WEIGHT WATCHERS MUSHROOM IN CREAM SAUCE!!!
This is a recipe I got off the Weight Watchers site. I have not tried it yet but it sounds really good and easy.

- Sauté mushrooms till soft, add remaining ingredients and heat through until cheese is melted.
- Makes two servings at 1 point!

WEIGHT WATCHERS SALISBURY STEAK
This is out of one of my old 2000 weight watchers cookbooks called, "Just like home". There is 8 points for 1 patty and about 6 tablespoons of gravy. This was marked in my book to make again. (That means DH really liked it). I have served it with noodles and mashed potatoes. Hope you enjoy!

Steps:
- Combine ground round, onion, rice, pepper, salt, and egg white in a bowl; stir well.
- Divide mixture into 4 equal portions, shaping each into a 1/2-inch-thick patty.
- Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot.
- Add patties, and cook 5 minutes on each side or until browned.
- Remove patties from skillet; set aside, and keep warm.
- Recoat skillet with cooking spray.
- Add mushrooms; saute' over medium-high heat 3 minutes.
- Add consomme' and Worcestershire sauce; cook 10 minutes.
- Return patties to skillet.
- Cover; reduce heat; and simmer 15 minutes.
- Remove patties from skillet; set aside, and keep warm.
- Combine water and cornstarch; stir well.
- Stir cornstarch mixture into broth mixture in skillet; bring to a boil, and cook 1 minute or until thick, stirring constantly.
- Spoon gravy over patties.

PIEROGIES WITH CREAMY MUSHROOM AND SHERRY SAUCE
This is one of my all time favorite WW recipes. I serve it to company all of the time, and no one ever guesses its low fat! I have used ravioli instead of pierogies and have added ham for variation. Recipe as written is 5 points.

Steps:
- Heat oil in large nonstick skillet over medium-high heat.
- Add the mushrooms, onion, salt and pepper to taste.
- Cook stirring occasionally until the mushrooms and onion are tender and lightly browned, about 4 minutes.
- Stir in sherry and cook until evaporated.
- Sprinkle in flour and stir to combine.
- Stir in milk, broth, and pierogies; bring to a boil.
- Remove from heat and stir in sour cream.

Steps:
- Melt butter in a nonstick Dutch oven over medium-high heat. Add onion, celery and carrot; cook, stirring occasionally, until onion is softened, about 5 minutes. Add mushrooms and cook, stirring occasionally, until softened, about 10 minutes. (Optional: Reserve enough of the slices of sliced white mushrooms to place a couples slices on top of each soup serving.) Stir in broth, salt and pepper; bring to boil. Reduce heat; cover and simmer until vegetables are tender, about 30 minutes. Remove Dutch oven from heat. Uncover and let cool 30 minutes.
- Puree soup in batches in food processor or blender. Return soup to Dutch oven; stir in half-and-half, sage and thyme. Cook, stirring occasionally, over medium heat until heated through, about 10 minutes. Optional: Top each bowl of soup with a couple slices of sauteed mushrooms.
WEIGHT WATCHERS MUSHROOM HAMBURGERS (4 PTS OR CORE)
From Weight Watchers New Complete Cookbook. These burgers are lightened up by adding sauteed carrot, celery and mushrooms to the mix. You could also add other sauteed veggies such as chopped eggplant, shredded zucchini, drained chopped spinach, etc.

Steps:
- Heat oil in a medium nonstick skillet and sautes the peppers, onion, celery, celery and garlic until the onion is translucent (8-10 min).
- Add mushrooms and saute until mushrooms are brown and the liquid has evaporated (about 8 min).
- Cool to room temperature.
- Spray broiler rack with nonstick cooking spray and preheat broiler.
- Combine mushroom mixture, beef, steak sauce, salt and pepper.
- Form into 4 burgers.
- Broil burgers 3 to 4 inches from heat for 5 to 7 minutes on each side.
