Tasty, Hearty and Satisfying this Weight Watchers Chuck Wagon Chili is another winning recipe from the Weight Watchers Momentum Slow Cook It Cookbook.

1-1/4 pounds boneless chuck steak, trimmed and cut into 1/2-inch cubes
12 ounces light beer
2 cups chopped red onion
2 large carrots, chopped
8 ounces sliced mushrooms, roughly chopped
3 cloves garlic, peeled and thinly sliced
1/4 cup tomato paste
3 tablespoon honey
1 tablespoon chili powder (or to taste)
2 teaspoons ground cumin
1 teapoons dried oregano
1 tablespoon cornmeal
1/4 cup light sour cream, for serving

Steps:

  • Ideal slow cooker size: 4-Quart.
  • Coat a large nonstick skillet with non-stick spray. Set it over medium heat. Add half of the beef. Cook, stirring occasionally, until browned, about 4 minutes. Transfer the beef to the slow cooker. Repeat with the remaining beef.
  • Add 1/4 cup of the beer to the skillet. Bring to a boil and scrape up any browned bits from the bottom of the skillet. Scrape this mixture into the slow cooker.
  • Add to the slow cooker the onions, carrots, mushrooms, garlic, remaining beer, tomato paste, honey, chile powder, cumin and oregano. Stir up the mixture.
  • Cover and cook on LOW until the beef and vegetables are fork tender, 8 to 10 hours on LOW or 4 to 5 hours on HIGH.
  • About 20 minutes before the end of the cooking time is up, gradually stir in the cornmeal into the slow cooker until blended. Cover and cook on HIGH until the mixture simmers and thickens, about 15 minutes more.
  • Serve with sour cream.

1 (1 3/8 ounce) envelope chili seasoning mix
1 quart canned tomato
15 ounces canned corn, undrained
15 ounces canned kidney beans, drained
1 green bell pepper, chopped

1/2 cup salsa

Steps:

  • In sprayed, nonstick skillet, sear chicken.
  • Add to crock pot with remaining ingredients.
  • Cook on LOW for 6 to 8 hours.

1 lb extra lean ground beef or 1 lb ground turkey
1 tablespoon minced fresh garlic
1 large red bell pepper, seeded and diced
1 large green bell pepper, seeded and diced
2 tablespoons chili powder
2 teaspoons cumin
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can red kidney beans (rinsed and drained)
1 sweet onion, chopped
1/4 cup canned diced chilies or 1 fresh jalapeno pepper, seeded and finely chopped
2 tablespoons tomato paste
black pepper

Steps:

  • Cook the ground beef and garlic in a nonstick skillet breaking apart the meat with a spoon until well browned; drain off any fat very well, then return to skillet.
  • Add in the bell peppers; cook until softened (about 5 minutes).
  • Add in the chili powder and cumin and stir to coat.
  • In the slow cooker, mix together tomatoes, beans, sweet onion, chilies and tomato paste, then stir in the beef mixture.
  • Cover and cook on HIGH until flavors are blended (about 4-5 hours).
  • Season with black pepper.

4 cups pinto beans, cooked

Steps:

  • Combine all ingredients except beans in slow cooker.
  • Cover and cook on low 5-6 hours.
  • Add beans and cook 30 minutes.
