COMFORTING POTATO CASSEROLE

After enjoying this creamy, snazzed-up potato casserole at a wedding dinner, my daughters and I asked the caterer to share the recipe. Because it can be made ahead, it's a great recipe for busy cooks. -Darlis Wilfer, West Bend, Wisconsin

2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
2 cups sour cream
2 cups shredded part-skim mozzarella cheese
5 green onions, sliced
1 package (32 ounces) frozen cubed hash brown potatoes, thawed

Steps:

  • In a large bowl, combine the soup, sour cream, cheese and onions; add in potatoes; toss to coat., Transfer to a greased 2-1/2-qt. baking dish. Bake, uncovered, at 350° for 1-1/2 hours or until potatoes are tender.

2 lbs frozen hash browns, thawed
1 pint sour cream
2 cups shredded cheddar cheese
1 can cream of chicken soup
1 package onion soup mix
1/2 cup melted oleo

Steps:

  • Mix listed ingredients and put into a greased 13x9 inch pan.
  • Bake, uncovered, at 350 degrees for 45 minutes to an hour.

I'm not sure why these are called Wedding Potatoes but they are delicious! I usually serve them with Pork Chops but they could be served as a side dish for almost anything. Yum!

2 lbs hash brown potatoes, thawed
2 cups shredded cheddar cheese
1/4 cup chopped onion
1 cup milk
1/2 cup melted butter
1 (10 ounce) can cream of chicken soup
1 cup sour cream
1/4 teaspoon pepper
1 teaspoon salt
1 1/2 cups crushed corn flakes
3 tablespoons melted butter

Steps:

  • Preheat oven to 350 degrees.
  • Mix thawed hashbrowns, cheddar cheese and onion in a large bowl.
  • In a separate bowl combine milk, 1/2 cup melted butter, cream of chicken soup, sour cream, salt and pepper. Mix well.
  • Pour milk mixture over potatoes and mix well.
  • Pour into a greased 9 x 13 baking dish.
  • Mix cornflakes and 3 tablespoons melted butter. Sprinkle over potatoes.
  • Bake at 350 degrees for 1 hour.
