STIR-FRIED BEEF WITH OYSTER SAUCE



Stir-fried beef with oyster sauce image

Marinate slices of lean beef steak then pan-fry with chunks of red pepper and a savoury sauce in this classic Chinese dish

450g lean beef steak
1 tbsp light soy sauce
2 tsp sesame oil
1 tbsp Shaoxing rice wine or dry Sherry
2 tsp cornflour
3 tbsp groundnut oil
1 red pepper, cut into chunky dice
1 green pepper, cut into chunky dice
3 tbsp oyster sauce
2 spring onions, finely shredded, to garnish

Steps:

  • Cut the beef into slices 5cm long and 5mm thick, cutting against the grain of the meat. Put them in a bowl. Mix in the soy sauce, sesame oil, rice wine or Sherry and cornflour. Leave to marinate for 20 mins.
  • Heat a wok until it is very hot, then add the groundnut oil. When it is slightly smoking, add the beef slices and stir-fry for 5 mins or until lightly browned. Remove the meat from the wok and drain well in a colander set inside a bowl. Discard the drained oil.
  • Wipe the wok clean and reheat it over a high heat. Add the peppers, and cook for 3-4 mins or until softened. Add the oyster sauce and bring it to a simmer. Return the drained beef slices to the wok and toss them thoroughly with the oyster sauce. Turn the mixture on to a serving platter, top with the spring onions and serve immediately.

2 carrots, peel and cut into diagonally cut elongated slices
225 g broccoli (cut into florets, stems chopped)
1 red pepper (deseeded and julienned)
225 g green beans, cut into thirds after cutting the edges
3 spring onions, trim and slice
1/2 cup green peas
6 garlic cloves, chopped
1 tablespoon vegetable oil (the recipe says 2 tblsp)
2 tablespoons sesame oil (the recipe says 4 tblsp)
1 small green chili, deseeded and chopped
3 tablespoons oyster sauce
175 g bean sprouts
1 tablespoon light soya sauce
1 tablespoon caster sugar
1 lime, juice of
salt and pepper

Steps:

  • Prepare the vegetables.
  • Heat the vegetable oil and the sesame oil in a wok.
  • Add the garlic and stir fry a minute Add the remaining vegetables except the bean sprouts and add the oyster sauce too.
  • Stir fry for 3-4 minutes Add the remaining ingredients including the bean sprouts but excluding the lime juice and stir to mix well for another 2-3 minutes.
  • Sprinkle the lime juice and check the seasonings add more if reqd.
  • Serve immediately.

2 tablespoons oyster sauce
2 tablespoons soy sauce
1 teaspoon sugar
1/2 teaspoon sesame oil
1 tablespoon cornflour
2 tablespoons peanut oil
2 garlic cloves, chopped
2 teaspoons ginger, chopped
1 red chile, deseeded and chopped
200 g filet of beef, sliced
1 small onion, sliced
1 red capsicum, sliced
rice, to serve

Steps:

  • Combine oyster and soy sauces along with sesame oil, sugar and cornflour in a small bowl.
  • Set aside.
  • Heat 1 tablespoon of the peanut oil in a wok.
  • Swirl to coat.
  • Add half the beef and stir fry until browned.
  • Remove and set aside.
  • Repeat with the remaining peanut oil and beef and remove and set aside.
  • Add garlic, ginger and chilli to the wok.
  • Cook for 30 seconds.
  • Add onion and capsicum and stir fry for 1 minute.
  • Return the beef to the pan along with the combined sauces.
  • Stir to warm through.
  • Serve immediately with rice.

3 chicken breasts (boneless, skinless, cut into small strips)
½ red bell pepper (sliced)
½ yellow bell pepper (sliced)
1 cup snow peas (a handful, ends trimmed)
1 onion (sliced)
3 tablespoon olive oil
3 tablespoons oyster sauce
2 tablespoon garlic and ginger paste (if you don't have this, fresh garlic and ginger work)
2 tablespoon soy sauce
1 tablespoon rice wine vinegar
salt and pepper to taste
¼ cup water
basil (for garnish)

Steps:

  • In a large bowl mix together 2 tbsp of the olive oil, the oyster sauce, garlic and ginger paste, soy sauce, rice wine vinegar and salt and pepper. Take half of the mixture and pour into a smaller bowl. Add the water to the smaller bowl, mix and set aside.
  • Add the chicken pieces to the larger bowl and toss the chicken around so that each piece is coated in the mixture. Let it sit and marinate for about 10 minutes.
  • In a large skillet, heat the remaining 1 tbsp of olive oil. Add chicken pieces to it and cook until the chicken is cooked through and it starts to slowly brown. Remove chicken from skillet and set aside.
  • Add onion to the same skillet and fry, add additional oil if needed to the skillet. Once the onion is translucent, add the peppers and snow peas and the remaining oyster sauce from the small bowl. Stir and cook for a couple minutes, the sauce will begin to thicken. Add the chicken to the skillet and toss everything together.
  • Serve over rice and garnish with basil.

500 g fresh oysters
4 tablespoons butter
1/2 small onion, finely minced
1 tablespoon finely minced fresh gingerroot
1 garlic clove, finely minced
1 teaspoon thyme
1 teaspoon oregano
1 teaspoon minced fresh basil
1/2 cup chicken broth
2 tablespoons flour
1/2 cup cream
1/4 cup dark soy sauce

Steps:

  • If using fresh oysters, steamed in pan with one cup water until opened (reserve broth)
  • Very finely chop oysters.(If using prepackaged oysters reserve liquid).
  • Melt butter in a skillet and sauté onion, garlic and ginger root over medium heat until onions are soft.
  • Add minced oysters, thyme, oregano and basil.
  • Sift in flour, mixing constantly, until flour is cooked into butter.
  • Whisk in one cup of oyster broth or oyster liquid from prepackaged oysters, plus ½ cup of chicken broth, ½ cup cream and ¼ cup soy sauce.
  • Now pour sauce through a sieve, removing any solids that do not pass through the holes in the sieve.
  • Return remaining liquid sauce to skillet.
  • Mixing constantly, cook sauce over medium heat until thickened. If not thickening properly, add a small amount of corn starch and water and cook over heat until thick enough.
  • If desired, add ground black pepper to taste.
  • *Recipe does not indicate how long this will keep. Yield given is a guess. When I make this myself I will update to more accurate number. Prep and cooking times are approximate.

3 tablespoons oyster sauce
2 teaspoons low-sodium soy sauce
2 teaspoons rice vinegar
1 teaspoon toasted sesame oil
Pinch of sugar
1 1/2 pounds baby bok choy (3- to 4-inch heads), bottoms trimmed
2 tablespoons vegetable oil
3 cloves garlic, roughly chopped
1 tablespoon roughly chopped fresh ginger

Steps:

  • Stir the oyster sauce, soy sauce, rice vinegar, sesame oil and sugar in a bowl until well combined; set aside. Wash the bok choy well to remove any grit and drain in a colander, leaving some water clinging to the leaves. Halve any large heads lengthwise.
  • Heat 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Add half each of the garlic and ginger and cook, stirring, until just softened, about 30 seconds. Add half of the bok choy and stir to coat. Cook until the bok choy is crisp-tender at the stem, 4 to 5 minutes; add water, 1 tablespoon at a time, to keep a bit of moisture in the skillet and prevent the garlic from burning. Remove to a platter.
  • Add the remaining 1 tablespoon vegetable oil to the skillet and repeat with the remaining garlic, ginger and bok choy. When tender, return the first batch of bok choy to the skillet and heat through. Transfer all the bok choy to the platter and drizzle with the sauce.
