COCONUT DATE BALLS
Coconut date balls are little balls of nutrition made with dates and nuts and then coated in shredded coconut - an easy-to-make sweet & healthy vegan snack!

Steps:
- Pit the medjool dates and soak them in warm water for 10 minutes until they soften
- Place the pitted dates and pecans in the bowl of a large food processor. Blend on high until a thick "dough" is formed and the mixture feels sticky.
- Scoop about 1-2 tablespoons of the mixture and use your hands to roll it into a ball. If you have time you can let them set in the fridge for 5 minutes.
- Roll the energy bites into desiccated or shredded coconut pressing gently so they adhere. Makes about 12-14 bites.

When I was a youngster, Mom always baked these tender old-fashioned cookies dotted with chewy dates and crunchy walnuts. Much to the delight of my family, I've continued her delicious tradition.

- Preheat oven to 325°. In a bowl, cream butter and sugar. Beat in milk and vanilla. Combine flour and salt; gradually add to creamed mixture. Stir in dates and nuts. , Roll into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Bake until bottoms are lightly browned, 22-25 minutes. Roll warm cookies in confectioners' sugar; cool on wire racks.

MY MOM'S HOLIDAY SAUSAGE HOLIDAY BALLS

- For the applesauce: Preheat the oven to 375 degrees F.
- Peel the apples, then thinly slice around the core. Place in a microwave-safe bowl and cover with plastic wrap. Microwave until the apples are tender, about 5 minutes. Place in a blender with the butter and puree. Set aside.
- For the sausage balls: Grease a rimmed baking sheet with the oil. Combine the sausage, cheese, pancake mix, chives, a big pinch of salt and a few grinds of black pepper in a large bowl and mix well. Roll into 1 1/2-inch balls (about the size of a Ping-Pong ball). Place on the prepared baking sheet in an even layer, leaving 1 inch between balls. Bake until cooked through and browned, 20 to 25 minutes. Serve with the applesauce.

- 1. Mix the first 5 ingredients in a saucepan and cook slowly over medium-low heat until thick , about 10 minutes. Remove from heat; add vanilla and cereal, mix well and let cool until you can handle it with buttered or sprayed hands. Pinch off small pieces and roll into balls and then roll into the coconut. Set aside to set. Store lightly covered.

A holiday tradition. My mother made these date balls every year at Christmas time. They may be stored in a plastic or glass container. If the weather is warm, keep them in the refrigerator. Make sure balls are cooled thoroughly before storing.

- In heavy-bottomed,lg.
- saucepan or pot,melt butter.
- Stir in brown sugar and dates.
- Cook til sugar is melted.
- Remove from heat and QUICKLY stir in egg well.
- Return to med.
- heat, stirring constantly, til boiling.
- Boil and stir 1 minute.
- Remove from heat, stir in rest of ingredients, and let cool off til easily handled.
- Roll into balls, about 1" or so, roll in powdered sugar to coat.
- Store airtight.

- Place all ingredients in a food processor (we use a mini food processor), sprinkling the spices evenly around the processor bowl.

- Make sure the dates and pecans are chopped very fine - I recommend using a food processor. Do not use the pre-chopped dates with the coating on them that prevents them from being sticky, or your balls won't stick together.
