1 tablespoon olive or canola oil
2 cloves garlic, finely chopped
2 teaspoons chopped fresh or 1 teaspoon dried thyme leaves
1 can (19 oz) Progresso™ cannellini beans, drained, rinsed
1/3 to 1/2 cup Progresso™ chicken broth (from 32-oz carton) or white wine
2 tablespoons chopped fresh Italian (flat-leaf) parsley
1 cup shredded Parmesan cheese (3 3/4 oz)
7 dozen carrot sticks, if desired

Steps:

  • In heavy 2-quart saucepan, heat oil over medium heat. Add garlic and thyme; cook 1 to 2 minutes, stirring constantly, until garlic is light golden. Remove from heat.
  • Add beans and broth to saucepan. Partially mash beans with potato masher. Stir in parsley. Heat over medium-low heat, stirring occasionally, until bean mixture is thoroughly heated. Stir in cheese until melted. Serve warm with carrot sticks.

1 tablespoon olive oil
1 onion (finely chopped)
2 (400 g) cannellini beans (drained, rinsed)
1 cup parmesan cheese (grated)
1 tablespoon parmesan cheese (grated extra for topping)
1/2 cup mayonnaise (whole-egg)
2 teaspoons Worcestershire sauce
Tabasco sauce (few drops or to taste)
2 tablespoons breadcrumbs (fresh)

Steps:

  • Preheat oven to 180C or 160C fan forced.
  • Heat oil in a small frying pan over medium heat and cook onions for 5 minutes until softened.
  • Place beans in a large bowl and mash lightly with a fork and then add onion, parmesan, mayonnaise, worcestershire and tabasco sauces and mix until combined.
  • Transfer to a heat proof bowl.
  • Combine breadcrumbs and extra parmesan and sprinkle over bean mixture.
  • Bake for 20 minutes until bubbling and golden.
  • Serve with sliced baquette and or corn chips.

1 (15 ounce) can cannellini, drained (white kidney beans)
3 tablespoons olive oil
3 tablespoons fresh parsley, chopped
2 tablespoons parmesan cheese, freshly grated
2 teaspoons fresh oregano, chopped
1 garlic clove, chopped
breadstick
assorted fresh vegetable (such as carrots and Belgian endive, and blanched broccoli florets and asparagus)

Steps:

  • Combine first 6 ingredients in processor.
  • Blend well until almost smooth.
  • Transfer to bowl.
  • Season dip with salt and pepper, to taste.
  • (Can be made 1 day ahead. cover; chill. Bring to room temperature before serving.) Place bowl with dip on platter.
  • Serve with breadsticks and vegetables.
  • Makes about 1 1/2 cups.

1 tablespoon extra virgin olive oil
2 teaspoons fresh rosemary, minced

1 (15 1/2 ounce) can cannellini beans, drained
salt
cayenne pepper, to taste

Steps:

  • Combine first 7 ingredients in food processor and process until smooth.
  • Taste and adjust seasonings if necessary, adding salt (some canned beans are already salty), additional lemon juice, or a dash of cayenne for a little kick.
  • Refrigerate until ready to serve to allow flavors to blend.

  • In a small skillet, heat the oil over medium-high heat. Add 4 sage leaves at a time, frying about 3 seconds per side. Place the cooked sage leaves on a sheet of paper towel. Continue until all the sage has been fried.
  • In a food processor, blend the white beans, lemon juice, garlic, lemon zest and salt, scraping down the sides as needed. With the food processor still on, slowly stream in the sage infused oil. Taste to see if you need more sage flavor. If so, add a few sage leaves at a time. I added 3 large leaves to mine, but there's a wide range in sage leaf sizes. You may even prefer the dip with no leaves, only the infused oil. Sage has a very strong flavor, so add it gradually, tasting after each addition.
  • If you prefer a thinner dip, add water, a tablespoon at a time until you get the consistency you prefer. Add more salt if desired. Garnish with fried sage leaves, lemon zest, and more olive oil if desired.
