1/2 teaspoon fresh coarse ground black pepper
2 teaspoons olive oil
2 cups fresh mushrooms, sliced
2 teaspoons all-purpose flour
1/4 cup marsala wine
1/4 cup reduced-sodium chicken broth

Steps:

  • Sprinkle chicken with salt and pepper.
  • Heat oil in a large nonstick skillet over medium-high heat.
  • Add chicken and cook through, about 3 minutes on each side.
  • Transfer chicken to a platter and keep warm.
  • Add mushrooms to skillet and cook, stirring frequently, until browned, about 3 minutes.
  • Sprinkle mushrooms with flour, stirring to blend.
  • Add the Marsala and broth; bring to a boil.

2 celery ribs, chopped
2 cloves garlic, minced
1 (14 1/2 ounce) can crushed tomatoes
2 cups chicken broth
2 medium potatoes, peeled and cubed
1/2 teaspoon marjoram
1/2 teaspoon oregano
1/4 teaspoon ground pepper
1/2 lb boneless skinless chicken breast, cubed
1/2 cup canned cannellini beans, rinsed and drained
2 tablespoons parsley

Steps:

  • In a medium saucepan, heat 2 tsp of the oil.
  • Saute the carrots, scallions, celery and garlic until softened, 5-7 minutes.
  • Stir in the tomatoes and broth; bring to a boil, then stir in the potatoes, marjoram, oregano and pepper.
  • Reduce the heat and simmer, covered, until the potatoes are tender, 15-20 minutes.

1 cup onion, diced
1/2 cup celery, diced
1/2 cup red bell pepper, diced
2 teaspoons garlic, minced
1 1/2 tablespoons fresh thyme (or 1 tsp dried)
2 tablespoons flour
1 1/2 cups chicken broth
12 ounces fat-free evaporated milk
19 ounces diced tomatoes, well drained
14 ounces cream-style corn
2 cups roasted chicken breast, chopped
1 tablespoon barbecue sauce (hickory flavoured)
1/2 teaspoon black pepper
1/4 teaspoon salt

Steps:

  • Cook chopped bacon in a large soup pot over medium high heat until lightly browned but not crisp. Stir in onions, celery, red pepper and garlic. Cook and stir until vegetable begin to soften, about 5 minutes.
  • Add thyme and flour. Mix well. Stir in broth and evaporated milk. Bring mixture to a gentle boil and sir continuously until soup thickens slightly.
  • Reduce heat to medium low. Stir in remaining ingredients. Cover and let simmer for 10 minutes, stirring occasionally.
  • Note: I go to my butcher and have him cut 4 thick slices of bacon. Their bacon is superior in taste.
