We might have lightened up this classic sandwich filling, but we kept its traditional creamy consistency by using reduced-calorie mayonnaise and sour cream for the dressing. Finely diced chopped celery offers crunch and dill pickles give it zing. With this versatile recipe, you could also customize it by adding other vegetables like finely chopped red bell pepper or onion. Or you can opt to turn it into "wrap" by spooning into crisp romaine lettuce leaves or use it as a stuffing for celery sticks. This recipe serves six so if you have leftovers enjoy it for lunch the next day.

0.5 cup(s) Uncooked celery finely diced
0.333 cup(s) Unsweetened dill pickle(s) or sweet gherkins, finely diced
0.25 cup(s) Reduced calorie mayonnaise
2 Tbsp Reduced-fat sour cream
2 Tbsp Fresh parsley fresh, chopped
1 tsp Dijon mustard
1 tsp Fresh lemon juice
0.5 tsp Table salt
0.25 tsp Black pepper freshly ground

I found this recipe on the Weight Watchers website. It is for the core plan but can be adapted to the flex - just count the points. It is very easy and tastes great. I add this on top of a salad for lunch or with dijon-roasted potatoes for dinner. Even my husband likes it!

12 ounces boneless skinless chicken breasts, shredded (about three half pieces)
1 medium red onion, sliced into thin half moons
1/4 cup fresh cilantro, chopped
1 tablespoon chipotle chile in adobo (or 1/2 fresh jalepeno)
1 small garlic clove (or equivalent prepared minced garlic)
3 tablespoons fresh lemon juice
2 teaspoons olive oil
1 tablespoon water
1 -2 teaspoon white vinegar (optional)
1 scallion, thinly sliced (optional)

Steps:

  • I used about three boneless, skinless chicken breast halves that were poached using recipezaar recipe #36944 by Dancer^. This usually takes about 20 min to poach the chicken.
  • To shred the chicken, use two forks and scrape the chicken into shredded pieces.
  • Put the shredded chicken in a medium bowl and add the sliced onions, and chopped cilantro. Set aside.
  • Put remaining ingredients - except vinegar (chipotle peppers or the 1/2 jalepeno, garlic, lemon juice, olive oil and water) in a blender or bowl of a mini food processor and blend until smooth.
  • Pour the blended ingredients over the chicken mixture and toss to coat.
  • Add vinegar if necessary - to taste. I will sometimes add some thinly sliced scallions. Can also add some salt and pepper or other seasonings to taste. Sometimes if the shredding of the chicken yields too much, I just add a little more oil and some vinegar to help expand the flavor. This makes a good chicken salad wrap (have to count the wrap as points on weight watchers), and is good the next day too! I usually just eat this as is, or on top of a salad!

1 lb uncooked boneless skinless chicken breast
1/2 cup celery, finely diced
1/3 cup dill pickles or 1/3 cup sweet gherkin, finely diced
1/4 cup reduced-calorie mayonnaise
2 tablespoons reduced-fat sour cream
2 tablespoons fresh parsley, chopped
1 teaspoon Dijon mustard
1 teaspoon fresh lemon juice
1/2 teaspoon table salt
1/4 teaspoon black pepper, freshly ground

Steps:

  • Place chicken in a large saucepan and pour in enough water to cover it; set pan over high heat and bring to a boil. Boil until chicken is cooked through, about 10 minutes; drain. When chicken is cool enough to handle, cut into 1-inch cubes.
  • Transfer chicken to a large bowl and add celery, pickles, mayonnaise, sour cream, parsley, mustard, lemon juice, salt and pepper; mix until blended. Yields about 1 cup per serving.
  • For a Waldorf-like chicken salad, stir in 1/3 cup of diced apples and 2 tablespoons of chopped walnuts (for a total points value of 5 per serving).

Come this year when I am given not one but two recipe folders to hold snippets out of magazine I have to try and unglue them. The result is not successful. So I am putting them on recipezaar to print them out to organise them, damn last years OCD. I'm not sure what issue they are from but this is definitely from weight watchers magazine

8 medium skinless chicken drumsticks
2 teaspoons jamaican jerk spice
1 lime, juice and zest of
100 g small macaroni noodles
200 g salsa (fresh)
25 g fresh coriander
198 g sweetcorn, drained

Steps:

  • preheat oven to gas mark 4. ut chicken drumsticks into a plastci freezer bag and add jerk seasoning and lime zestv and juice. close bag and massage the drumsticks to coat them
  • remove drumsticks and place on a baking tray cook in oven for 320 minutes or until cooked through (juiceds shoul run clear).
  • meanwhile cook the pasta accvoridng to pack instructions, drain then rinse with cold water until cool. put into bowl with salsa, corrainder and sweetcorn season with black pepper and stir to combine. serve 2 chicken drumsticks with a quarter of the salsa.
