Steps:
- Place the watermelon and lemonade concentrate in a blender or food processor. Process for 10-20 seconds or until the mixture is smooth. Pour this mixture through a wire mesh strainer to catch any seeds or solids.
- Fill up your molds leaving a little bit of room at the top because the mixture will expand when frozen. Place the molds in the freezer for an hour to partially freeze and then insert the ice pop sticks. Freeze for an additional 3 hours or until solid.

- Heap some ice into the hollowed-out watermelon and fill it with the lemonade mixture. Serve the rest in a jug with the lime slices and mint. Have a bowl of extra crushed ice on the side so people can help themselves.

Buying a watermelon so often leads to leftover melon. Here's a delicious way to make use of this largesse. Buy 5-oz (150 g) paper "bath cups"-they make great moulds for ice pops, as the paper just peels away. Gelatin helps keep drips at bay and also adds to smoothness. From LCBO Food & Drink Magazine. Time to prepare does not include time to freeze. Watermelon is thought to have originated in southern Africa, where it is found growing wild, because it reaches maximum genetic diversity there, resulting in sweet, bland and bitter forms.

- Blend approx ½ a large watermelon or a whole personal melon until liquified in a blender. Strain through a fine sieve into a large bowl. Combine the strained watermelon juice and the remaining ingredients back into the blender cup and blend on low until the sugar is dissolved. About 60-90 seconds. Chill the Watermelon Lemonade. Stir well or return to the blender base to stir before serving. Serve on ice or freeze in popsicle molds and enjoy.
- If making popsicles, be sure to chill the mixture well before pouring into the molds and give it a good stir. This will help prevent separation and discoloration as the mixture freezes.

- Cut the rind off the watermelon and then cut it into bite size chunks. Place watermelon into a blender and blend for about 1 minute, until it’s completely liquid. You may need to help it get started at first but eventually it will all blend.
- Place a mesh strainer over a large bowl and pour watermelon juice in the strainer. Let juice drain out. You can pick up the strainer and rock it from side to side to encourage more juice to come out but you don’t want to use a spoon to press down everything in the strainer. If you do that it will allow some of the pulp to get through and you don’t want that. Once it’s just pulp left in the strainer you can dump that out and strain the rest of the juice.
- If there’s lots of bubbles on top of the watermelon juice, or if some of the pulp got though, use a spoon to scoop it off the top. You may want to let it sit for a few minutes to let things settle down before doing this.
- Pour the fresh lemon juice into the watermelon juice and mix until combined. You can use as little or as much lemon juice as you like. I usually use about 1/3 cup. Enjoy watermelon lemonade over ice and garnish with fresh herbs or a lemon wedge, if desired!
