For tomatillo salsa:
4 pasillas de Oaxaca (dried smoked chiles), wiped clean
1 pound fresh tomatillos, husked and rinsed, then quartered
1 cup packed cilantro sprigs
2 garlic cloves
1 tablespoon packed dark brown sugar
1 teaspoon molasses (not blackstrap)
1/2 teaspoon ground cumin
1/3 cup vegetable oil
For steaks and tomatillo salad:
1/4 cup vegetable oil, divided
3/4 teaspoon ground cumin
1 3/4 pounds skirt steak, halved
1/2 pound fresh tomatillos, husked and rinsed
1 cup cilantro leaves
2 teaspoons finely chopped shallot
2 teaspoons fresh lime juice

Steps:

  • Make salsa:
  • Slit chiles lengthwise, then stem and seed. Heat a dry heavy skillet (not nonstick) over medium heat until hot, then toast chiles, opened flat, turning and pressing with tongs, until more pliable and slightly changed in color, about 1 minute. Cover chiles with hot water in a bowl and soak until softened, about 20 minutes, then drain.
  • Purée chiles, tomatillos, cilantro, garlic, brown sugar, molasses, cumin, and 1 teaspoon salt in a blender until smooth, about 1 minute.
  • Heat oil in a 10-inch heavy skillet over medium-high heat until it shimmers, then cook salsa (it will spatter), stirring occasionally, until slightly thicker, 5 to 8 minutes.
  • Grill steaks:
  • Prepare a grill for direct-heat cooking over hot charcoal (high heat for gas); see Grilling Procedure.
  • Whisk together 2 tablespoons oil, cumin, 1 1/2 teaspoons salt, and 1 tsp pepper, then coat steaks.
  • Oil grill rack, then grill steaks, covered only if using a gas grill, turning once, until grill marks appear, 4 to 6 minutes total for medium-rare. Let steaks rest on a cutting board, loosely covered with foil, 10 minutes.
  • Make salad while steaks rest:
  • Thinly slice tomatillos and toss with cilantro, shallot, lime juice, remaining 2 tablespoons oil, and salt and pepper to taste.
  • Cut steaks into serving pieces and top with salsa and salad.

1/2 cup extra-virgin olive oil
1/2 cup soy sauce
1/4 cup honey
4 large cloves garlic, minced
Kosher salt and coarsely ground black pepper
12 corn tortillas
2 Hass avocados, each sliced into 12 wedges
Tomatillo Sauce, recipe follows
Pineapple Salsa, recipe follows
Crumbled queso fresco, for sprinkling
Fresh cilantro leaves, for garnish
1 1/2 pounds tomatillos
3 jalapenos
2 cloves garlic, chopped
2 tablespoons chopped fresh cilantro
1/2 teaspoon ground cumin
Juice of 1/2 lime
Kosher salt
2 cups diced pineapple
1/3 cup chopped fresh cilantro
1/4 cup minced red onion
1/4 teaspoon ground cumin
1 jalapeno, minced
Juice of 1 lime
Kosher salt and freshly ground black pepper

Steps:

  • Place the steak in a shallow glass baking dish. Whisk together the olive oil, soy sauce, honey, garlic, 1 1/2 teaspoons salt and 1 tablespoon pepper in a small bowl. Pour over the steak. Cover and refrigerate at least 4 hours, turning occasionally.
  • Prepare a charcoal grill with two zones, for direct and indirect grilling, by arranging the hot coals on one side of the grill. Preheat the grill to medium-high heat.
  • Remove the steak from the marinade. Grill the steak on medium-high direct heat, moving to indirect heat as needed for flareups, covered, for 4 to 5 minutes per side for medium-rare. Let rest for 10 minutes. Slice thinly against the grain into about 1/4-inch-thick slices.
  • Meanwhile, place the corn tortillas flat on the grill grates for about 15 seconds per side.
  • Place 2 slices grilled steak and 2 slices avocado on each tortilla. Top each taco with Tomatillo Sauce and Pineapple Salsa. Sprinkle with queso fresco. Garnish with cilantro leaves.
  • Remove the husks from the tomatillos and rinse under cool water. Put the tomatillos and jalapenos in a pot and cover with water, then bring to a simmer and cook until fairly soft but not falling apart, 5 to 8 minutes. Strain into a colander (reserve the cooking water) and rinse under cool water to stop the cooking process.
  • Put the jalapenos, garlic, cilantro, cumin, lime juice, 1 1/2 teaspoons salt and 1/4 cup of the cooking water into a blender. Blend for 5 seconds. Add the tomatillos and blend to a rough texture.
  • Combine the pineapple, cilantro, red onion, cumin, jalapeno, lime juice and salt and pepper to taste in a medium bowl.

1 bulb garlic
1/4 cup diced red onion

1/4 cup large-diced red onion
2 tablespoons chopped fresh cilantro

Six 8-ounce skirt steaks

Steps:

  • For the salsa: Prepare a grill for high heat. Lightly oil the grill grates. Cut 6 of the tomatoes in half and place them on the grill with the jalapenos. Char, turning regularly to promote even cooking, until the skins are blackened, about 20 minutes. Remove the vegetables from the grill and set aside to cool.
  • Meanwhile, preheat the oven to 350 degrees. Cut the top off the bulb of garlic. Place the garlic bulb on a sheet pan and roast until the garlic is tender and can be squeezed out of the bulb, 30 to 45 minutes. While hot, turn the bulb upside down and squeeze the bulb from the root end to the top, pushing the roasted garlic cloves out of the bulb. Crush and chop 4 cloves of the roasted garlic and stir together with the red onions and cilantro in a bowl. (Save the remaining roasted garlic for another use.)
  • Quarter and seed the remaining 6 tomatoes and dice the flesh. Add to the bowl with the garlic and onions. Remove some of the charred skin from the roasted tomatoes, then dice the tomatoes with the seeds. Put them into the bowl with the rest of the salsa ingredients.
  • Remove some of the charred skin from the jalapenos and cut in half. Remove the seeds and dice the jalapeno. Add to the bowl with rest of the salsa.
  • Add the lime juice and mix the salsa. Season to taste with salt and pepper and let the salsa sit for at least 30 minutes before serving.
  • For the smoked tomatillo rice: Heat a smoker to 350 degrees F. Drain 1 cup hickory wood chips that have been soaked for 1 hour and add them to the smoking pan of a smoker.
  • Put the tomatillos and red onions in a perforated pan and place in the smoker. Smoke the vegetables for 10 minutes, then remove from the smoker and transfer to a blender. Add the cilantro and honey and puree until slightly chunky. Season with salt and pepper. (If it is still tart, add more honey).
  • Bring 2 1/4 cups water to a boil in a pot. Stir in the rice and cover. Reduce the heat to low and cook the rice until all of the liquid has been absorbed, 12 to 15 minutes. Fluff the rice with a fork, then stir in 1 cup of the tomatillo salsa (save the remainder for another use). Cover again and hold warm for plating.
  • For the guacamole: Combine the cilantro and yellow onion in a blender and blend until almost pureed but still a little chunky.
  • Scoop the flesh out of the avocados and put them in a bowl. Add the onion-cilantro puree and mash the avocados with a fork. Add the tomato, red onion and lime juice and mix well. Season with the salt and cover with plastic wrap directly touching the guacamole.
  • For the vinaigrette: Combine the lime juice, cilantro and honey in a bowl, then slowly whisk in the vegetable oil and olive oil. Season to taste with salt and pepper.
  • For the skirt steak: Combine the vegetable oil, olive oil, cilantro and garlic. Pour over the steaks and marinate the steaks for at least 1 hour and up to 24 hours.
  • Prepare the grill for high heat. Lightly oil the grill grates. Remove the steak from the marinade. Season with salt and pepper and cook until grill marks appear, 1 to 2 minutes per side. Heat a skillet or saute pan over medium heat on the stovetop. Transfer the marked steak to the skillet and finish cooking on the stovetop over medium heat, flipping once, 3 to 4 minutes per side. Allow the steak to rest 5 to 10 minutes before slicing against the grain and on a bias.
  • For plating: Divide the rice among 6 plates. Lay the sliced steak over the top of the rice. Top each plate with a large tablespoon of the guacamole.
  • Combine the watercress and red onions in a bowl and dress them with 2 to 3 tablespoons of the vinaigrette. Toss the watercress salad and divide among the plates, piling it on top of the steak. Spoon 2 to 3 ounces of salsa over the top of each salad. Sprinkle the plate with a pinch of freshly ground black pepper.

2 (1 -1 1/2 lb) skirt steaks, trimmed of membrane and excess fat
12 ounces beer
1/4 cup fresh orange juice
1/4 cup fresh lime juice
2 -3 tablespoons chipotle hot sauce, such as Tabasco Chipotle Pepper Sauce, plus more for serving
2 tablespoons minced garlic
1 1/2 tablespoons coarse kosher salt
1 1/2 teaspoons ground cumin
3 large red onions, cut into 1/2-in .-thick slices
12 (8 inch) flour tortillas, warmed
lime wedge

Steps:

  • Cut each steak in half crosswise.
  • Put in a large resealable plastic bag.
  • Stir together beer, orange juice, lime juice, hot sauce, and garlic, then pour over steaks.
  • Seal bag and refrigerate at least 5 hours and up to overnight.
  • Prepare a gas or charcoal grill for medium-high heat.
  • Drain meat and discard marinade.
  • Mix salt and cumin and rub into meat.
  • Spray onions lightly with vegetable oil spray and set, with steaks, on a cleaned and oiled cooking grate. Don't cover.
  • For medium-rare to medium doneness (cut to check), grill steaks 3 to 4 minutes per side if less than 1/2 inches thick; add 1 more minute per side if more than 1/2 inches thick. Turn steaks at least once while grilling (more if juice starts to pool on surface). Grill onions, turning once, until browned on both sides and cooked through, 8 to 10 minutes total.
  • After removing steaks from grill, let rest 5 minutes (so juices redistribute through the meat) before slicing.
  • With a sharp knife at a slight diagonal, cut across grain into thin strips.
  • Serve meat and onions with tortillas, lime wedges, and hot sauce.

1 tablespoon brown sugar
2 teaspoons chili powder
2 teaspoons ground black pepper
2 teaspoons kosher salt
½ teaspoon ground cumin
1 (2 pound) flank steak
1 tablespoon olive oil
½ pound tomatillos - husked, stemmed, and halved
4 cloves garlic, peeled
1 tablespoon olive oil, or more if needed
2 chipotle peppers in adobo sauce
1 tablespoon olive oil
salt and ground black pepper to taste

Steps:

  • Mix together garlic, brown sugar, chili powder, pepper, salt, and cumin until blended. Spread a heavy coating of the spice blend over both sides of flank steak and place in a large glass baking dish. Cover the dish with plastic wrap and marinate in the refrigerator for 4 to 8 hours.
  • Preheat one side of an outdoor grill for medium-high heat and lightly oil the grate. Remove steak from the refrigerator and brush lightly with 1 tablespoon oil.
  • Place steak on the hot side of the grill, cover, and cook for 5 minutes. Flip steak, cover, and cook another 5 minutes. Move steak to to cooler side of the grill, cover, and cook until desired doneness, about 2 to 5 minutes longer. Remove from the grill and let rest for 15 minutes.
  • Meanwhile, preheat the oven to 400 degrees F (200 degrees C). Spread tomatillos and garlic cloves on a baking sheet and drizzle lightly with 1 tablespoon oil.
  • Roast in the preheated oven until vegetables are soft, 10 to 15 minutes. Remove vegetables from the oven and cool slightly, about 5 minutes.
  • Scoop tomatillos and garlic into the bowl of a food processor or blender. Add chipotle peppers and remaining 1 tablespoon olive oil; pulse until blended but still slightly chunky. Pour into a serving dish and let cool.
  • Slice flank steak thinly against the grain and serve with salsa.
