COMFORTING POTATO CASSEROLE
After enjoying this creamy, snazzed-up potato casserole at a wedding dinner, my daughters and I asked the caterer to share the recipe. Because it can be made ahead, it's a great recipe for busy cooks. -Darlis Wilfer, West Bend, Wisconsin

Steps:
- In a large bowl, combine the soup, sour cream, cheese and onions; add in potatoes; toss to coat., Transfer to a greased 2-1/2-qt. baking dish. Bake, uncovered, at 350° for 1-1/2 hours or until potatoes are tender.

I'm not sure why these are called Wedding Potatoes but they are delicious! I usually serve them with Pork Chops but they could be served as a side dish for almost anything. Yum!

Steps:
- Preheat oven to 350 degrees.
- Mix thawed hashbrowns, cheddar cheese and onion in a large bowl.
- In a separate bowl combine milk, 1/2 cup melted butter, cream of chicken soup, sour cream, salt and pepper. Mix well.
- Pour milk mixture over potatoes and mix well.
- Pour into a greased 9 x 13 baking dish.
- Mix cornflakes and 3 tablespoons melted butter. Sprinkle over potatoes.
- Bake at 350 degrees for 1 hour.
