BROWN SUGAR AND BACON SALMON
My first attempt at Salmon, the best of both worlds.

Steps:
- Preheat oven to 350 degrees.
- Line baking sheet with tin foil. Spray with Pam.
- Place the steaks on baking sheet evenly spaced. I used tails, they just looked tastier. But I'm new to salmon so you tell me!
- Mix the butt rub and brown sugar and rub onto salmon. Use as much or as little as you like. I used about a tbsp per steak, two large tail sections.
- Lay bacon over steaks, I used 2 per section but if you are using steaks 1 would probably work per steak.
- Let sit for about 20 minutes while you prep something else or oven finishes preheating.
- Bake for about 10 minutes and then check to see how bacon is coming along. I finished off under the broiler but not too close for a few minutes to brown the bacon. 10 -15 minutes total cook time depending on your oven and size of fillets.
THE BEST BAKED SALMON
This simple baked salmon really hits all the right notes: tangy, sweet, savory, a little spicy and crunchy. Cooking a larger piece makes for a nice presentation. Topped with buttery golden breadcrumbs and parsley, it's perfect for a weeknight dinner yet fancy enough to serve to guests.

- Preheat the oven to 425 degrees F. Line a baking sheet with foil. Mix the brown sugar, paprika, garlic powder, cayenne pepper, 1 teaspoon kosher salt and a generous amount of freshly ground black pepper in a small bowl. Mix the panko with the parsley, butter, 1/4 teaspoon kosher salt and a few grinds of black pepper in another small bowl.
- Place the salmon skin-side down on the prepared baking sheet and spread the surface with the Dijon. Press the brown sugar mixture all over the salmon then top with the breadcrumb mixture. Crimp all four sides of the foil to create a border around the salmon, this will help collect the juices so they don't spread and burn. Bake until the breadcrumbs are golden brown, and the salmon is firm and flakes easily when pressed, 15 to 18 minutes. Cut into four equal portions for serving.
THE BEST HONEY-GLAZED SALMON
This is the easiest, most flavorful honey-baked salmon that the whole family will be able to enjoy. It comes together in 30 minutes and only requires eight ingredients. Oh, and that honey-lime drizzle at the end is to die for - no one will judge you for slurping it down! Baking the salmon at a high heat not only quickens the cooking time, but also helps to crisp up the honey glaze and spice mixture that coats the fish.

- Preheat the oven to 450 degrees F. Line a baking sheet with aluminum foil. Spray the foil with cooking spray if you plan on eating the salmon skin. (If you do not plan on eating the skin, you can skip this step.) Place the salmon fillets, skin-side down, onto the prepared baking sheet.
- Whisk together the honey, lime zest, and juice in a small bowl. Remove 2 tablespoons of the mixture to another small bowl and set aside. Brush the remaining honey-lime mixture over top of the salmon fillets.
- Combine the brown sugar, cumin, paprika, garlic, 2 teaspoons salt and a few grinds of pepper in a medium bowl. Press the brown sugar mixture all over the salmon (about 1 heaping teaspoon on each portion). Crimp all 4 sides of the foil to create a border around the salmon to help collect the juices so they don't spread and burn. Bake until the glaze is shiny and turning golden in some spots, and the salmon is firm and flakes easily when pressed, 10 to 12 minutes.
- Drizzle the reserved honey-lime mixture over top of the salmon just before serving.
BROWN SUGAR SPICED SALMON
Steps:
- Preheat the oven to 400 degrees F. Line a baking sheet with foil.
- In a small bowl, mix together the brown sugar, chile powder, salt and pepper. Put the salmon on the baking sheet. Evenly distribute the sugar-spice mixture over the top of the fillets.
- Bake for 10 to 15 minutes, depending on thickness and desired doneness.
BROWN SUGAR BACON
Steps:
- Preheat the oven to 400 degrees F. Position racks in the top and bottom of the oven. Line 2 rimmed baking sheets with foil and set cooling racks into the baking sheets.
- Using your fingers, crumble together the brown sugar, smoked paprika and several grinds of black pepper on a plate. Dredge the bacon on both sides in the brown sugar mixture, rubbing so the sugar adheres. Arrange the slices on the racks without touching.
- Bake until the bacon is crisp and caramelized, flipping the slices and rotating the baking sheets from top to bottom halfway through, about 20 minutes total. Let the slices cool on the racks, turning once or twice so they don't stick.
BACON WRAPPED SALMON
Bacon Wrapped Salmon is a delicious and easy way to cook up salmon fillets. This salmon recipe is pan fried and then finished off in the oven. Bacon wrapped salmon with a maple glaze.

Steps:
- Start by seasoning your salmon with salt and pepper, and sprinkle with lemon zest.
- Next take bacon and wrap around the salmon fillets. I did 2 pieces of bacon per piece of salmon. Depending on how large or small your salmon fillets are the bacon can be adjusted.
- In a skillet on medium-high heat you will pan sear your bacon salmon for 2-3 minutes. Then flip the fillet over and cook the other side.
- Preheat the oven and once the bacon is done searing cook in the oven broiling on high for 3-4 minutes or until the salmon reaches 145 degrees F.
- Now, you can flip the bacon salmon over half way through cooking in the oven. That will ensure a more even cook on the bacon.
- Once the bacon wrapped salmon is done, you can remove from the oven and brush with the maple syrup if you want. It will add a nice sweetness to the salmon.

BOURBON GLAZED SALMON WITH PEANUTS AND BACON
This recipe was demonstrated at the 2010 Pensacola Seafood Festival. It is from Flounder's Chowder House, and the originator is Mark Murphy. Yum, yum, yum! Prep time does not include the time to get your grill ready.

- For the glaze, combine the juice, brown sugar, bouillon, pepper, bourbon and soy sauce. Bring to a boil and cook for 3 to 4 minutes. Turn heat down to a simmer. Thicken to your desired thickness with cornstarch slurry (equal parts cold water mixed with cornstarch -- be careful, it will thicken quickly!).
- For the topping, fry the bacon in a skillet over medium heat until crisp. Add peanuts and cook until the peanuts are heated through and hot, about 1 minute.
- Grill the salmon over medium-high heat to desired doneness. (I cook 2 minutes, turn 45 degrees and cook 2 minutes more, flip the salmon and cook 2-3 minutes, rotate 45 degrees and cook 2-3 minutes more, until it flakes nicely) Baste with the glaze while you are grilling the salmon.
- Finish by topping the salmon with the bacon and peanuts.

BROWN SUGAR-CURED SALMON
This grilled and smoked salmon recipe by the food writer Betty Fussell calls for curing the fish for several hours with salt, brown sugar and spices before smoking it over indirect heat on your grill. While the fatty fish absorbs the smoke beautifully, the fish can also be successfully cooked in a grill pan, or under the broiler. The salt and sugar cure, laced with sweet spices, both flavors the fish and firms up its flesh, giving it a meaty, silky texture. - Pat fish dry with paper towels. In a small bowl, combine sugar, salt, pepper, spices and zest. Rub mixture all over fish. Place in a dish, cover and let cure in the fridge for at least 4 hours and preferably 8 hours. Rinse fillets and pat dry. Generously oil salmon.
- Light the grill. Once coals are hot, scatter drained hickory chips over coals. (If you're using a gas grill, place them in a disposable metal pan on the grill next to the salmon.)
- Place salmon flesh-side down on grill and cover, closing top vent so not much smoke is released. Smoke salmon, covered, for about 5 to 6 minutes, then flip. (If the fish is sticking to the grill grate, then it's not ready to flip. Cook for another 3 to 10 minutes, depending upon how hot your fire is. The fish is done when the interior is medium pink and exterior crisp and smoky. Serve with lemon wedges.
