Hanger Steak Tacos with Chile and Herb Oils image

1 large orange, halved
1 lime, halved
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1 teaspoon ground ancho powder
Kosher salt
1 1/2 pounds hanger steak
1 tablespoon apple cider vinegar
1/2 teaspoon sugar
1/2 large red onion, thinly sliced
1 rounded teaspoon paprika
1 cup vegetable oil, plus more for the pan
1 cup lightly packed fresh cilantro sprigs, plus additional leaves for garnish
1/2 cup lightly packed fresh parsley leaves
About 1/4 cup Mexican crema or sour cream
12 corn tortillas, warmed
1 avocado, halved, pitted and sliced

Steps:

  • Bring a medium saucepan filled with water to a boil. Squeeze half of the orange and half of the lime into a large bowl and add the coriander, cumin, 1/2 teaspoon ancho powder and 1 teaspoon salt. Poke the steak all over with a fork and add it to the bowl, turning to coat; marinate at room temperature for 15 minutes.
  • Meanwhile, combine the juices from the remaining orange and lime halves in a medium microwave-safe bowl with the cider vinegar, sugar, 1/4 teaspoon salt and 2 tablespoons water. Microwave until simmering, about 45 seconds. Add the red onion and let stand, tossing occasionally, until ready to serve.
  • In a small saucepan, combine the paprika with 1/2 cup oil and the remaining 1/2 teaspoon ancho power. Bring to just below a simmer over medium-low heat and cook, stirring occasionally, until the oil is hot and bright red, about 3 minutes. Transfer to a small bowl.
  • Prepare a large bowl of ice water. Add the cilantro and parsley to the boiling water and cook until just bright green and wilted, about 20 seconds. Quickly transfer to the ice bath to cool. Remove the herbs from the water and squeeze out as much of the water as possible. Place in a blender with the remaining 1/2 cup oil and blend on high until as smooth as possible. Strain through a fine-meshed sieve into a small bowl.
  • Heat a little vegetable oil in a large cast-iron pan over medium-high heat until very hot. Remove the steak from the marinade and pat dry. Cook the steak, turning once, until well-seared on the outside and medium rare, 5 to 6 minutes per side. Transfer the steak to a cutting board and let rest 5 minutes; thinly slice across the grain. Sprinkle with additional salt.
  • Adorn 4 plates with some crema and the chile and herb oils. Make 3 steak tacos per person, topping the tortillas with pickled onion, avocado, cilantro a drizzle of crema and some chile and herb oils.

Steps:

  • In a shallow dish, combine the first seven ingredients. Add the steak and turn to coat. Cover; refrigerate for 6 hours or overnight., Place the cilantro, habanero, garlic, salt and pepper in a small food processor; cover and pulse until chopped. While processing, gradually add oil in a steady stream., For salsa, grill the mango, pineapple and avocado, covered, over medium heat for 2-3 minutes on each side or until tender; set aside., Drain and discard marinade from steak. Lightly oil the grill rack. Grill steak, covered, over medium heat for 6-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand for 10 minutes., Place onion in a small bowl. Chop the grilled fruit and avocado; add to bowl. Grill tortillas, uncovered, over medium heat for about 1 minute on each side or until warm., Thinly slice beef across the grain; place on tortillas. Top with salsa and pesto.

1/2 tsp cumin
1/2 tsp paprika
1/2 tsp garlic powder

1.33 lbs. lean sirloin steak, trimmed of all fat
8 corn tortillas
1/4 cup cilantro
1/4 cup onions, chopped
1/2 cup salsa

Steps:

  • Preheat the oven to broil. You can also use a grill.
  • Combine the lime juice and spices. Rub over the steak.
  • Broil (or grill) for 5-6 minutes per side for medium-rare, or to your desired doneness. Let rest for 10 minutes and slice thin or chop into small pieces. You can also chop the steak into smaller pieces and cook it in a skillet. It will take 3-5 minutes in a hot skillet with about one tablespoon of oil.
  • Warm the tortillas and top with cilantro and your other favorite toppings.

2 pounds flank or skirt steak, trimmed of excess fat
1 recipe Mojo, recipe follows
Olive oil, for coating the grill
Kosher salt and freshly ground black pepper
16 (7-inch) corn tortillas
Shredded romaine or iceberg lettuce, for serving
Chopped white onion, for serving
Shredded Jack cheese, for serving
1/2 cup Pico de Gallo, recipe follows
2 limes, cut in wedges for serving
4 garlic cloves, minced
1 jalapeno, minced
1 large handful fresh cilantro leaves, finely chopped
Kosher salt and freshly ground black pepper
2 limes, juiced
1 orange, juiced
2 tablespoons white vinegar
1/2 cup olive oil
4 vine-ripe tomatoes, chopped
1/2 medium red onion, chopped
2 green onions, white and green parts, sliced
1 Serrano chile, minced
1 handful fresh cilantro leaves, chopped
3 garlic cloves, minced
1 lime, juiced
1/4 cup extra-virgin olive oil
1 teaspoon kosher salt

Steps:

  • Lay the flank steak in a large baking dish and pour the mojo over it. Wrap tightly in plastic wrap and refrigerate for 1 hour or up to 8 hours, so the flavors can sink into the meat. Don't marinate the steak for more than 8 hours though, or the fibers break down too much and the meat gets mushy.
  • Preheat an outdoor grill or a ridged grill pan over medium-high flame (you can also use a broiler). Brush the grates with a little oil to prevent the meat from sticking. Pull the steak out of the mojo marinade and season the steak on both sides with salt and pepper. Grill (or broil) the steak for 7 to 10 minutes per side, turning once, until medium-rare. Remove the steak to a cutting board and let it rest for 5 minutes to allow the juices to settle. Thinly slice the steak across the grain on a diagonal.
  • Warm the tortillas for 30 seconds on each side in a dry skillet or on the grill, until toasty and pliable.
  • To make the tacos, stack up 2 of the warm tortillas, lay about 4 ounces of beef down the center, and sprinkle with some lettuce, onion, and cheese. Top each taco with a spoonful of the Pico de Gallo salsa and garnish with lime wedges. Repeat with the remaining tortillas.
  • In a mortar and pestle or bowl, mash together the garlic, jalapeno, cilantro, salt, and pepper to make a paste. Put the paste in a glass jar or plastic container. Add the lime juice, orange juice, vinegar, and oil. Shake it up really well to combine. Use as a marinade for chicken or beef or as a table condiment.
  • Yield: approximately 1 1/4 cups
  • In a mixing bowl, combine all ingredients together. Toss thoroughly. Let it sit for 15 minutes hour to allow the flavors to marry.
  • Yield: 2 cups

1 1/2 pounds skirt steak, cut into 1/2-inch pieces
12 mini flour tortillas, warmed
3/4 cup diced red onion

Steps:

  • In a medium bowl, combine soy sauce, lime juice, 1 tablespoon canola oil, garlic, chili powder, cumin and oregano. 2 tablespoons extra virgin olive oil
2 cloves garlic (minced (about 2 teaspoons))
1/4 cup freshly squeezed orange juice
2 tablespoons freshly squeezed lime juice

1/2 teaspoon kosher salt (plus additional for grilling the steak)

Steps:

3 tablespoons orange juice
3 tablespoons fresh lime juice
3 cloves garlic, finely chopped

1 medium serrano chile, seeded, finely chopped
1/2 cup chopped red onion

Steps:

  • Place beef in large, resealable food-storage plastic bag. In small bowl, mix orange juice, 2 tablespoons of the lime juice, the garlic and taco seasoning mix. Pour marinade over beef. Seal bag; refrigerate at least 30 minutes but no longer than 4 hours.
  • Heat gas or charcoal grill.

⅓ cup low-sodium soy sauce

¼ cup worcestershire sauce

2 pounds top sirloin steaks

Steps:

  • Combine the balsamic vinegar, low-sodium soy sauce, olive oil, Worcestershire sauce, honey, Italian seasoning and dried mustard in a gallon size zipper bag or large bowl.
  • Add the steaks and marinade for 20 minutes, or up to 8 hours.
  • Heat a grill over medium high heat, between 350-400 degrees Fahrenheit. Wait until the grill is hot before adding the steaks, to give them perfect sear marks.
  • Remove the steaks from the marinade and discard the marinade. Add the steaks to a hot grill.
  • For a perfect medium rare steak, grill a 1 inch thick steak for 4-5 minutes per side. For a steak that is 1 1/2 inches thick, add 1-2 minutes to the cooking time per side.
  • Insert an instant read thermometer into the steak. Remove the steak once it reads 130°F for a medium rare steak. For a medium steak, wait until it reaches 140°F and for a medium well steak, wait until it reaches 150°F.

Steps:

  • Mix all marinade ingredients.
  • Pierce the steaks all over, on both sides.
  • Pour over marinade, cover with plastic wrap and refrigerate over night.
  • Lime pickled red onions: Mix all the ingredients and let marinate for at least 3 hours at room temperature.
  • Will keep for up to 4 days in the fridge.
  • About an hour before grilling the meat remove the steaks from the refrigerator.
  • Preheat the oven to 300 degrees.
  • Remove meat from marinade and pat dry with paper towels.
  • Season lightly with salt and pepper.
  • Cook over hot coals with mesquite until done to your liking.
  • Set the meat aside and cover loosely with foil to keep warm.
  • Briefly heat each tortilla, either over the direct heat of the grill or in a heavy skillet.
  • Only enough to make them pliable.
  • Place 2 pieces of cheese on each tortilla, fold in half.

2 1/2 cups shredded lettuce

1 (8 ounce) bottle taco sauce

Steps:

  • Mix together ingredients for marinade in a small bowl.
  • Place steak in a dish or plastic bag and pour marinade over it and refrigerate for several hours, or overnight.
  • Bring steak out of refrigerator 1 hour before cooking.
  • Prepare grill or broiler.
  • Drain the meat, saving the marinade.
  • Grill meat 3-4 minutes per side (for med-rare), basting occasionally with marinade, or cook longer if desired.
  • Slice meat thinly and set aside.
  • Wrap tortillas in a towel and warm in a microwave; or if desired, warm briefly in a skillet and then wrap in a towel to keep warm.
  • To assemble taco, place approximately 2 ounces of meat, 1/4 cup lettuce, 2 tbsp cheese, 1 tbsp sour cream, a small amount of tomatoes and some taco sauce on each tortilla.
  • Serve immediately.
