Very tender, very flavorful vegetable side. Based on this recipe, seems like Army cooks don't think much of cabbage.

3 pounds cabbage, cored and chopped
½ pound thick-cut bacon, chopped
2 cups water, or more as needed
⅓ cup apple cider vinegar
¼ cup water
2 tablespoons all-purpose flour
salt and ground black pepper to taste

Steps:

  • Bring cabbage, bacon, 2 cups water, and vinegar to a boil in a large saucepan over medium-high heat. Reduce heat to low and simmer uncovered until cabbage is very tender, about 3 hours, adding more water as needed.
  • Whisk remaining 1/4 cup water and flour together in a small bowl and gradually add to cabbage mixture. Continue to simmer until thickened, about 5 minutes more. Season with salt and pepper.

  • Remove outer leaves. Cut cabbage into 6 wedges, leaving root intact.
  • Place cabbage in large pot over high heat and add chicken stock, salt, and lots of pepper. Cover and simmer 6 minutes, then remove lid and flip cabbage.
  • Add butter. Replace lid and cook 6 minutes or until stem is easily pierced with fork.

1 large head of cabbage
2-3 tablespoons butter
1/2 large white onion (sliced)
1/2 teaspoon garlic (minced (can add more if desired))
2 cusp chicken broth
1 fully-cooked (smoked turkey wing or leg)
Smoked salt & pepper (to taste)
hot sauce (if desired)

Steps:

  • Cut cabbage into quarters and then cut each quarter into strips. Set aside.
  • In a large pot or deep skillet, melt butter over medium heat.
  • Add in onions and cook until semi-translucent.
  • Add in garlic and cook until fragrant.
  • Slowly pour in chicken broth.
  • Add in the smoked turkey. (You can add it in whole but I like to chop it up a bit so that all the meat is simmering with the broth)
  • Bring to a simmer and cover.
  • Simmer for about 5-10 minutes.
  • Add cabbage and toss.
  • Cover and continue simmering (do not boil) until your desired firmness is reached, tossing cabbage mid-way.
  • When cabbage is done removed the turkey and chop it up into small bits.
  • Return smoked turkey to pot.
  • Taste cabbage and season with smoked salt and black pepper.
  • Serve with a splash of hot sauce if desired.

  • Slice cabbage into quarters, removing & discarding the hard stem at the center.
  • Slice each quarter into 1-inch wide strips. Set aside.
  • In a large pot, melt the butter and add olive oil.

bacon fat (optional (or 2 slices bacon) )

Steps:

  • Remove any discolored leaves from the cabbage. Cut the head of cabbage in half and cut each half into 1 1/2" wedges leaving the root intact to hold the wedges together.
  • Bring a large pot of salted water to a boil. If using bacon fat, or bacon, add to the boiling water for flavor.
  • Add cabbage wedges and boil 8-12 minutes or just until tender.

1 head cabbage
4 -5 lbs pork ribs

Steps:

  • Separate your ribs into single pieces (one bone per bite).
  • Use a large stock pot half filled with water- and a pinch of salt-- bring the water to the boil and add the ribs.
  • Allow the ribs to boil for approximately 30 minuts.
  • Remove the ribs from the water using a slotted spoon- but reserve the water- set the ribs aside.
  • Chop your cabbage in desired size.
  • Boil the cabbage in the rib water for approximately 30 minutes or until desired tenderness is achieved.
  • Return the ribs to the water mixing the cabbage and ribs together for approximately 10 minutes- just enough time to rewarm the ribs.
  • Drain and salt and pepper to taste- use a generous amount of pepper- since there are NO other spices in this dish.
  • Serve.

  • Bring large pot of water to boil with 1 tablespoon kosher salt.
  • Remove any tough or brown leaves from the outer portion of the cabbage. Shred the cabbage.
  • Boil the cabbage for 12 to 15 minutes, until it is very tender (ours is generally done around 12 minutes). Drain the cabbage into a strainer.

4 slices thick-cut bacon (about 4 ounces), coarsely chopped
4 tablespoons unsalted butter
1 1/2 cups low-sodium chicken broth
Pinch freshly grated nutmeg
Kosher salt and freshly ground black pepper
1 medium head savoy cabbage (about 2 1/2 pounds), cored and chopped into 1- to 2-inch pieces

Steps:

  • Scatter the bacon in a large Dutch oven and cook over medium heat, stirring occasionally, until crisp, 6 to 8 minutes. Transfer the bacon to a paper towel-lined plate using a slotted spoon and set aside.
  • Remove all but about 1 tablespoon of the bacon fat from the pot and add 2 tablespoons of the butter. When the butter has melted, add the broth, nutmeg, 1/2 teaspoon salt and a generous amount of pepper. Simmer for about 2 minutes to blend the flavors.
