutter. Place 1 in. apart on ungreased baking sheets. Bake at 325° for 7-10 minutes. Cool on wire racks.

- Preheat oven to 350°F. Line 2 heavy large baking sheets with foil. Beat sugar and butter in large bowl until light and fluffy. Add eggs 1 at a time, beating well after each addition. Mix flour, baking powder and salt in medium bowl. Combine brandy, anise extract and vanilla extract in glass measuring cup. Add dry ingredients and brandy mixture alternately to sugar mixture, beginning and ending with dry ingredients. Stir in almonds and aniseed.
- Drop dough by spoonfuls onto prepared baking sheets, forming two 2-inch-wide, 13-inch-long strips on each sheet. Moisten fingertips and smooth dough into logs. Bake until golden and firm to touch, about 40 minutes. Transfer sheets to racks and cool completely.
- Reduce oven temperature to 300°F. Transfer cooled logs to work surface. Using serrated knife, cut logs on diagonal into 3/4-inch-thick slices. Arrange slices on baking sheets.
- Bake cookies until dry and slightly brown, turning every 10 minutes, about 40 minutes. Transfer to rack; cool. (Can be made 2 weeks ahead. Store in airtight containers at room temperature.)

- Cream sugar and shortening, add eggs one at a time. In a separate bowl mix milk, baking soda, and anise oil. Add to cream mixture. Mix well. Gradually add the flour, mixing well.
- Preheat oven to 350 degrees F (180 degrees C).
- Refrigerate long enough to clean up mess. Leave dough in refrigerator. Take small amounts to roll out, 1/8 inch thick. Cut out in any desired shapes.
- Bake 10 to 12 minutes until edges begin to brown. Allow to cool, and frost with Easy Creamy Icing.

CRISP ANISE SEED BUTTER COOKIES
My husband's aunt used to make these cookies every Christmas just for him. You must use real anise seeds. They will please everyone's taste buds.

- Sift together the flour, baking powder and salt; set aside. In a large bowl, cream together the butter and 1 cup sugar until smooth. Beat in the eggs one at a time then stir in the vanilla. Gradually mix in the sifted ingredients and anise seeds until well blended. Cover and chill for several hours or overnight.
- Preheat the oven to 400 degrees F (200 degrees C). Grease cookie sheets. On a lightly floured surface, roll the dough out to 1/4 inch in thickness. Cut into desired shapes with cookie cutters. Place cookies 1 1/2 inches apart onto cookie sheets. Sprinkle the tops with a mixture of the remaining 1/4 cup of sugar and cinnamon.
- Bake for 8 to 10 minutes in the preheated oven, until light brown. Cool on baking sheets for a few minutes before removing to wire racks to cool completely. Happy Holidays!

- When ready to bake, preheat oven to 350 degrees. Line baking sheets with parchment paper or silicon liners. Set up a station with flour, rolling pin, cookie cutters, and prepared baking sheets.
- Flour your workstation moderately, as well as your hands. Take half of the dough and dust it with flour, knead it into a ball, then roll it out as thinly as possible (or as desired,) dusting with flour sparingly but as needed to prevent sticking. Cut into desired shapes. Transfer to baking sheets, leaving a bit of space between each cookie (they don't spread much at all.)
